12 oz frozen (thawed) bulk hot pork sausage
1/3 cup chopped onion
2 cloves garlic, finely chopped
1 medium red bell pepper, chopped (1 cup)
1 1/2 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 cup milk
3 eggs
1 1/2 cups shredded Mexican cheese blend (6 oz)

Steps:

  • Heat oven to 425°F. Grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 12-inch skillet, cook sausage, onion and garlic over medium heat, stirring frequently, until sausage is no longer pink; drain. Stir in bell pepper; remove from heat.
  • In large bowl, beat flour, salt, crushed red pepper, milk and eggs with wire whisk until smooth. Pour into baking dish. Spoon pork mixture over batter. Sprinkle with cheese.
  • Bake 22 to 27 minutes or until top is golden brown.

I found this recipe on the back of a box of link sausage. I haven't tried it yet but it sounds tasty. I am always on the lookout for easy breakfast casseroles and this is unlike anything I have seen on Zaar. It could be easily modified to suit individual tastes but this is the version directly from the box.

1 tablespoon butter
6 eggs
12 ounces sausage links, cut into small pieces
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/8 teaspoon garlic powder
1 1/2 cups dry biscuit mix (Bisquick)
2 cups shredded sharp cheddar cheese
salsa (optional)

Steps:

  • Heat oven to 350.
  • In large skillet, in butter, cook eggs until lightly scrambled. Set aside to cool slightly.
  • In a large bowl combine the sausage, onion, green pepper, and garlic.
  • Add the baking mix and shredded cheese.
  • Using clean hands, knead mixture until well blended.
  • Stir cooked eggs into sausage mixture and combine until blended.
  • Spread mixture into a greased 9x13 pan.
  • Bake at 350 for 30 minutes or until sausage is cooked through and the top is golden brown.
  • Cut into squares and serve with salsa on the side if desired.

These sausage balls are made with Neese's® Sausage. Perfect for breakfast and great for the holidays. I have provided the doubled recipe. You can cut it in half if you wish. I usually bag half the recipe and put into fridge and freeze the other half. Great in toaster oven.

6 cups baking mix (such as Bisquick ®)
2 pounds shredded extra-sharp Cheddar cheese
1 pound sage-flavored pork sausage (such as Neese's® Extra Sage Sausage), at room temperature
1 pound hot pork sausage (such as Neese's® Hot Sausage), at room temperature

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a baking sheet.
  • Mix baking mix, Cheddar cheese, sage-flavored pork sausage, and hot pork sausage together in a bowl. Roll mixture into golf ball-sized balls; arrange balls on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the middle and browned on the outside, 25 to 30 minutes.

1 pound bulk pork sausage
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup finely chopped onion
1 can (4 ounces) chopped green chiles
1 tablespoon minced jalapeno pepper, optional
10 large eggs
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage until no longer pink; drain. Place in a greased 13x9-in. baking dish. Layer with cheeses, onion, chiles and jalapeno if desired. In a bowl, beat eggs and seasonings. Pour over cheese. , Bake, uncovered, until a knife inserted in the center comes out clean, 18-22 minutes. Cool for 10 minutes; cut into 1-in. squares.
