I always try to come up with new ways of making sandwhiches for me & my uncle's lunch. On a cold day I will serve each sandwhich with a bowl of hot soup.

2 slice(s) marble rye bread
1 tablespoon(s) miracle whip dressing, divided
1 slice(s) american cheese
6 slice(s) deli fresh smoked ham
2 slice(s) red onions, thin slices

Steps:

  • Frist spread 1 bread slice with 1 tsp. dressing. Fill bread slices with cheese,ham & onions.
  • Then spread outside of the sandwhich with remaining dressing.
  • Fry in a frying pan over medium heat for about 3 mins on each side or until cheese has melted & bread is a golden brown on both sides.

How many of you remember the Big Boy restaurants? They had a great sandwich called the "Slim Jim". Well here is my version of that great sandwich. For a true Big Boy restaurant experience, you might want to serve this with onion rings on the side. Submitted to Zaar on August 6th, 2006.

2 hoagie rolls, split and lightly toasted
4 lettuce leaves
4 slices tomatoes
6 ounces of very thinly sliced brown sugar ham (i used two 3 ounce packages of hillshire deli selects lunch meat)
2 slices swiss cheese, cut in half making 4 pieces
4 teaspoons thousand island dressing, divided
4 dill pickle slices (optional)

Steps:

  • On top halves of toasted buns, spread each with two teaspoons of salad dressing; set aside.
  • On a microwave safe plate, separate ham slices and heat through.
  • Divide ham into two equal portions on the plate.
  • Cover each portion with 2 slices of cheese overlapping each other.
  • Heat until cheese is slightly melted.
  • On bottom half of each bun, place in this order, 2 lettuce leaves, 2 tomato slices overlapping each other.
  • Place cheese covered ham over tomato slices.
  • Top with remaining bun. Cut sandwich on the slant (if you really want it to look like the real thing, put two pickle slices, one on each half and stick a toothpick in each pickle).

One sheet tray and you have a classic B.E.C. (bacon egg and cheese) for everyone.

Yield 24 sandwiches

1 pound bacon
1 cup milk
1 dozen large eggs
Kosher salt and freshly ground black pepper
One 24-count package Hawaiian sweet rolls
8 slices American cheese
Ketchup, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Weave the bacon into an approximately 10-inch square on a cooling rack. Put the cooling rack with the bacon on a baking sheet. Bake until partially cooked, 15 to 20 minutes
  • Meanwhile, whisk together the milk, eggs, 1 1/2 teaspoons salt and several grinds of pepper in a large bowl.
  • Remove the cooling rack with the bacon and set aside. Spread the rendered fat on the baking sheet with a pastry brush. Pour the whisked eggs onto the baking sheet and bake for 5 minutes. Remove from the oven and stir until fluffy. Bake until set but not dry, another 5 minutes.
  • Using a serrated knife, slice the entire package of sweet rolls in half, keeping them attached to each other. Top the bottom halves with the cheese. Spoon the scrambled eggs onto the cheese. Transfer the bacon lattice on top of the eggs and top with the other half of the rolls. Cut into individual servings and serve with ketchup.
