BLACK BEAN & RICE VEGGIE BURGERS

Black Bean & Rice Veggie Burgers image

Since having gastric bypass, eating hamburger is like digesting gravel! So, here is one of my veggie burger recipes. Feel free to add spices to fit your taste, such as cilantro. A bit of green chile or jalepeno will warm the taste of it as well! I've updated the recipe (4/22) per Jilibean's suggestion to bind the patties together more...thanks Jilibean!

Categories     Lunch/Snacks

Time 40m

Yield 6 patties, 6 serving(s)

Number Of Ingredients 10

1/2 cup uncooked brown rice
1 (15 ounce) can black beans, drained and rinsed
1 small onion, chopped (white or yellow)
1 garlic clove, minced
1 cup frozen corn
1 teaspoon salt
cayenne pepper (to taste)
1/3 teaspoon chili powder
1 egg
1/3 cup breadcrumbs (preferably seasoned)

Steps:

  • In a small pot, combine rice and 1 cup water; bring to a boil, and then turn down to medium heat and cook 20 minutes. In a saucepan, heat a little oil over medium heat and saute the onion and garlic about 5 minutes, until the onion is translucent and soft.
  • Add the corn and spices and cook until the corn is defrosted, another 5 minutes.
  • In a medium bowl, mash the drained beans with a fork or your fingers.
  • Add the rice, corn, and onion; combine, mashing it with your fork as you go. Taste and adjust the spices now, because once you put the egg in you could risk salmonella.
  • Add the egg and mix in well.
  • Add the breadcrumbs.
  • Form into patties by patting the desired amount of mixtured into a flat round. (I used a giant cookie scoop to make sure all the patties were the same size, but you can just divide the mixture into six sections).
  • Cook about 2 minutes on each side (if you can't flip the patty without breaking it, it's probably not finished cooking).

Time 30m

Yield Makes 4-6 patties

Number Of Ingredients 20

1 tbsp olive oil, for frying
½ leek, chopped
5 mushrooms, chopped
30g thyme, leaves picked
140g firm tofu, chopped
handful of kale leaves
1 tbsp Dijon mustard
2 tbsp tamari
240g canned black beans, drained
3 tbsp oat bran
2 tbsp cooked brown rice
2 tbsp chopped hazelnuts or walnuts
40g gram flour (optional)
4-6 burger buns
4 tbsp vegan mayo
1 tsp tomato ketchup
1 tbsp chopped cornichons
pinch of cayenne pepper
sliced tomatoes and red onion
lettuce leaves

Steps:

  • Heat the oil in a large pan and fry the leek, mushrooms, thyme, tofu and kale for about 5 mins. Add the mustard, tamari and half of the black beans and give it a good stir. Transfer the mixture to a blender and pulse a few times - don't over-blend, it needs to be quite chunky in texture. Scoop into a bowl and add the rest of the black beans, the oat bran, rice and chopped nuts, then mix well.
  • Divide the mixture into 4-6 evenly sized portions and shape into patties using your hands. Tip the gram flour onto a plate, if using, then roll the patties in the flour to coat.
  • To make the burger dressing, mix all ingredients together in a bowl and set aside. Fry the patties for 4-5 mins on each side until crisp on the outside.
  • Slide the patties into the buns with the tomato, onion, lettuce and a dollop of burger dressing.
