A very coconutty and chewy rice flour dessert. Traditionally, this is baked in banana leaves, but my family prefers the crispy edges, which is why I use a sheet pan. I have been testing out several types of chewy desserts using rice flour, and this seems to be the favorite.

1 (13.5 ounce) can coconut milk
1 (14 ounce) can sweetened condensed milk
1 stick butter, melted
4 eggs
2 (12 ounce) jars macapuno strings in heavy syrup
2 ½ cups sweet rice flour (mochiko)
1 cup packed brown sugar
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 12x17-inch rimmed baking sheet.
  • Beat condensed milk, coconut milk, and melted butter together in a large mixing bowl until combined. Add eggs, 1 at a time, and beat until combined. Add macapuno, 1 jar at a time, and beat until combined. Gradually beat in mochiko flour. Beat in brown sugar; beat in vanilla extract. Pour batter onto the prepared baking sheet.
  • Bake in the preheated oven until top is golden brown and sides are slightly dark brown, 45 to 50 minutes.
  • Allow to cool, about 20 minutes, before loosening the sides and cutting into squares.

Made with Mochiko (sweet rice flour) and coconut milk. This is one of my favorite Filipino desserts that I had growing up. Pieces of this dessert are like eating Pringles...you can't eat just one.

16 ounces mochiko sweet rice flour (1 box)
1/2 cup butter (1 stick)
2 cups sugar
4 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1/4 teaspoon salt
8 ounces sour cream
14 ounces coconut milk (1 can)
1/2 cup shredded coconut (optional)

Steps:

  • Preheat oven to 350 degrees and butter or spray a 9 x 13 glass dish.
  • Cream the butter, sugar and eggs in a bowl.
  • Add remaining ingredients and blend well.
  • Pour into glass dish and bake for 40-50 minutes.
  • Edges should have a nice light brown color while the middle is a nice cream color. Eat hot or cold.
  • (Optional) I like to add the shredded coconut to the batter. For the last 15 minutes of baking, I also like to take some of the shredded coconut and sprinkle it to the top of the cake to toast the coconut. Very delicious!

1/2 cup butter, softened
1 lb sweet rice flour
2 1/2 cup sugar
1 tsp. baking powder
3 cups milk (fresh or evaporated)
5 eggs, beaten
1 tsp. vanilla
1 cup coconut flakes

Steps:

  • Preheat oven to 350 F. Mix all ingredients in a greased 13 x 9 pan. Bake 1 hour at 350F, or until a toothpick inserted in the center comes out clean. When cool, cut into squares.

1 ¼ cups rice flour

2 teaspoons ube extract (such as McCormick®)
⅔ cup macapuno (preserved young coconut strings)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 9x9-inch baking pan with banana leaves or parchment paper and coat with cooking spray.
  • Whisk rice flours, baking powder, and salt together in a large bowl, then stir in the water and coconut milk. Add ube spread and ube extract. Fold in macapuno and 1 tablespoon muscovado. Pour into the prepared pan.
  • Bake in the preheated oven until top starts to crack and leaves turn brown, about 35 minutes. Brush top with 1 tablespoon butter, then bake until a toothpick inserted in center comes out clean, about 20 minutes more.
  • Melt remaining 2 tablespoons butter in a small saucepan over medium heat. Stir in 1/4 cup muscovado sugar; cook, stirring, until it starts to boil. Remove from heat and pour over warm mochi, covering evenly. Sprinkle with toasted coconut. Let cool, at least 30 minutes.
  • Use banana leaves to lift mochi out of the pan. Cut into 25 small squares; cut squares diagonally into triangles.

2 tsp baking powder
1 can(s) coconut milk (12 oz.)
3 c fresh milk
1 tsp vanilla extract
1/2 c butter
3 c sugar

Steps:

  • 1. Mix together the mochiko and baking powder, set aside.
  • 2. In a medium bowl, stir together the coconut milk, fresh milk and vanilla extract.
  • 3. In a large bowl, cream together butter and sugar. Add eggs one at a time, beat well after each egg addition.
  • 4. Add alternately into the creamed mixture, the mochiko mixture and the milk mixture and mix thoroughly until smooth.
  • 5. Pour the batter into a greased 9x13 inch pan. Bake at 350 degrees for 1 hour.

