2 1/2 cups all-purpose flour
1 1/2 cups sugar
2 tablespoons unsweetened regular or dark baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups vegetable oil
1 cup buttermilk
2 eggs
1 bottle (1 oz) black food color
1 teaspoon white vinegar
1 teaspoon vanilla
3 containers (12 oz each) cream cheese whipped ready-to-spread frosting
Black string licorice, if desired
Black jelly beans, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease 3 (8- or 9-inch) round cake pans with shortening; lightly flour.
  • In large bowl, mix flour, sugar, cocoa, baking soda and salt. In another large bowl, beat oil, buttermilk, eggs, food color, vinegar and vanilla with electric mixer on low speed just until blended. Gradually add flour mixture; beat 2 minutes on medium speed, scraping bowl occasionally. Pour into pans.
  • Bake 23 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • Brush off all loose crumbs from cake layers. Place 1 cake layer, rounded side down, on serving plate; spread with 1 cup frosting. Top with second cake layer, rounded side up. Spread with 1 cup frosting. Top with third cake layer. Spread very thin layer of frosting on side to seal in crumbs. Spread remaining frosting on side and top of cake. Cut licorice into pieces. Pile licorice on top of cake. Decorate bottom edge of cake with jelly beans.

6 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups boiling water
2 ounces unsweetened baking chocolate (3 squares)
1/4 cup butter or 1/4 cup margarine
1 teaspoon vanilla

Steps:

  • Mix together dry ingredients.
  • Add coffee, buttermilk, oil, vanilla and eggs.
  • Beat 2 minute.
  • Batter will be thin.
  • Pour into 9x13" greased pan or 2 9" round pans.
  • Bake at 350 for 35-40 minutes.
  • For Frosting:.
  • Combine sugar, cornstarch and salt in a medium size saucepan.
  • Stir in boiling water til well blended.
  • Cook, stirring constantly until mixture thickens.
  • Add chocolate squares and butter.
  • Continue cooking and stirring til melted.
  • Remove from heat, stir in vanilla.
  • Pour into bowl and chill, stirring several times until thick enough to spread.

Steps:

  • Preheat oven to 350 degrees. Spray one 10-inch bundt pan or two 9-inch round pans with a nonstick cooking spray and set aside.
  • In a large bowl, combine flour, sugar, cocoa, baking soda, baking powder and salt.
  • Make a well in the center and pour in the eggs, coffee, milk and oil. Mix until smooth; batter will be thin.
  • Pour into prepared pan. Bake in the preheated oven 35 to 40 minutes for bundt pan, 25 minutes for 9-inch round pans, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.
  • In a large bowl, mix together melted butter and cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
  • Add a small amount of additional milk, if needed. Stir in vanilla.
  • Frost cake and garnish as desired.

6 cups (1½ L) water
2 dried Mexican avocado leaves
1 tbsp dried epazote
1 white onion, diced
1 yellow bell pepper, stems and seeds removed, and diced
1 Tbsp extra virgin coconut oil
4 garlic cloves, peeled and minced
1 Tbsp minced chipotles en adobo
1 Tbsp cumin seeds, toasted and ground
2 tsp sea salt
3 Tbsp sour orange juice (or 2 Tbsp orange juice + 1 Tbsp lime juice)
¼ cup (60 mL) fresh cilantro leaves

Steps:

  • In a slow cooker on high heat, add beans and water.
  • On a griddle on high heat, toast avocado leaves for a few seconds on each side, until aroma is released. Using fingers, crumble into bean pot, along with epazote.
  • In a large frying pan on medium heat, sauté onions and bell peppers in oil until soft, about 10 minutes. Add garlic, chipotle, and cumin and sauté for 1 minute. Transfer mixture to bean pot. Cook beans on high for 4-6 hours or low 6-9 hours, or until skins are soft and insides are creamy. Add salt and cook, uncovered, for 20 minutes. Before serving, stir in sour orange juice and garnish with cilantro leaves.

100g softened butter , plus extra for greasing
175g light brown soft sugar
1 egg
100g self-raising flour
50g ground almonds
½ tsp bicarbonate of soda
5 tbsp cocoa , plus a little extra for decorating
150ml Guinness
200ml double cream
25g icing sugar
splash champagne (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the bases of 6 dariole moulds with baking parchment. Put the butter, sugar, egg, flour, ground almonds, bicarbonate, cocoa and Guinness in a mixing bowl. Beat together until lump-free. Divide between the tins then bake for 20-25 mins until risen and a skewer poked in comes out clean. Cool for 15 mins, then remove from tins and cool completely - the same way up they baked, don't turn upside-down.
  • Whip cream with the icing sugar and splash of Champagne, if using, until thick. Spoon a dollop onto the top of each cake and dust with a touch of cocoa. Serve with glasses of Champagne or Black Velvets for pudding.

