- Heat oven to 425°F. In large bowl, mix strawberries and 1/4 cup sugar; set aside.
- In medium bowl, stir Bisquick™ mix, milk, 3 tablespoons sugar and the butter until soft dough forms. On ungreased cookie sheet, drop dough by 6 spoonfuls.
- Bake 10 to 12 minutes or until golden brown. Meanwhile, in small bowl, beat whipping cream with electric mixer on high speed until soft peaks form.
- Split warm shortcakes; fill and top with strawberries and whipped cream.

EASY BISQUICK STRAWBERRY SHORTCAKE
Last year my kids (ages 8, 6 and 3 at the time) decided they wanted to make a recipe "on their own," so we tried the Strawberry Shortcake recipe on the back of the Bisquick box - worked like a charm! I gave each of them regular table knives (not too sharp) so they could slice the berries, and they measured and mixed the simple ingredients for the shortcake themselves. They felt like total rock stars after we assembled their beautiful (and delicious!) desserts!

- Slice strawberries and mix with 1/4 cup sugar. Set aside.
- Mix the Bisquick, 2 tablespoons sugar, and milk.
- Drop onto a cookies sheet in four equal-sized cakes.
- Bake at 425°F for 10-12 minutes, until lightly brown.
- Split each cake in half, and spoon strawberry slices into the middle. Top with a few more strawberries and a drizzle of the strawberry juice, followed by whipped cream.

I added a couple of extras that I think make this the best topper for my cobblers and a melt in your mouth shortcake for all the fresh fruits. It's fast & easy and I always get rave reviews from everyone when I make them. Try it, you won't be sorry you did. Enjoy.

- 1. Melt butter or margarine in microwave and set aside. (Do not use whipped margarine or butter, only sticks)
- 2. In 2 qt mixing bowl mix Bisquick, 3 1/2 tablespoons of sugar, and cinnamon with a fork or whisk until well blended.
- 3. Add melted butter and evaporated milk or cream to dry mixture and stir with fork or whisk just until blended. Don't overmix, mixture should be moist and sticky.
- 4. To make shortcakes, drop by heaping tablespoons on a non stick cookie sheat. (should be about as big around as the top of a regular cupcake) Bake in 400 degree oven for 15 minutes or until golden brown.
- 5. Sprinkle top of shortcakes with remaining tablespoon of sugar and bake until golden brown. These are best when served warm, just carefully slice in half, put bottom half in serving bowl, cover with fresh berries, peaches or fruit of your choice. Place other half on top and add more fruit and serve with whipped cream or topping.
- 6. For cobbler, place pie filling or sweetened fruit of your choice in a 1 1/2 to 2 Quart baking dish and carefully spread Bisquick mixture on top, (I use my hands) Don't worry if it doesn't completely cover all the fruit it will spread out and cover when it bakes. Sprinkle top of cobbler with remaining tablespoon of sugar and bake in 400 degree oven for 35 to 40 minutes until golden brown. Serve warm with ice cream or whipped cream or topping of your choice. Delish!!!
BISQUICK BLUEBERRY SHORTCAKE (LIGHTER)
This is something that my 6 year old and I have just discovered as a terrific treat for after school. I never really grew up fully, because I too look forward to that after school snack. There are so many different directions that this recipe can be taken, but this is by far our favorite. My son is the kid who, if I make him smoothies or another healthy snack, he says, "You know what this needs, mommy? It needs chocolate!" but he doesn't say that with this. :D

- Preheat oven to 350.
- Combine blueberries and yogurt. Add some splenda if it's not sweet enough for you. Set the bowl near the oven so that the mix can warm a tad.
- Put bisquick and sugar in a mixing bowl. Add skim milk and cinnamon, if using. (I haven't tried any extracts, but I'm curious as to how it would work out.).
- Drop by spoonful into 4 equal portions onto foil covered cookie sheet. Set in oven.
- Pour a cup of coffee and cook shortcakes for 12 minutes.
- Remove from oven, put on plates and top with blueberry yogurt mixture. Serve and enjoy!

This is my own adaptation of Bisquick's shortcake made a teensy more healthy with their Heart Smart mix. I'm sure it would work fine with regular Bisquick as well. You could also use regular milk, but I think the buttermilk makes a lighter and more tender cake.
