BETTY'S SELF SAUCING STICKY DATE PUDDING
A warm "cake like" pudding, dotted with chopped sweet dates and walnuts (optional) baked with a caramel sauce underneath. Sticky date pudding is an iconic Aussie dessert, I have made and enjoyed many times. The perfect dessert to end a cold and chilly night.

- 1. Pre heat oven to 375oF (180oC) and well grease a large 16 cup capacity oven proof dish (I use my large casserole dish or ceramic lasagna tray).
- 2. Sift the flour and cinnamon into a bowl. Add the sugar and mix. Make a well in the centre, add in the butter and milk. Fold in the dates and nuts (if using). Spread into the prepared dish.
- 3. Pour the prepared sauce (how to following) carefully over the batter. Use the back of a wooden spoon to pour the liquid over. Bake in the pre heated oven for 50-60 minutes or until the top is set. Serve with ice-cream and/or cream.
- 4. To make the caramel sauce: In a large jug, combine the water, sugar and butter. Stir until the butter is melted.

- Shape beef into 12 thin patties. Top six patties with a slice of cheddar cheese, green pepper strips and a slice of onion, tomato and Swiss cheese. Top each with another patty and seal edges. Season to taste. , Grill beef, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on lettuce-lined buns.

BETTY'S CARAMEL AND BANANA SELF SAUCING PUDDING
Warm banana cake on top of a rich caramel sauce. This makes a LARGE dessert, enough to keep my teenage sons happy. Serve with whipped cream or vanilla ice cream.

- Preheat oven to 180oC/365oF. Grease a large dish - about 16 cup capacity.
- Mix all the cake ingredients together and pour into the prepared dish.
- Pour over the caramel sauce and bake in the preheated oven for 55 - 60 minutes. Cool for 5 minutes before serving
- Caramel sauce - in a large jug combine everything together- let the butter melt.
