6 russet potatoes, wedged
Peanut oil, to fry
French-fry seasoning, recipes follow
1 teaspoon dry porcini mushrooms, ground
1 teaspoon coarse sea salt
1/2 teaspoon black pepper
1/8 teaspoon dry mustard powder
1 teaspoon Sherry vinegar
1 teaspoon freshly chopped dill leaves
1 teaspoon sea salt
1/2 teaspoon coarse black pepper
1 lemon, zested
1 teaspoon smoked paprika
1 teaspoon freshly chopped parsley leaves
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Heat deep-fryer with peanut oil to 350 degrees F.
  • Fry potatoes in a deep-fryer until golden brown and tender. Approximately 6 minutes. Toss with your choice of seasoning.

Grilling the potatoes in an easy-to-fold aluminum foil packet adds a subtle note of smoky flavor-plus it makes cleanup a breeze.

3 pounds baby red potatoes, cut in half
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon freshly ground pepper
1 cup mayonnaise
1/4 cup chopped fresh parsley
1/4 cup white balsamic vinegar*
2 teaspoons sugar
2 teaspoons Dijon mustard
1 cup thinly sliced red onion
4 ounces crumbled blue cheese
6 bacon slices, cooked and crumbled

Steps:

  • Preheat grill to 350° to 400° (medium-high) heat. Place potatoes in a single layer in center of a large piece of heavy-duty aluminum foil. Drizzle with olive oil; sprinkle with salt and pepper. Bring up foil sides over potatoes; double fold top and side edges to seal, making 1 large packet.
  • Grill potatoes, in foil packet, covered with grill lid, 15 minutes on each side. Remove packet from grill. Carefully open packet, using tongs, and let potatoes cool 5 minutes.
  • Whisk together mayonnaise and next 4 ingredients in a large bowl; add potatoes, tossing gently to coat. Stir in onion, blue cheese, and bacon.
  • *Balsamic vinegar may be substituted but will darken the color of the dressing.

8 tablespoons (1 stick) butter
1/2 cup all-purpose flour
2 cups milk
1/2 cup grated yellow Cheddar
1/4 cup grated American cheese
1/4 cup grated white cheddar
1 teaspoon chicken bouillon powder
1/2 teaspoons ground nutmeg
1 teaspoon black pepper
3 pounds russet potatoes, washed and scrubbed, peeled and sliced thin
1 stick butter, melted
2 cups panko bread crumbs
2 teaspoons smoky paprika

Steps:

  • Preheat oven to 350 degrees F.
  • In a large sauce pot over medium-high heat, add butter. Stir in the flour until pasty. Add milk; stir to remove lumps and let cook for 6 minutes until it gets thick. Lower heat and add the cheese, bouillon, nutmeg and black pepper. Whisk until well combined and sauce thickens, approximately 4 minutes. Remove from heat.
  • In a bowl, combine butter, panko and smoky paprika. Stir well.
  • Place potatoes into a casserole dish. Pour cheese over potatoes and sprinkle au gratin on top. Wrap with foil and bake in oven for 35 to 45 minutes. Remove foil and cook for 10 minutes uncovered. Allow to sit for 10 minutes.

My oldest son came across this recipe one snowy day and asked me to make it. It is nice cold day dish to have with some homemade bread.

6-8 potatoes
2-3 carrots
1 large onion
2 lb hamburger
1 can(s) cream of mushroom soup
1 soup can of milk

Steps:

  • 1. Peel and slice the potatoes, carrots and onions.
  • 2. Brown hamburger and drain.
  • 3. In a casserole dish layer paotatoes, carrots, onions and hamburger. Repeat until there is no more left ending with hamburger on top.
  • 4. Add can of cream of mushroom soup with a soup can of milk and pour over top.
  • 5. Bake at 375 for 1 hour.

24 miniature tart shells
oil, for pans
1 (12 ounce) can yams or 1 (12 ounce) can sweet potatoes
2 tablespoons cream cheese, softened (reserved from Whipped Cinnamon Cream Cheese)
2 eggs
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 cup brown sugar
1/4 cup caramel sauce
1 (8 ounce) package cream cheese, softened (reserve 2 tablespoons for pies)
1/4 cup heavy cream
1/2 cup powdered sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the pre-made mini shells inside a greased 24-count mini muffin pan.
  • In a large bowl add the yams, cream cheese, eggs, vanilla, cinnamon, allspice, brown sugar and caramel sauce.
  • Beat with a hand-held electric mixer until well combined.
  • Dollop 2 to 3 tablespoons of the pie mixture into each shell.
  • Bake until the custard sets, about 25 minutes.
  • Remove from the oven and set aside to cool.
  • For the Whipped Cinnamon Cream Cheese:.
  • Add the cream cheese, cream, sugar and cinnamon to a large bowl.
  • Using a hand-held electric mixer, beat the cream cheese mixture until you reach a frosting consistency.
  • Transfer the mixture to a disposable pastry bag with a star tip.
  • Pipe a small amount of whipped cream cheese on each mini sweet potato pie.
  • Arrange on a serving platter and serve.

This is SO good. A recipe from the 2008 Next Food Network Star, Aaron McCargo Jr. The recipe as it is published on the FN website has a couple typos in the ingredient quantities. I'll post my corrections here.

3 lbs red potatoes
1 cup heavy cream
1/2 cup butter
6 garlic cloves, smashed
1 cup cheddar cheese, shredded
pepper, to taste
salt, to taste

Steps:

  • Wash red potatoes well, as you will leave the skin on. Quarter the potatoes and cover with water. Boil until fork tender. Drain the water, and place potatoes back into pan.
  • In a saucepan, heat heavy cream, butter and garlic. Bring to a light simmer then turn off the heat and add to the potatoes.
  • Mash potatoes, and add salt & pepper to taste.
  • Add the cheese and mix.
