Bird's Chicken Stew With Dumplings (Or Chicken Noodle Soup) image

Serve this as a soup, ladling it over some cooked egg noodles, or follow with the dumplings portion of the recipe to thicken the sauce into a wonderful creamy stew. This is a family favorite and wonderful comfort food.

1 teaspoon poultry seasoning
1 whole chicken, cleaned
2 cups chicken broth
2 cups water
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic powder
salt and black pepper, to taste
1 medium onion, chopped
4 carrots, cubed small
4 stalks celery, chopped
1 (15 ounce) can green beans
1/4 cup fresh parsley, chopped
1 (16 ounce) bag wide egg noodles, cooked and drained
1/2 cup heavy cream
3 cups Bisquick
1 teaspoon fresh sage, chopped
1 cup 2% low-fat milk or 1 cup buttermilk

Steps:

  • Rub chicken with poultry seasoning and place in large dutch oven. Add the chicken broth, water, oregano, basil, garlic powder, and salt and pepper . Bring to a boil, then reduce heat to low and cover and simmer for 2 hours or until chicken is about falling off the bone, stirring occasionally.
  • Carefully remove the chicken from the pot (using 2 large slotted spoons to lift it works well) into a colander placed inside a pot to catch the dripping and return it back to the broth. Add remaining stew ingredients and continue simmering the broth, but uncovered.
  • Once the chicken is cool enough to handle (about 15 minutes), remove the skin and de-bone the chicken (cut up any overly large pieces such as the breasts). Add chicken back to the pot. Raise temperature up to medium and let simmer 10 minutes. Taste broth and re-season with salt and pepper if needed. (AT THIS POINT you can serve it as soup by ladling it over the cooked egg noodles).
  • FOR DUMPLING STEW VARIATION: Bring temperature up to medium-high and stir in the heavy cream to the broth. Mix Bisquick, sage, and milk to form a dough. Drop dough by heaping teaspoons into hot broth. Don't crowd as they will fluff up, so do in batches if necessary.
  • Let simmer for 20 minutes, CAREFULLY turning the dumplings with a slotted spoon after 10 minutes and about every 5 minutes after that until dough is cooked through (this will also help turn the broth into a thicker stew).
  • If necessary, remove 1st batch of dumplings to a large bowl and repeat by dropping the 2nd batch of dumplings. Add 1st batch of dumplings back into pot, and its ready to eat.

2-1/2 to 3 pounds bone-in chicken thighs or drumsticks
5 cups water
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried basil

3/4 pound new potatoes, quartered
3 carrots, cut into 2-inch pieces
2 celery ribs, sliced
1 medium onion, cut into eighths
1 package (10 ounces) frozen peas
DUMPLINGS:
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons butter or margarine
3/4 cup milk
1/4 cup minced fresh parsley

Steps:

  • Place chicken and water in a 5-qt. Dutch oven. Cover and cook over medium heat for 1 to 1-1/2 hours or until chicken is tender. , Skim fat. Remove chicken from broth; allow to cool. Debone chicken and cut into chunks; return to broth. Add next nine ingredients. Cover and cook over medium heat for 15-20 minutes or until vegetables are tender. , Meanwhile, combine the flour, baking powder and salt in a bowl; cut in butter until mixture resembles coarse crumbs. Stir in milk and parsley. Drop dough by rounded tablespoonfuls into simmering stew. Cook, uncovered, for 10 minutes. Cover and cook for 8-10 minutes or until the dumplings are tender.

1 (3 pound) rotisserie chicken
2 tablespoons butter
1 onion, diced
2 ribs celery, sliced thin
2 tablespoons all-purpose flour
2 (14.5 ounce) cans chicken broth
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried basil
¼ teaspoon dried thyme
¾ pound new potatoes, cut into 1/2-inch dice
2 cups frozen mixed vegetables
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
3 tablespoons butter
¾ cup milk, or more as needed
2 tablespoons dried dill

Steps:

  • De-bone chicken and cut into chunks or shred. Set aside.
  • Melt 2 tablespoons butter in a large Dutch oven over medium heat; cook and stir onion and celery until soft, about 10 minutes. Sprinkle in 2 tablespoons flour and whisk continuously to make a thick roux, about 2 minutes. Slowly pour in chicken broth, whisking to remove any lumps. Add 1 teaspoon salt, black pepper, basil, thyme, potatoes, and mixed vegetable. Cover and cook the stew over medium heat until vegetables are tender, 15 to 20 minutes. Stir in chicken meat and continue to simmer.

