GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE



Grilled Chicken Thighs with Blackberry BBQ Sauce image

1 tablespoon ground coriander
1 tablespoon smoked paprika
1 tablespoon kosher salt
8 skin-on, bone-in chicken thighs
Olive oil
1/2 recipe Blackberry BBQ Sauce
3 pints fresh blackberries
12 ounces dark beer
1 cup balsamic vinegar
1 cup red wine vinegar
1/2 cup packed light brown sugar
1 onion, sliced
1 clove garlic, minced
1 habanero pepper, slit
1 tablespoon ground chipotle chile powder
1 tablespoon finely ground coffee
1 tablespoon ground coriander
1 tablespoon ground cumin

Steps:

  • In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
  • Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
  • Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
  • Remove the chicken from the grill. Serve with the remaining sauce on the side.
  • In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.

4 cups boiling water
1 teaspoon minced garlic
1 tablespoon chopped fresh cilantro
4 tablespoons unsalted butter
2 celery stalks, diced fine
1 medium carrot, diced fine
2 small yellow onions, diced fine
2 tablespoons black peppercorns
1 cup port wine
1 cup red wine
1 cup cranberry juice concentrate
1/2 cup ancho puree
1/4 cup dark brown sugar
4 cups chicken stock
1 cup fresh blackberries
1/2 cup all-purpose flour
3 tablespoons cascabel chile powder
Salt and pepper
4 French-cut chicken breasts
1 pound fresh spinach, washed and stems removed
1/4 cup olive oil
12 scallions
1/4 cup olive oil
Salt and freshly ground pepper
Salt and freshly ground pepper
16 new potatoes, quartered
1 head roasted garlic
1 stick unsalted butter, softened

Steps:

  • For the puree: Combine the ancho and water in a small bowl and let stand 30 minutes. Drain well, reserving the soaking liquid. Remove the seeds and stems and puree in a food processor with the garlic, cilantro and 1/2 cup of the liquid, adding more if needed.
  • For the sauce: Melt the butter in a medium or large nonreactive saucepan over medium heat. Saute the celery, carrot and onions until the celery and carrot are tender and the onions are translucent, about 7 minutes. Add the peppercorns and continue cooking 2 more minutes. Add the port, red wine, cranberry juice concentrate, ancho puree, sugar and stock, stirring constantly and making sure to scrape the bottom of the pan. Cook until the mixture is reduced by half, strain, season to taste with salt and pepper and fold in the blackberries.
  • For the chicken: Preheat oven to 450 degrees. In a mixing bowl, combine flour, chile powder and season with salt and pepper. Season the chicken breasts with salt and pepper.
  • Saute 2 cloves of garlic and spinach. Cool down over ice.
  • Divide the spinach among the chicken breasts, placing it in the center of each. Roll up the meat and tie with kitchen string. Dredge the rolls in the flour mixture and shake off the excess.
  • In a large ovenproof saute pan over medium-high heat, heat the oil until almost smoking and sear the rolls until slightly crusty, about 1 minute on each side. Place the pan in the oven and cook the meat an additional 8 minutes for medium. Let rest before slicing.
  • For the potatoes: Preheat oven to 450 degrees. Brush scallions with some of olive oil and season with salt and pepper to taste. Place on a sheet pan and roast for 10 minutes. Remove from the oven and coarsely chop. Toss the potatoes with the remaining olive oil and sprinkle with salt and pepper. Roast until just a bit overcooked but not brown. As soon as they come out of the oven, place the potatoes in a large mixing bowl, add the garlic, scallions, and butter. Smash with a potato masher to achieve a rustic texture, not smooth. Season with salt and pepper.

1 teaspoon ancho chile powder
¼ teaspoon red pepper flakes
1 cup pure maple syrup
2 pounds chicken tenders
1 orange, zested and juiced
salt and ground black pepper to taste
½ cup coconut flour
½ cup almond flour
1 teaspoon minced garlic
1 teaspoon smoked paprika
2 ¼ cups gluten-free all purpose baking flour
1 tablespoon baking powder
½ teaspoon dried rosemary
½ teaspoon ground thyme
¼ teaspoon sea salt
cooking spray
1 stick butter, softened
1 tablespoon maple syrup
1 cup shredded sharp Cheddar cheese
3 eggs
1 ¾ cups almond milk
¼ cup blackberries for garnish

Steps:

  • Muddle 4 blackberries in the bottom of a microwave-safe glass serving jar. Add chile powder and red pepper flakes, then maple syrup; stir syrup briskly until well combined.
  • Place chicken in a large, shallow baking dish. Drizzle with orange juice and season liberally with salt and pepper. Refrigerate until needed. Whisk orange zest with coconut flour, almond flour, garlic, and paprika. Set dredging mixture aside.
  • Mix gluten-free flour, baking powder, rosemary, thyme, and sea salt together in another bowl to start the waffle batter.
  • Preheat the oven to 400 degrees F (200 degrees C). Preheat a waffle iron according to manufacturer's instructions and spray with cooking spray.
  • Beat butter and maple syrup together in a bowl using an electric mixer until creamy. Add eggs 1 at a time. Gradually add the gluten-free flour mixture and milk in 3 alternating batches. ½ cup chopped onion
½ teaspoon dried thyme
½ teaspoon salt

  • Heat oil in a skillet over medium-high heat. Saute onion until soft and translucent, about 5 minutes.

