TIPSY HAM AND CHEESE

8 ounces sharp Cheddar, cut into 1/2-inch cubes
3 tablespoons lager beer
1 tablespoon vegetable oil
1/2 teaspoon Dijon mustard
1/2 teaspoon Worcestershire
1/8 teaspoon cayenne
1 1/2 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
4 tablespoons cold unsalted butter, cut into cubes, plus 2 tablespoons, melted
1/2 cup buttermilk
3 slices Black Forest ham, halved
1 scallion, thinly sliced

Steps:

  • For the beer cheese: In a saucepan, add the cheese, beer, oil, Dijon, Worcestershire and cayenne and heat over medium heat until melted and smooth. Bring to room temperature before serving. Use immediately or refrigerate up to 3 days.
  • For the biscuits: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Put the flour, baking powder and salt in a food processor. Pulse until combined. Add the cold cubed butter and pulse until the butter is cut into pea-sized bites. Add the buttermilk and pulse until the dough just begins to come together, then turn out onto a floured board. Knead the dough a few times with your hands to bring together, then roll out into a 1-inch-thick disk. Punch out with a 1-inch biscuit cutter and arrange 1 inch apart on the prepared baking sheet. Brush with melted butter. Bake until golden brown on the underside and light golden on top, 16 to 18 minutes. Transfer the biscuits to a rack to cool at least 10 minutes.
  • For the sandwiches: Carefully split each biscuit through the middle. Fold a piece of ham on the bottom and dollop beer cheese on top. Sprinkle with scallions and sandwich with the top of the biscuit.

3/4 cup Hellmann's mayonnaise
1 tablespoon parsley (Chopped)
2 tablespoons stout mustard
1 teaspoon orange blossom honey
1 dash fine sea salt
1 dash white pepper
8 slices rye bread (Toasted lightly)
8 red leaf lettuce
8 slices red Spanish onions
1/2 lb black forest ham (Sliced)
8 slices Limburger cheese (*Weisslacker or Beer Cheese)
3 heirloom tomatoes (Sliced)
1 pint cherry tomatoes
8 kosher dill pickles (Sliced)

Steps:

  • In a small bowl whisk mayonnaise, parsley, mustard, orange honey, sea salt and white pepper. Spread mayonnaise over bread.
  • Add lettuce, red onion, Black Forest Ham, *Weisslacker Cheese, sliced tomato, lettuce and top the sandwich.
  • Slice sandwiches in half and place on serving plates.
  • Garnish plates with Cherry Tomatoes and Kosher Dill Pickles.
  • *Chef's Note: Weisslacker (A Semi-soft cheese) is found in a German Deli or cheese shops.

I was looking through my fridge and realized that I had some fresh cherries that I needed to use up. What to do, what to do? I decided to pair it with ham that I also needed to use up. I had ham steaks, you can use sliced deli ham as well. Just don't cut it up, layer it on. You could also use dried cherries or frozen for this sandwich. I like the peppery arugula against the sweet cherries.

1/4 cup fresh cherries, stemmed pitted and coarsely chopped
1 tablespoon whole grain Dijon mustard or 1/2 tablespoon Dijon mustard
1 tablespoon green onion, chopped
1 tablespoon mayonnaise
kosher salt
fresh ground black pepper
2 ounces ham (I used diced ham steak, but thinly sliced deli ham is fine too)
2 slices bread
1/4 cup baby arugula

Steps:

  • In a bowl, combine cherries, mustard, green onion, and mayonnaise; season with a pinch of salt and a grind or two of pepper.
  • If using diced ham steak, stir it into the sandwich spread to coat.
  • If using sliced deli ham, do nothing.
  • To assemble: Place mixture on a slice of bread, top with arugula and close bread (ham steak).
  • For sliced deli ham: Spread mixture on two slices of bread, layer in ham, and a handful of arugula; close sandwich.

1 package (8 ounces) cream cheese, softened
2 teaspoons minced fresh parsley
2 teaspoons dried celery flakes
2 teaspoons Dijon mustard
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 cup dried cranberries, chopped
2 green onions, chopped
5 flour tortillas (10 inches), room temperature
1/2 pound thinly sliced Black Forest deli ham
1/2 pound thinly sliced Swiss cheese

Steps:

  • In a small bowl, mix the first 7 ingredients until blended. Stir in cranberries and green onions; spread over tortillas. Layer with ham and cheese. Roll up tightly; wrap in plastic. Refrigerate at least 1 hour., Just before serving, unwrap and cut each tortilla crosswise into 16 slices.
