½ cup melted butter
1 ¼ cups white sugar
1 cup all-purpose flour
¾ cup milk
1 ½ teaspoons baking powder
2 ½ cups black raspberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour melted butter into an 11x7-inch baking dish.
  • Mix 1 cup sugar, flour, milk, and baking powder together in a bowl. Pour on top of melted butter in the baking dish, making sure not to stir. Place black raspberries on top of mixture, making sure not to stir. Top with remaining 1/4 cup sugar.
  • Bake in the preheated oven until crust is browned and set, 30 to 40 minutes.

The custard is mildly sweet and the fresh raspberries add a fresh tartness to the flavor. This dessert will impress anyone and trust me, everyone will ask for the recipe. Serve plain as a 'simple' dessert or add to the elegance by adding a dollop of creme fresh with a fresh raspberry to really give a nice presentation. Add a little mint leaf on the side, this will impress everyone. Serve warm or allow to cool for a firmer consistency.

¼ cup white sugar
1 ½ cups whole milk
6 large eggs
1 ¼ cups white sugar

1-1/2 cups all-purpose flour, divided
1/2 teaspoon salt
1/2 cup cold butter
2 tablespoons heavy whipping cream
1/2 cup sugar
FILLING:
3 cups fresh raspberries
1 cup sugar
1 tablespoon all-purpose flour
2 large eggs, beaten
1 cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • In a bowl, combine 1 cup flour and salt; cut in butter until the mixture resembles coarse crumbs. Stir in cream; pat onto the bottom of a greased 13x9-in. baking dish. 3 large eggs
2 cups sugar

1/3 cup evaporated milk

1/4 cup packed brown sugar
1/4 cup cold butter

3/4 cup whole milk
3 large eggs
1/2 cup plus 1 tablespoon sugar
1/2 cup all-purpose flour
1/4 teaspoon coarse salt

2 cups raspberries (about 9 ounces)

Steps:

1 quart milk
3/4 cup sugar
8 large egg yolks
2 tablespoons vanilla extract
Pinch salt
1 pint raspberries (reserve 30 raspberries for garnish)
2 tablespoons mint leaves, cut in a chiffonade

Steps:

  • In a small, heavy saucepan, scald milk with sugar to dissolve. Cool to room temperature. Whisk in yolks with vanilla extract and salt. Pass through a fine strainer and pour into 5 shallow gratin dishes of about 6 ounces each. Set 6 berries in each dish.
  • Place in a hot-water bath and bake at 350 degrees for 30 to 35 minutes or until set.
  • Meanwhile, place 1/2 pint raspberries in a blender or food processor and puree. Pass through a fine strainer and reserve.
  • When custard is done, divide the puree among the custards, drizzling ribbons of puree on top of each; garnish with remaining berries and mint.

Pie Dough for Caramelized Apple Tart
2 tablespoons all-purpose flour, plus more for surface
3/4 cup sugar
1 large egg
1 cup heavy cream
1 pound (3 1/2 cups) raspberries, plus more for garnish
1/4 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Roll pate brisee to 1/8-inch thickness on a lightly floured surface. Fit into a 9-inch pie dish, and trim edges, leaving a 1-inch overhang. Tuck overhang under so edges are flush with rim, and crimp edges. Prick bottom of dough with a fork. Freeze for 15 minutes. Line dough with parchment, and fill with pie weights or dried beans. Bake until edges begin to turn gold, 25 to 30 minutes. Remove weights and parchment. Bake until crust is light gold and cooked through, 10 to 15 minutes. Let cool on a wire rack.
  • Reduce oven temperature to 350 degrees. Whisk flour and 1/2 cup sugar in a medium bowl. Add egg and cream, and whisk to combine. Toss raspberries, remaining 1/4 cup sugar, and the salt in a medium bowl. Spoon berries into crust, then pour in cream mixture, filling to just below the rim.
  • Bake until custard is set but still a bit wobbly in the center, about 45 minutes. Let cool in dish on a wire rack. Cover, and refrigerate for at least 2 hours (or up to 1 day). Garnish with fresh raspberries, and serve cold.

scald milk (skin over top)
3 eggs
1/2 c sugar
pinch salt
1 tsp flour
9 in pie crust

Steps:

  • Beat eggs, sugar, salt, flour together slowly into hot milk pour into pie crust add raspberries bake at 450 for 8-10 mins then reduce to 325 and bake until custard is set
