This coffee cake that uses Bisquick® is even better than if bought at the bakery. It took me a while to get this recipe just right.

2 cups baking mix (such as Bisquick®)
⅔ cup milk
2 tablespoons white sugar
1 egg
¼ teaspoon ground cinnamon
⅔ cup baking mix (such as Bisquick®)
⅔ cup brown sugar
4 tablespoons butter
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a deep 9-inch pie pan.
  • Combine baking mix, milk, sugar, egg, and cinnamon in bowl; mix well. Spread into the bottom of the prepared pan.
  • Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Spread topping mix over cake batter; drag a butter knife across the top as if making a tic-tac-toe board several times.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.

OLD BISQUICK STREUSEL COFFEE CAKE RECIPE

This is what used to be on the Bisquick box. This old recipe is moister and has a better topping (if you like gooey crannies) than the recipe on the box now (2008). For my family this is "Grandma's coffee cake" which she makes by the yard when we are together. It is easy to double (and we often do this) and then cook in two round pans. A doubled recipe can also be cooked in a larger rectangular pan (not sure of the cooking time though - sorry)

2 cups Bisquick baking mix
2/3 cup milk or 2/3 cup water
2 tablespoons sugar
2 tablespoons oil (old variation)
1 egg
2 tablespoons Bisquick
1/3 cup sugar
2 tablespoons butter (better with butter) or 2 tablespoons hard margarine (better with butter)
2 teaspoons cinnamon

Steps:

  • Heat oven to 375ºF.
  • Grease 9-inch round pan.
  • Make Cinnamon Streusel; reserve. (my sister often doubles this recipe so that there is lots of topping).
  • Stir coffee cake batter ingredients until blended.
  • Spread in pan.
  • Sprinkle with Cinnamon Streusel.
  • Bake 18 to 22 minutes or until golden brown.
  • Let sit a few minutes and then serve warm with butter and lots of milk or coffee.

This bisquick coffee cake recipe is one of my favorites. It used to be on the back of the Bisquick box, but they replaced it a few years ago. I'm posting it here not only to share it, but as a backup in case I lose my recipe card :)

2 cups Bisquick
2/3 cup water or 2/3 cup milk
1 egg
2 tablespoons sugar
1/3 cup Bisquick
1/3 cup brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees.
  • Grease a deep pie plate, 8"x8" square pan, or 9"x9" square pan.
  • Mix dough ingredients and put in baking dish.
  • Mix topping ingredients with a fork or pastry mixer until crumbly.
  • Spread topping mix over dough and drag a butter knife across like you were making a tic-tac-toe board several times.
  • Bake for 25 minutes.

1 - 20 (ounce) can chunk pineapple ( drained, saving 2/3 cup of juice )
2/3 c brown sugar, packed
1 tsp cinnamon
1/2 c walnuts,chopped
1/4 c butter, sliced
1 egg
2 c bisquick
2 Tbsp sugar

Steps:

  • 1. Preheat oven to 400 degree F. Grease a 9 inch pan or baking dish with non stick cooking spray.
  • 2. Mix the brown sugar, walnuts, cinnamon and butter. Set aside.
  • 3. Drain pineapple, reserving 2/3 cup syrup. Pat pineapple dry. Set aside.
  • 4. Mix the reserved juice with the egg; then add to the bisquick and sugar. Stirring about 30 seconds.
  • 5. Spread the bisquick batter into a 9 inch dish or pan. Sprinkle half the brown sugar mixture over batter. Add pineapples. then sprinkle with remaining brown sugar.
  • 6. Bake for 25 minutes, or until pick in the center comes out clean.

