4 cups shredded white cheddar
Four 10-inch flour tortillas
Black Bean Filling, recipe follows
1 cup feta
1/2 cup vegetable oil, for grilling
4 cups cooked black turtle beans, drained
2 cups brown rice, cooked
1 cup corn kernels, cooked
1/2 cup sun-dried tomatoes, rehydrated in water
2 tablespoons cumin
2 tablespoons granulated garlic
1 teaspoon hot red pepper sauce
Salt

Steps:

  • Spread 1 cup shredded white cheddar cheese on 1/2 of a flour tortilla. Then spread on top 1 cup of the Black Bean Filling. Then place 1/4 cup feta cheese. Fold over the tortilla. Repeat with remaining ingredients. Grill on an oiled flat grill, on medium high heat, for 4 to 6 minutes or until both sides are golden brown. Cut each quesadilla into 4 triangles and serve.
  • In a large bowl, mix all ingredients.

2 burrito-size flour tortillas
1 (14 1/2-ounce) can refried low-fat black beans
1 cup chunky salsa
1 1/2 cups Mexican-style shredded cheese
1/2 cup prepared guacamole (from the refrigerated section)
2 tablespoons sour cream

Steps:

  • Preheat oven to 400 degrees F.
  • Lay 1 tortilla on a clean work surface. Spread the beans evenly over the tortilla. Spoon 3/4 cup of salsa over the beans, then sprinkle with the cheese. Top with the second tortilla. Place the quesadilla on a foil-covered cookie sheet.
  • Bake for approximately 15 minutes, or until the cheese is melted and the top is crisp and brown. Meanwhile, swirl the guacamole and sour cream together in a small bowl. Cut the quesadilla into 4 equal portions and transfer to a plate. Serve with the guacamole mixture and remaining 1/4 cup of salsa.

4 skinless chicken breasts
Olive oil, for sauteing
4 (8-inch) flour tortillas
8 ounces grated cheddar cheese
4 tablespoons sliced pickled jalapenos
1 can cooked black beans
3 tablespoons pickled jalapenos
2 plum tomatoes canned
2 teaspoons ground cumin
Salt and pepper
Water, to cover
1 tablespoon chopped garlic

Steps:

  • Saute chicken in olive oil over medium high heat for 3 to 5 minutes on each side. Lay tortillas flat on a clean dry surface. Add 2 ounces of cheddar and 1 tablespoon of jalapeno to each tortilla. Fold to form and 1/2 moon and heat griddle until crisp in a non stick pan.
  • In a sauce pot add the black beans, pickled jalapenos, tomatoes, cumin, salt and pepper, water and garlic. Bring to a boil and allow to simmer for 3 to 5 minutes. Pour into a blender and process until smooth. Serve hot.
  • To serve cut the tortilla in half and place in the center of the serving plates. Add a spoonful of black beans and the sliced chicken breast on top.

1 teaspoon minced garlic
8 ounces (240 grams) cremini mushrooms, rinsed, stems trimmed, and sliced

1 cup (160 grams) canned black beans, rinsed and drained
2 tablespoons minced fresh or jarred jalapeño chiles, optional
Salt and freshly ground pepper, to taste
4 whole wheat tortillas (approx. 9-10″ in diameter) or smaller corn tortillas
1 cup (120 grams) shredded reduced-fat Monterey Jack cheese

  • In a large nonstick skillet, heat the olive oil over medium-high heat. Add the garlic and cook for 20 seconds, then add the mushrooms and chili powder and saute, stirring occasionally, for 5 minutes, or until mushrooms are light golden and most of the juices have evaporated. 2 cups pulled pork
1 14-oz can black beans, rinsed and drained
2 – 2.5 cups shredded cheese (tightly packed)
4 large flour tortillas (mine were 9 inches)
Optional: pickled jalapeños (1 small can or jar)
Sour cream, salsa, guacamole for serving

Steps:

  • 1. Place a tortilla in a large non stick pan (no spray necessary) over low-medium heat. Add 1/2 cup pulled pork evenly to one half. Add a scant 1/2 cup black beans over the pulled pork, making sure not to let them spill out of the tortilla. Top with 1/2 cup shredded cheese, distributing the cheese evenly over the pulled pork and the black beans. If you like things spicy, feel free to add a few slices of jalapeño. 2. Fold the tortilla in half, gently press down with a spatula, and cook over low-medium heat for about 3-5 minutes, or until the bottom of the tortilla turns a light golden brown color. Carefully flip the tortilla (flip over the flat edge, so you don’t lose all the contents!) and cook on the other side for 3-5 minutes, or until the cheese is melted, the inside is heated through, and the bottom of the tortilla is golden brown. 8 whole-wheat flour tortillas
4 cups grated Mexican blend cheese
One 15.5-ounce can black beans, drained and rinsed
1 cup cubed leftover pork tenderloin, such as Grilled Pork Tenderloin, recipe follows
1 cup leftover apricot salsa, such as Apricot-Serrano Salsa, recipe follows
4 scallions, thinly sliced
Sliced avocado, for serving
Sour cream, for serving
Chopped fresh cilantro, for serving
1 tablespoon honey
1 tablespoon balsamic vinegar
1 teaspoon ancho chile powder
1 clove garlic, minced
1 1/2 pounds pork tenderloin
Kosher salt and freshly ground black pepper
2 cups chopped (small cubes) fresh apricots (about 3 apricots)
1/2 cup fresh cilantro, finely chopped
1/4 cup fresh lime juice
1 serrano pepper, finely chopped
1/4 red onion, finely chopped
Kosher salt and freshly ground black pepper

