BILL'S CHERRY CHEESECAKE

My husband, Bill, does not normally like sweets, but he is a cheesecake fanatic, and this is the favorite of our house.

1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons melted butter
4 (8 ounce) packages cream cheese (softened)
1 cup sugar
3 tablespoons flour
4 eggs
1 cup sour cream
1 (8 ounce) container mascarpone
2 teaspoons sugar
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat over to 350f.
  • Mix together graham cracker crumbs, 3 tbs sugar and melted butter. Press into bottom of a tall 9" springform pan.
  • Mix the cream cheese, sugar and flour thoroughly, then add agges one at a time. Beat in sour cream, and whip until completely mixed and place into pan.
  • Put the springform pan with the cheesecake on a cookie sheet and add 1/2 inch of water to the cookie sheet. This will help prevent the cheesecake from cracking as it cooks. Bake for 1 hour and 15 minutes.
  • Turn off oven and crack door open, leaving cheesecake inside oven until cool.
  • Topping: Whip the mascarpone and sugar, and top the cheesecake. Once the layer is put on the cheesecake, add the cherry pie filling on top. Place in fridge overnight.
  • NOTE: You can use the pre-made graham cracker crumb pie pans that you get at the store, but if you do, the filling will make three pies, and only bake 50-55 minutes. You also need to double the topping quantity for the three pies.

2 cups Snackwell's cinnamon snacks, crushed
4 tablespoons granulated sugar
4 tablespoons butter
8 ounces cream cheese
1/4 cup granulated sugar
2 large eggs
1 teaspoon fresh lemon juice
1 teaspoon vanilla extract
3 tablespoons all-purpose flour
21 fluid ounces canned cherry pie filling
1 1/2 cups non-dairy whipped topping
3 tablespoons Grape-nuts cereal

Steps:

  • Preheat oven to 350 F degrees.
  • Crush SnackWells cinnamon snacks and add to a mixing bowl.
  • Add sugar and mix well.
  • Add butter and using a pastry blender or a fork, blend butter until incorporated with the snacks.
  • Prepare a 9" x 13" oven-proof casserole dish by spraying with a vegetable spray or rub inside with some butter to coat.
  • Press the crushed mixture onto the bottom of the casserole dish.
  • In a large mixing bowl, add cream cheese, sugar, eggs, lemon juice, vanilla extract and flour and using an electric mixer, beat until smooth.
  • Pour mixture over the cracker base crust.
  • Bake in preheated 350 F oven for 25 to 30 minutes.
  • To test for doneness, insert a knife or large toothpick in center and if it comes out clean, then the filling is set and cooked.
  • Remove from oven and let cool.
  • Spread cherry pie filling over top.
  • Spread whipped topping over cherries.
  • Sprinkle Grape-Nuts cereal on top.
  • Chill for 1/2 hour before serving.

¼ cup margarine, softened
¼ cup sugar
1 (8 ounce) package cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped
1 (12.5 ounce) can cherry pie filling (or other filling of your choice)

Steps:

  • Mix together graham cracker crumbs, margarine, and sugar in a bowl until well incorporated and crumbly. Press into a pie plate, going up the sides as much as possible.
  • Beat together the cream cheese, sugar, and vanilla in a bowl until smooth and spreadable. Whisk whipped cream into cream cheese mixture until smooth. Pour cream cheese into prepared crust. 1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
⅓ cup lemon juice
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Steps:

  • Place softened cream cheese in a mixing bowl; add condensed milk, lemon juice, and vanilla. Beat until well blended. Pour mixture into the pie crust. Chill for 5 hours. DO NOT FREEZE!!!
  • Pour cherry pie filling on top of pie. Serve.

1 carton (8 ounces) frozen whipped topping, thawed
1 shortbread crust (9 inches) or graham cracker crust (9 inches)