3 medium fresh jalapeno peppers, sliced
3 tablespoons cider vinegar

2 pounds chicken wings

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine blackberries, ketchup, 1/4 cup water, jalapenos, vinegar, honey, garlic, and liquid smoke in a small saucepan. Stir in lime juice and bring to boil. Reduce heat to medium and simmer, stirring occasionally, for 5 minutes.
  • Mix together cornstarch and 1 tablespoon water in a cup; stir mixture into the sauce. Simmer until slightly thickened and syrupy, about 5 more minutes. Remove from heat and set aside.
  • Toss wings with oil in a large bowl. Season with salt and pepper and toss until evenly coated.
  • Cook wings on the preheated grill, turning occasionally, until cooked through, 20 to 25 minutes.
  • While the wings are cooking, pour sauce through a fine mesh strainer set over a container. Tap the strainer with a spoon while straining to squeeze out the last remaining drops of sauce from the residue.

1 large egg, beaten

1 cup blackberry preserves, seedless
1 cup red wine

Steps:

  • Preheat the oven to 350 degrees.
  • Season the chicken with salt and pepper.
  • In a bowl, combine the milk and egg.
  • In another bowl, combine the pecans, bread crumbs and flour.
  • Dip the chicken in the milk and egg, then coat with the pecan mixture.
  • Saute the chicken in oil until browned on all sides.
  • Transfer the chicken to a baking dish.

1 16- to 18- prepared plain polenta
1 pound boneless, skinless chicken breast, trimmed
2 nectarines, halved and pitted
1 pint blackberries, coarsely chopped
2 tablespoon chopped fresh cilantro
1 tablespoon lime juice
Hot sauce, to taste

Steps:

  • Step 1 Preheat grill to medium-high. Step 2 Combine 1 tablespoon oil, cumin, 3/4 teaspoon salt and pepper in a small bowl. Rub 1 teaspoon of the mixture all over polenta. Rub the rest into both sides of chicken. Cut the polenta crosswise into 8 slices. Rub the cut sides of nectarine halves with the remaining 1 teaspoon oil. Step 3 Oil the grill rack (see Tip). Place the chicken, polenta slices and nectarines on the grill. Grill the polenta until hot and slightly charred, 3 to 4 minutes per side. Transfer to a clean plate; tent with foil to keep warm. Grill the nectarines, turning occasionally, until tender, 6 to 8 minutes total. Grill the chicken, until cooked through and no longer pink in the middle, 6 to 8 minutes per side. Transfer the chicken and nectarines to a cutting board. Coarsely chop the nectarines. Let the chicken rest for 5 minutes, then thinly slice. 1 jar (10 ounces) seedless blackberry spreadable fruit
1/4 cup ketchup
1/4 cup balsamic vinegar
1/4 cup Sriracha chili sauce
2 tablespoons molasses
1 tablespoon Dijon mustard
1/4 teaspoon salt
3-1/2 pounds bone-in chicken thighs
1 large onion, thinly sliced
4 garlic cloves, minced
12 pretzel mini buns, split
Addtional Sriracha chili sauce
Leaf lettuce and tomato slices

Steps:

  • In a 4- or 5-qt. slow cooker, stir together the first 7 ingredients. Add chicken, onion and garlic. Toss to combine., Cook, covered, on low until chicken is tender, 5-6 hours. Remove chicken. When cool enough to handle, remove bones and skin; discard. Shred meat with 2 forks. Reserve 3 cups cooking juices; discard remaining juices. Skim fat from reserved juices. Return chicken and reserved juices to slow cooker; heat through. Using slotted spoon, serve on pretzel buns. Drizzle with additional chili sauce; top with lettuce and tomato., Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring occasionally; add a little broth if necessary.