Steps:

  • Heat a griddle over medium-high heat.
  • To assemble the quesadillas: On each of 4 tortillas, layer some of the cheese and then one-quarter of the beans, pork, salsa and scallions. Finish with more of the cheese, then top with a remaining tortilla.
  • Cook the quesadillas on the griddle until golden brown on each side. Serve immediately or keep in a warm oven until serving. Serve with sour cream, avocado and cilantro for topping.
  • For the pork tenderloin: Mix the honey, balsamic vinegar, ancho chile and garlic together in a large resealable plastic bag. Season the tenderloin with salt and pepper. Place the tenderloin in the bag and squeeze out as much air as possible before sealing. Place the bag in the refrigerator and marinate for at least 1 hour and up to 24 hours.
  • For the apricot-serrano salsa: In a bowl, combine the apricot, cilantro, lime juice, serrano and onion. Season the salsa with salt and pepper. Cover and refrigerate.
  • Prepare a grill for medium-high heat.
  • The key to grilling a pork tenderloin evenly is to roll it to each of its 4 sides while cooking. Grill the tenderloin on the first side for about 5 minutes (times vary per grill, so be careful not to over-char). Roll the tenderloin onto the next side and grill for another 5 minutes. Repeat on all 4 sides, 5 minutes per side, until an instant-read thermometer registers around 150 degrees F. Allow the tenderloin to rest on a platter for about 10 minutes before you slice it, to allow the juices to redistribute. Serve with the apricot-serrano salsa and enjoy!

I'm always looking for new vegetarian dinners. This is a pretty simple recipe, but the key is to get the avocado and mango at just the right ripeness...Years ago I used to eat at a restaurant that had a killer black bean quesadilla that they served on a blue corn tortilla. I've looked everywhere for blue tortillas for this recipe because I think it would really make the ingredients stand out, but for now it works pretty well with a regular flour tortilla.

2 flour 8-inch tortillas
1 medium avocado
1 medium mango
1/2 cup canned black beans
2 ounces grated monterey jack cheese
1/4-1/2 teaspoon salt
1/4 teaspoon coriander powder
1/4-1/2 teaspoon cayenne pepper
lemon juice

Steps:

  • Heat a large skillet or griddle over medium heat, lightly coated in oil.
  • Dice mango and avocado- they should be small pieces, but still large enough that they keep their shape when mixed. Add a splash of lemon juice to the avocado to keep it from turning brown.
  • Gently mix avocado, mango, black beans and seasonings in a small bowl.
  • Put one tortilla on hot skillet or griddle and cover with the grated Monterey Jack cheese.
  • Once cheese is melted, add the filling mixture and top with the second tortilla.
  • Carefully flip the quesadilla and cook just long enough to lightly brown the second tortilla.
  • If I'm eating this as a meal, I cut into four pieces. If I'm sharing as a side dish or appetizer, I cut into six pieces. I usually serve with a simple, fresh salsa.

Steps:

  • First, cook up your chicken.
  • Next, take your drained and rinsed black beans, put them in a bowl and mash them up with a fork. You should add a couple of teaspoons of water to make them spreadable.
  • Shred your cheese.
  • Dice up your onion, cilantro and jalapeños.
  • Heat your pan to medium heat. Place your first tortilla in your pan
  • On one half of your tortilla, spread half of the black beans, then layer half of the onions, cilantro, chicken and top with half of the cheese.
  • Now fold your tortilla in half.
  • Place a heavy pan or water filled teapot onto your Quesadilla to press it down. Cook for a few minutes.
  • When it's golden brown, very carefully flip it over and press it to cook a few more minutes.

1/2 cup salsa
1 cup cheddar cheese
1 tablespoon chopped coriander (cilantro)

  • Preheat oven to 400 degrees.
  • Puree black beans and salsa together.
  • Add coriander and green onions to mixture.
  • Mix well (this filling can be made ahead of time and refrigerated).
  • Divide evenly in bowl into 1/6's.

  • Sprinkle with cheese.

  • Place on baking sheet so they aren't overlapping too much.

1 Tbs. vegetable oil
1 small onion, finely chopped
2 medium cloves garlic, minced
1 cup frozen corn, thawed
1 small fresh poblano or anaheim chili, finely diced
3/4 tsp. salt
15-oz. can black beans, rinsed and drained
1 small ripe avocado, halved, pitted and peeled
2 Tbs. fresh lime juice
Fresh cilantro sprigs and prepared salsa for garnish (optional)

Steps:

  • 1. Preheat oven to 300F. Stack tortillas, wrap in foil and bake until soft and pliable, about 10 minutes. 2. Meanwhile, in large nonstick skillet, heat oil over medium heat. Add onion and garlic and cook, stirring often, until softened, about 3 minutes. Add corn, chili and 1/2 teaspoon salt and cook until vegetables are crisp-tender, about 4 minutes. Add black beans and mash coarsely with potato masher. Mix well and remove from heat. 3. Place tortillas on work surface. Spread 1/2 of each with about 1/4 cup bean mixture, almost to edge. Fold each tortilla in half, pressing lightly to seal. Set aside. 4. In medium bowl, using a fork, mash together avocado, lime juice and remaining 1/4 teaspoon salt. Set aside. 5. Coat large heavy skillet, preferably cast-iron, with cooking spray, then heat over medium heat. Add 4 quesadillas and cook until golden brown, turning once, about 3 minutes per side. Repeat with more cooking spray and remaining quesadillas. 6. Top each quesadilla with dollop of avocado mixture. Garnish with cilantro and salsa if desired. cut into wedges and serve hot.
