BEST EVER SALMON SAUCE
I'm originally from the Pacific Northwest and consider myself a salmon purest. This is the ONLY sauce I will EVER serve with my very favorite fish.

Steps:
- 1. Drain salmon. Remove bones and skin.
- 2. In a large bowl combine salmon, bread crumbs, onion, celery, mayonnaise, and beaten egg.
- 3. Mix.
- 4. Shape into 4 even-sized patties. Two for dinner. And two the next day for a salmon burger. Condiments of your choice.
- 5. In a large saute pan, melt butter on low.
- 6. Add salmon patties.
- 7. Cook on medium until golden brown on each side and cooked through.
- 8. I like to serve a patty with boiled, and cut up cooked potatoes, a hard-boiled egg, cream gravy, and my Candied Crunchy Dill Pickles on the side. Sprinkle a little dill seed and a splash of lemon juice on the patties.

THE BEST CAJUN BLACKENED SALMON EVER.
We eat a lot of salmon (at least once a week) and this is by far my favorite way of preparing it. It's really quite simple, and the end result is so delicious. The sweetness of the apple juice/white wine combined with the spiciness of the Cajun seasoning is amazing. The blackened texture of the fish is also great. Not your typical boring salmon!

- Melt butter over medium high heat. Stir in 1 to 2 tablespoons (depending on how spicy you like it) of Cajun's Choice Blackened Seasoning and garlic. Stir constantly for 1 minute to blend flavors. Slow the cooking of the butter and the garlic by adding wine. Stir constantly and cook for 1 minute. Add fish fillets and cook until fish flakes apart. Squeeze lemon over fish and serve.

BEST EVER SALMON CROQUETTES
I've been making these for so many years I cant remember where I got the recipe from. I never liked salmon patties until I found this version. Even my picky kids love these!

- Drain salmon, reserving 1/4 cup liquid.
- Remove skin and bones.
- Place salmon in mixing bowl, breaking up into smaller pieces.
- Add egg, mixing thoroughly.
- Stir in flour.
- Blend in potato flakes, onion and pepper.
- Combine baking powder and reserved 1/4 cup liquid.
- Stir into salmon mixture until well combined.
- Form mixture into 24 croquettes (I dont have time to stand there and make that many, I make mine a little bigger, resulting in around 10-12).
- Drop into deep hot oil (375) and fry without crowding for 3-5 minutes or until golden brown on all sides.
- Drain on paper towel.

MY BEST EVER PINK SALMON PATTIES
This is a favorite of my kids.... Its easy, tasty, and quite a penny stretcher. And goes great with the 99c bags of broccoli, cauliflower and carrot frozen vegetable melody, and a quick cheese sauce (3 tbsp. butter, 3 tbsp. flour, let cook 1 min. 1 1/2 cups milk, and and a cup of processed cheese like Velveeta (but the save-a-lot brand taste just as good and a lot cheaper) cut cheese up into cubes let melt. add about a dash of nutmeg, and a dash of pepper) and your done. Under 5 bucks to feed a family of 4 and probably with some leftovers. ALSO THESE SALMON PATTIES IF MADE INTO SMALLER PATTIES MAKE FOR A GREAT APPETIZERS SPECIALLY IF YOU WRAP THEM IN PUFF PASTRY AND BAKE (remember you must fry first). makes about 24 small 1/2 dollar-size appetizers. LEFTOVERS: They also make great for sandwiches, for school lunch bags or brown bags and picnics.

- Just add all ingredients into a medium size bowl; mix well.
- Cover and let sit for at least 10 minutes to let the flavors and seasonings to merge together.
- Form into patties.

- 1. Debone drained salmon and remove any black coating,flake salmon into a bowl
- 2. add egg,onion,pepper,chili sauce, and 1/4 cup of cracker crumbs, mix thouroughly
- 3. place reserved cracker crumbs in plate, form salmon mixture into patties 1/2 to 1' thick,dredge in reserved crumbs

- Start charcoal and let the coals go gray, and flame die down.
- Take one piece tinfoil, place salmon, skin side down on the foil.
- Sprinkle with 1 teaspoon Old Bay (more or less can be used according to your liking).
- Place 1/2 stick butter on top, uncut.
- Wrap salmon, sealing very well.
- Take a second piece of foil, place salmon FOLDED SIDE DOWN on foil, and wrap again.
- Now place salmon on the grill, with lid down, turning every 5 minutes for about 15 minutes.
- Remove from grill, open very carefully! You'll have to DUMP it on your plate, as it will fall apart!

- Line a baking pan with tin foil. Heat oven to broil. Line baking pan with tin foil. Put salmon skin side down and pour soy sauce over. About 1/3 cup. Once over is heated put salmon in, set time for 15 minutes no matter how much salmon. Cook and remove. It is the best and so simple.