2/3 cup black cocoa powder, plus more for garnish
3/4 teaspoon baking soda

1/2 cup buttermilk
1/2 cup vegetable oil
1/2 cup sour cream
1 large egg
1 tablespoon instant espresso powder
1 tablespoon pure vanilla extract
One 8-ounce package cream cheese, at room temperature
8 tablespoons (1 stick) unsalted butter, at room temperature
1 cup confectioners' sugar
1 teaspoon pure vanilla extract

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners.
  • Mix together the flour, sugar, cocoa powder, baking soda and salt in a large bowl. Whisk the buttermilk, oil, sour cream, egg, espresso powder and vanilla in another large bowl.
  • Add the flour mixture to the buttermilk mixture and whisk until just incorporated. Divide the batter among the cupcake liners. Bake until a toothpick inserted in the center of a cupcake comes out with a few moist crumbs attached, 16 to 18 minutes. Let cool in the pan for 10 minutes, then remove the cupcakes and let cool completely on a wire rack, about 30 minutes.
  • For the frosting: Meanwhile, beat the cream cheese and butter in a large bowl with an electric mixer on medium speed until smooth and fluffy, about 1 minute. Add the confectioners' sugar and vanilla and beat until light and fluffy, about 1 minute. Spread the frosting on top of the cooled cupcakes then dust with a little black cocoa powder.

1 cup mild rotel drained and pulsed in blender
1 cup light brown sugar, dark brown sugar will make the sauce darker.
1/2 cup catsup
1/2 cup light sodium soy sauce
1/2 cup worcestershire sauce
4 cloves garlic minced
1/2 teaspoon black pepper
2 teaspoons dried mustard
1/2 cup black velvet whisky
1 teaspoon arrowroot, if desired

Steps:

  • 1. Combine all of the ingredients in a medium saucepan over medium high heat. Whisk until smooth and bring to a boil, lower heat and simmer. Make sure there are slow rolling bubbles. Cook the sauce about 45 minutes to thicken. Cool and refrigerate until you are ready to use it. Makes about 3 cups of barbecue sauce.
  • 2. NOTE: If your sauce is not as thick as you would like it to be, add some arrowroot if necessary. Mix it with 3 or 4 tablespoons of the sauce, whisk until smooth and stir it into your sauce to thicken while you are cooking it.

The story goes that a steward at the Brook's Club in London created this classic in 1861 to observe the death of Prince Albert. I hope the steward was aware that there's something beautifully subversive about combining a laborer's favorite, porter, with champagne, the stuff of monarchs and other aristocrats. Social statement or not, it's a great drink. The usual proportions are 50/50, but there's nothing wrong with playing with them. I tend to favor a bit more champagne than Guinness, for a lighter Black Velvet.

4 - eggs
1/2 cup(s) water, cold

Steps:

  • Grease bundt pan and preheat oven to 350 degrees
  • Mix all ingredients, except chocolate chips, with electric mixer for 5 minutes. Fold 2/3 cup chocolate chips into batter. Batter will be used in 3 parts. Pour 2 cups of batter into prepared bundt pan, top with 2/3 cup chocolate chips. Top with another 2 cups of batter mixture, then remaining chocolate chips, with remaining cake batter on top.
  • Bake for 50-55 minutes or until cake tests done. Let stand in cake pan for 5 minutes before inverting onto plate. Cool completely and sprinkle with powdered sugar.

Steps:

  • Preheat the oven to 350°. Line a baking sheet with parchment paper. In a medium bowl, sift together the flour, cocoa, baking soda and salt.
  • Using a mixer, beat 5 tablespoons butter with the granulated sugar until fluffy, 3 minutes. Beat in the egg, food coloring and 1 teaspoon vanilla. Beat in the flour mixture alternately with the buttermilk until smooth
  • Place 1/4-cup scoops of batter 2 inches apart on the prepared baking sheet; spread out. Bake until a toothpick inserted in the center comes out dry, 12 to 15 minutes. Let the cookies sit for 5 minutes, then transfer to a rack to cool.
  • In a bowl, whisk together the confectioners' sugar, remaining 1/2 teaspoon vanilla, 1 tablespoon corn syrup and 2 tablespoons hot water until smooth. In another bowl, combine the chocolate, remaining 3 tablespoons butter and 1 tablespoon corn syrup; microwave until melted, about 1 minute.
  • Coat the cookies with the vanilla, then the chocolate icing. Refrigerate until set, about 20 minutes.