  • NOTE: Cassava, also known as Manioc, tapioca or yucca, can be found in Filipino or Latin American food stores. Usually sold frozen and grated. Mix together the cassava with the coconut milk, melted butter and eggs. Stir in the white sugar, salt, vanilla, cheese and lemon rind.
  • Pour batter into a 9x5 inch loaf pan and bake at 350 degrees F (175 C) for 30-35 minutes or until done.
  • To Make Topping: Put 2 cups coconut milk, condensed milk, flour, and some grated cheese in a saucepan and boil, stirring constantly. When thick, add the slightly beaten egg yolks. Cook for two minutes. Spread on top of the cooked cassava and bake at 400 degrees F (200 degrees C) for ten minutes or until golden brown.

Bibingka is a cake made of rice flour, so it's naturally gluten-free, chewy but tender throughout, with a soufflé-like fluffiness. It's traditionally cooked in a clay pot over and under hot coals, a difficult setup to replicate; instead, I pour the batter into a cast-iron pan lined with banana leaves, which char as the cake bakes, infusing it with their scent. (You can cut the ribs off the leaves to make them more malleable.) Nearly halfway through baking, the cake is topped with salted duck egg, an ingredient available at Asian specialty groceries. If you can't find it, the cake will be more forthrightly sweet, lacking that sly note of brine. As a final touch, if you have a kitchen torch available, char the edges of the banana leaves, so a little smokiness suffuses the delicate cake.

Steps:

  • Heat oven to 325 degrees and center racks.
  • Line two 8-inch cast-iron skillets or similar pans with banana leaves: Set 2 large sheets in each pan, allowing banana leaves to overlap in the center and come up the sides. Cut off any overhang that extends more than 1/2 inch beyond the lip of the skillet. Melt the butter, and add 1 tablespoon melted butter to each skillet, brushing it to coat the bottom and sides, reserving the remaining melted butter for the cake.

  • Pour half the cake batter into each buttered skillet and smooth each into an even layer.
  • Bake the cakes for 30 minutes, until set around the edges but the surface of the center is puffy and not fully cooked through, rotating the cakes halfway through cooking.
  • Remove the cakes from the oven. Form the cream cheese mixture into about 10 1/2-inch-thick logs. Top each cake with a few slices of duck egg coins in the center, then arrange five cream cheese logs on each cake, radiating outward from the center of each cake, like the arms of a starfish. (The logs will sink in lightly on the top, but should not sink in fully.) Return the cakes to the oven to continue baking for 10 minutes more, then increase the temperature to 400 degrees and cook until the top is a deep golden and cakes are fully set, 10 to 15 minutes. The cakes will be lightly domed and should spring back when touched.
  • Let cool 10 minutes then cut into slices. Serve warm or at room temperature.

Different variations exist, but they're almost always a single-layer unfrosted cake that's served as a dessert or for breakfast. Cream of coconut can be found in the alcohol aisle in larger markets, and sweet rice flour is in the Asian aisle. (Regular rice flour is OK, but it probably won't have the slight sticky touch this cake is known for.)

  • Make sure sugar has dissolved.
  • Add beaten eggs.
  • In bowl, sift the flour.
  • Add salt and baking powder and sift again.
  • Combine the egg mixture with the flour mixture.
  • Beat well.
  • Pour into baking pan.
  • Bake for 15 minutes.
  • Sprinkle with cheese and bake for 20 minutes more, brushing twice with margarine while baking.
  • When done, brush again with margarine.
  • Serve with grated coconut.

2 cups galapong, glutinous rice flour
1 1/2 cups powdered coconut milk
1/2 cup evaporated milk
3 egg, beaten
1 cup sugar
1/2 cup grated cheddar cheese
1/4 cup margarine
1 cup water

Steps:

  • In a big bowl, sift rice flour, sugar and powdered coconut milk together. Whisk in water, milk and beaten egg until fully blended. Coat cake pan or mould with margarine and pour batter into the cake pan cover with aluminum foil. Bake at 375°F for 10 to 15 minutes in an oven. Now take out pan with half cooked bibingka, remove cover and top with cheese and sugar. Return aluminum covering and bake for another 20 to 30 minutes. Brush with margarine at least twice in between. When done, remove pan from the oven and brush again with margarine. Let cool down and serve in slices.

wilted banana leaves

Steps:

  • Procedure: 1. Sift together the flour, sugar, baking powder and salt, set aside. 2.Pour the milk to the sifted ingredients then mix well, then add the beaten eggs and mix well until fully combined and smooth. 3. Put a wilted banana leaves in the baking pan that you are going to use, and bake for 45 minutes or until done in a pre-heated oven at 180C. 4. When it is done, sprinkle with grated cheese or coconut then serve.