Streusel:
2/3 cup Original Bisquick mix
2/3 cup Splenda brown sugar substitute
1 teaspoon ground cinnamon
3 tablespoons firm butter
Coffee cake:
2 cups Original Bisquick mix
1/2 milk or water
2 tablespoon Splenda
1 1/2 teaspoons vanilla extract
1 beaten egg

Steps:

  • Preheat oven 375. Spray bottom and sides of a 9" round or square pan with cooking spray. In small bowl mix 2/3 cups Bisquick mix, brown sugar and cinnamon. Cut in butter, using pastry blender or use 2 knives pulling through ingredients in opposite directions, until mixture looks like fine crumbs; set aside. In medium bowl, stir all coffee cake ingredients until blended. Spread about 1 cup of the batter in pan. Sprinkle with about 3/4 cup of the streusel. Drop remaining batter over top of streusel; spread carefully over streusel. Sprinkle remaining streusel over top. Bake 20 24 minutes or until golden brown. Can be served warm or cool.

1/4 c brown sugar, firmly packed
1/2 c chopped walnuts
1 tsp cinnamon
2 c bisquick
1/4 c granulated sugar
large egg
2/3 c evaporated milk
2/3 c whole cranberry sauce
ICING:
1 c powdered sugar
1 tsp vanilla extract
1 Tbsp evaporated milk
1 tsp karo corn syrup
1 dash(es) salt
1 tsp butter,softened

Steps:

  • 1. Cake: heat oven to 400^. Mix brown sugar, walnuts and cinnamon ;set aside. Combine baking mix, sugar, egg,and milk; beat vigorously 1/2 minute.
  • 2. Spread batter in a greased square or round 9-inch baking pan; sprinkle with nut mixture. Spoon cranberry sauce over top. Bake 20-25 minutes. While warm, spread with icing.
  • 3. Icing: Combine ingredients and beat until smooth, Spread on warm cake.
  • 4. For a change-up: Banana Coffeecake: 2 c. Bisquick 1/4 c. brown sugar, packed 3 T. butter,softened 1 lg. egg 1/4 c. sour milk (3T.milk+ 1 T. lemon juice) 3/4 c. mashed ripe banana 1/2 c. chopped nuts --- Combine all ingredients; beat vigorously 1/2 minute. Spread batter in greased 9-inch square or round baking pan. Bake 20-25 minutes.While warm frost with above icing and sprinkle 1/4 c. finely chopped nuts on top.

I love the memories that come with this recipe. It is a nice treat to whip up when you have company and need something quick.

1 cup sugar
2/3 cup butter
2 eggs
1 cup sour cream
1 1/2 cups brown sugar
1 cup sugar
1 teaspoon cinnamon
1 cup raisins (soaked) or 1 cup cranberries (soaked)
2 cups walnuts or 2 cups pecans

Steps:

  • 1. Heat oven to 325 degrees(300 degrees for convect).
  • 2. Place raisens/cranberries in bowl of hot water to plump; set aside.
  • 3. Grease 9 x 13 pan.
  • 4. Combine all cake ingredients in medium bowl.
  • 5. Mix on medium speed until batter becomes fluffy.
  • 6. Spread half of batter in pan.
  • 7. Drain raisen/cranberries and put in a bowl.
  • 8. Mix in the rest of topping/filling ingredients.
  • 9. Spread half of topping/filling over batter in pan.
  • 10. Spread the rest of batter over top.
  • 11. Repeat with remaining topping/filling.
  • 12. Take a knife and insert straight down into batter moving up and down in zig zag pattern. (Marbleizing the cake).
  • 13. Bake for 1-1.5hour/until inserted toothpick comes out clean. Cake should be golden color.

1/3 cup semi-sweet chocolate chips, melted
2 teaspoons powdered instant coffee (dry)

Steps:

  • Set oven to 400 degrees.
  • Set oven rack to second-lowest position.
  • Grease a square 8x8x2-in baking pan.
  • Mix coconut, nuts, 1/4 cup sugar and 1 tbsp melted butter; set aside.

  • Stir together sugar and baking mix.
  • Add milk, eggs, and vanilla and mix well.
  • Spread into 9x9 pan coated with vegetable oil spray.
  • Place butter and brown sugar into microwave safe cup and heat until mixture looks "slushy.".
  • Sprinkle pecans over the cake mix and then sprinkle/spread the butter and brown sugar mixture on top of the pecans.
  • Bake at 400 degrees for 20 minutes or until toothpick inserted in center comes out clean.
  • Let cool in pan for 10 minutes before serving.