6 ounces boneless skinless chicken breasts
3 ounces blackberry vinaigrette (for marinade, see Blackberry Vinaigrette)
1 portabella mushroom (1 cap)
2 cups mesulin mixed greens
2 ounces blackberry vinaigrette
2 ounces Roquefort cheese
2 ounces candied pecans
2 ounces tomatoes (julienned, no seeds)
1 ounce carrot (shredded)
2 ounces croutons

Steps:

  • Pour 3 oz. blackberry vinaigrette over chicken breast and coat well. Let stand covered in refrigerator for AT LEAST 24 hours, no more that 48 hours.
  • OK, for the salad, on a hot, well seasoned char-grill, grill the marinated chicken breast and portabella as you would. Careful when turning, the marinade (dressing) has a high sugar content and will stick to the grill if not careful, but, this also caramelizes nicely for a delicious flavor. The portabella cap will only take half as long to cook as the chicken breast.
  • Set cooked chicken breast and mushroom aside on a cutting board to use in a moment.
  • The salad?: Put the mixed greens in a bowl along with tomatoes and carrots. Pour the 2 oz. of blackberry vinaigrette over the salad mix and toss until evenly coated. On your favorite large salad plate, place the tossed salad.
  • Now, slice the chicken and portabella on the bias into 5 strips. Garnish the top of your salad with them as you would be looking at fan blades.
  • On top of the center of the salad crumble the Roquefort cheese. Scatter the pecans and croutons over the salad and serve immediately.
  • Be ready for compliments!

1 lb Chicken Breast
1 - 1 1/2 cup Blackberries (Fresh or frozen)
1 1/2 tsp Honey
1 Chipotle Pepper, minced, plus 1-2 tsp of adobo sauce (to desired heat, adobo is spicy, so taste test your sauce as you go)
dash of Cinnamon
1 tsp Lime Juice
3-4 cloves Garlic, minced
1/2 medium Yellow Onion, sliced in 1/4 inch semicircles

Steps:

  • Preheat oven to 425 degrees with the rack placed in the center of the oven. Combine blackberries, honey, chipotle pepper and adobo, cinnamon, and lime juice in a sauce pan over medium heat. Reduce heat and leave to simmer, stirring occasionally to prevent the sauce from burning. While the sauce is simmering, lightly brown the chicken in a skillet or grill. Once both sides are browned, place the chicken in a casserole dish. Cover the chicken pieces with minced garlic and onion slices. Pour the blackberry-chipotle sauce over the chicken, making sure that each piece of chicken has a good amount of sauce on top. Cover the dish with a well-fitting lid or tin foil. Bake the chicken until cooked completely though, approximately 45 minutes. Garnish with fresh basil or mint. This pairs well with herbed rice or coos coos and a green fruit or vegetable (such as fresh green beans, asparagus, or broccoli). Note: For the deepest flavor, marinate the chicken in the blackberry-chipotle sauce and garlic overnight or for a few hours prior to cooking. 1/4 cup fat-free reduced-sodium chicken broth
2 teaspoons minced fresh thyme
1/3 cup seedless blackberry fruit spread; no sugar added
1 tablespoon balsamic vinegar
1/2 teaspoon cornstarch; or as desired (optional)

Steps:

  • Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts until golden brown on both sides, 2 to 3 minutes per side. While the chicken breasts are cooking, whisk together the chicken broth, thyme, blackberry spread, and balsamic vinegar. Once the chicken breasts have browned on both sides, pour in the blackberry sauce, and bring to a simmer. Reduce heat to medium-low, and simmer until the chicken breasts are no longer pink in the center, about 15 minutes. Turn the chicken breasts over halfway through cooking. 1 tablespoon canola oil
1 cup walla walla onions or 1 cup other sweet onion, chopped
1/2 cup red wine
2 pints blackberries (fresh or frozen)
1/4 cup firmly packed light brown sugar
1 teaspoon soy sauce
3 1/2 lbs whole chickens, cut into 8 serving pieces
1/2 teaspoon coarse salt
1/2 teaspoon fresh ground pepper

Steps:

  • To make the barbecue sauce, in a large saucepan over medium-high heat, warm the canola oil.
  • Add the onion and cook, stirring frequently, until soft, about 5 minutes.
  • Add the wine, berries, brown sugar, and soy sauce and cook until slightly thickened, about 15 minutes.
  • Remove from the heat and pass the sauce through a food mill placed over a bowl, or puree in a blender or food processor and pass through a fine-mesh sieve placed over a bowl.
  • Set aside.
  • While the sauce is cooking, prepare a medium-hot fire in a charcoal grill, or preheat a gas or electric grill to medium-high.
  • Oil the grill rack.
  • Sprinkle the chicken with the salt and pepper.
  • Place the chicken pieces, skin side down, on the grill rack and cook for 5 minutes.
  • Baste with the sauce and cook for 5 minutes longer.
  • Turn the pieces, baste again, and cook until the juices run clear when a thigh is pierced, about 5 minutes longer.
  • Some pieces will cook more quickly than others.
  • The white-meat pieces, for example, should be moved to the outsides of the rack where the heat is less intense.
  • Transfer the chicken pieces to a platter and brush with additional sauce.
  • Serve immediately.
