2 lbs fresh oysters
1 cup flour
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 cup milk
oil (for frying)

Steps:

  • Rinse oysters, and cut any that are too large in half.
  • Mix well the flour, egg, salt and pepper.
  • Should be like pancake batter.
  • Add more milk if necessary.
  • Heat oil to very hot, (375) in a large skillet.
  • Dip oysters in batter, let drain a few seconds.
  • Carefully drop oysters in hot oil.
  • Fry for about 4 minutes, until golden brown.

10 ounces oysters, shucked
1 egg
1/2 teaspoon Worcestershire sauce
1 cup breadcrumbs
1 teaspoon dried oregano
1 teaspoon fresh rosemary leaf, minced
1/2 teaspoon ground sage
1/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup vegetable oil

Steps:

  • Heat oil in skillet, on medium high.
  • Beat egg with Worcestershire sauce.
  • In another bowl combine bread crumbs with spices.
  • Cut shucked oysters into bite size pieces. Dip in egg then breading and place into pan. Turn after 5-10 minutes, then brown other side. Drain on tea towel or unbleached, recycled paper towel.
  • Serve as is, with tartar sauce, or on a bun with lettuce, and thinly sliced onion.

My dad loves to have a good old southern fish/seafood fry. This is the recipe he uses for fried oysters.

1 cup self-rising cornmeal
1 cup self-rising flour
1/4 teaspoon cayenne pepper, to taste
2 eggs
2 tablespoons milk
2 (12 ounce) containers fresh oysters, drained
vegetable oil

Steps:

  • In a mixing bowl, add the first 3 ingredients; stir to combine.
  • In another bowl, combine the egg and milk; whisk to combine.
  • Dip oysters in egg mixture, then dredge in flour mixture.
  • Add oil to 2-3 inch depth in a cast-iron dutch oven; heat to 375 degrees.
  • Fry oysters in oil until golden, turning once.
  • Drain on paper towels and serve immediately.

I found this recipe quite some time ago on another site and thought it sounded very good. I think the addition of the spices is very interesting and I can't wait to try it.

2 eggs
2/3 cup milk
1 tablespoon creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon hot sauce
1 teaspoon cayenne pepper
salt, to taste
pepper, to taste
2 dozen oysters
2 cups seasoned fish fry or 2 cups cornmeal
3/4 cup cornstarch
2 tablespoons creole seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne
1 teaspoon lemon pepper seasoning

Steps:

  • Combine the first 9 ingredients in a bowl and mix well.
  • Add in the oysters and marinate at least 30 minutes in the fridge.
  • Put the remaining ingredients in a paper bag and mix well by shaking.
  • Remove the oysters from the marinade and drop in the bag.
  • Shake the bag to coat the oysters and let them rest in the bag for a few minutes.
  • Heat about 2" of oil in the pan to 365 degrees.
  • Place the oysters in the oil leaving at least a 3/4" space between pieces (do not overcrowd them or the oysters will be soggy).
  • Fry the oysters about 4 minutes or until done.
  • Remove to paper towels to drain.
  • After most of the oil has drained, remove to fresh paper towels.
  • Make sure the oil is at least 360 degrees before adding and frying the next batch.

Posting this for a good friend that wanted my recipe!! These really are tasty lil buggers!! Came up with the idea from a box of crackers that must have been "drop-kicked" by some warehouse workers subbing it for a football! :S!! The crackers were pretty broken up, so made the best of them!! LOL!! Enjoy!! :)

1 (8 ounce) container select raw oysters
1 beaten egg
1 cup finely crushed Chicken In A Biscuit crackers, more if needed
2 tablespoons olive oil
2 tablespoons vegetable oil
2 tablespoons butter
seafood cocktail sauce

Steps:

  • Pour oysters into a colander, rinse gently with cold water, drain.
  • Carefully pat oysters dry on paper towel a few at a time.
  • Dip oysters into beaten egg, let excess drip off, then into cracker crumbs, set on plate. Repeat til all are coated.
  • Place in fridge, or cook now.
  • Put oils and butter in pan and heat to med-high heat.
  • Carefully place oysters into hot oil.
  • Cook til golden brown on both sides turning only once as breading and oysters are delicate. About 3-4 minutes TOTAL if using medium-sized oysters. Watch them carefully!
  • Place on paper towels to drain.
  • Serve with your favorite sauce such as cocktail, tartar or Ranch dressing.
  • Serves about 2.