4 -5 chicken thighs or 1 small stewing chicken
2 cups water
6 cups chicken stock
1 medium onion, diced
2 stalks celery, diced
1/4 cup green peas
1/4 cup carrot, diced
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
3 garlic cloves, crushed
1 teaspoon garlic granules (or powder)
1/2 teaspoon pepper
1/2 teaspoon poultry seasoning

Steps:

  • Boil thighs (or small whole stewing chicken)in water & chicken stock until done (juice runs clear when you pierce them).
  • Remove chicken pieces and set aside to cool.
  • Add onion, celery, peas and carrots and return to the boil.
  • Skin, debone and cut up chicken into bite sized pieces.
  • Add chicken and mushroom soups, garlic, spices and chicken pieces to soup, whisk until thoroughly mixed and return to a boil.
  • Turn down and simmer for approx 20 minutes.
  • Add dumplings from Recipe #30965 (optional) and simmer for 10-15 minutes.
  • Serve immediately.

2 tablespoons vegetable oil
4 medium stalks celery, coarsely chopped (2 cups)
3 medium carrots, thinly sliced (1 1/2 cups)
1 large onion, chopped (1 cup)
3 cups cubed cooked chicken
1/2 teaspoon pepper
6 cups Progresso™ chicken broth (from two 32-oz cartons)
1 1/2 cups Gold Medal™ self-rising flour
1/4 cup shortening
2 tablespoons chopped fresh parsley
1/2 cup Progresso™ chicken broth

Steps:

  • In Dutch oven or large saucepan, heat oil over medium-high heat. Add celery, carrots and onion; cook, stirring frequently, until tender. Stir in chicken, pepper and 6 cups broth. Heat to boiling. Reduce heat to medium-low; simmer 15 minutes.
  • Meanwhile, place flour in medium bowl. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture resembles coarse crumbs. Stir in parsley. Add 1/2 cup broth; stir just until dry ingredients are moistened.

2 medium carrots, peeled and sliced into coins
1/2 cup green beans or 3/4 cup broccoli floret
1/4 cup corn
3/4 cup brown button mushroom, sliced
2 stalks celery & leaves, sliced thinly

1/2 teaspoon dried oregano or 1/2 teaspoon dried dill
1/4 teaspoon salt-free garlic powder

1 cup milk or 1 cup half-and-half

2 cups cooked chicken or 2 cups cooked turkey, cubed
2/3 cup unbleached white flour
1 tablespoon fresh parsley, minced (ok to sub dried parsley)
1 teaspoon baking powder
1/4 cup milk
2 tablespoons cooking oil
1 cup homemade Bisquick baking mix
1/3 cup milk
1/2 teaspoon dried parsley

Steps:

  • SOUP: In a large sauce pan combine 2 1/2 cups chicken stock, vegetables, onions, herb, garlic powder and black pepper.
  • Heat until very hot but not boiling.
  • Whisk together the milk and flour. Stir into the vegetable mixture. Stir in the cooked chicken.
  • Cook and stir the soup on low-medium to medium heat until thickened and bubbly. Reduce heat if soup looks like it might begin to boil.
  • DUMPLINGS: Choose dumpling recipe and prepare. Version #1: in a mixing bowl combine the flour, parsley, baking powder and 1/8 teaspoon salt. Mix the milk and oil together and pour into flour mixture.
  • Stir with a fork until combined. Drop by greased tablespoonful to make about 8 mounds on top of the hot stew. Cover; simmer approximately 10-12 minutes or until a toothpick inserted in one of the dumplings comes out clean. DO NOT lift cover while cooking the dumplings.
  • Version #2: Combine the ingredients. Continue to prepare the same as Version #1 dumplings in Step #6.
