4 ounces cream cheese, softened
1 large egg
1 tablespoon 2% milk
1/3 cup real bacon bits
1/4 cup shredded Swiss cheese
1 tablespoon dried minced onion
1 large plum tomato, seeded and finely chopped, divided
1 tube (10.2 ounces) large refrigerated flaky biscuits

Steps:

  • In a small bowl, beat the cream cheese, egg and milk until smooth. Stir in the bacon, cheese, onion and half of the tomato; set aside., Cut each biscuit into four pieces; press each piece into a greased miniature muffin cup. Fill with cream cheese mixture; top with remaining tomato., Bake at 375° for 14-16 minutes or until a knife inserted in the center comes out clean.

1 (8 ounce) package cream cheese, softened
1 tablespoon Worcestershire sauce
1 1/2 cups shredded cheddar cheese
2 (12 ounce) cans biscuits, Grands Jr. Flaky

Steps:

  • Preheat oven to 375ºF. Lightly spray mini muffin pans with cooking spray, set aside.
  • Cook sausage in a large skillet over medium-high heat until no longer pink. Drain fat.
  • Stir together cooked sausage, cream cheese, Worcestershire sauce and shredded cheddar cheese.
  • Remove biscuits from cans and split each biscuit into two. Place each biscuit round into muffin tin. Scoop sausage mixture into biscuit cups.
  • Bake for 12 to 15 minutes, until biscuits are golden brown.

6 - 8 strips of favorite brand of bacon
2 Tbsp bacon grease
2 c all-purpose flour
2 tsp baking powder
1/4 tsp baking soda
1 tsp kosher salt
3 Tbsp lard - chilled
3 Tbsp unsalted butter - chilled
1 1/4 c shredded cheddar & monterey jack cheese
1 c buttermilk

Steps:

  • 1. Preheat oven to 450 degrees.
  • 2. Fry bacon and reserve 2 tablespoons of grease.
  • 3. Combine the next four ingredients.
  • 4. Cut in the cold lard and butter with a pastry blender.
  • 5. Mix the cheese into the dry ingredients.
  • 6. Pour in the buttermilk and bacon grease.
  • 7. Stir just until the dough comes together; roll out to 1" thickness and cut out the biscuits with a 2" biscuit cutter.
  • 8. Bake for 10 - 12 minutes until golden brown.
  • 9. Split hot biscuits; lightly butter; place 1/2 slice of crispy bacon between halves; top bacon with favorite jam or preserves; combine halves and enjoy!
