1 (5 1/2-pound) fore-rib, wing-rib or sirloin of beef, French trimmed (2.5 kilograms)
Sea salt and freshly ground black pepper
Olive oil
3 red onions, halved
2 bulbs garlic, plus 4 cloves garlic, peeled
7 pounds (3 kilograms) roasting potatoes, peeled
3 rosemary sprigs
2 thumb-sized pieces ginger, peeled and diced
1/2 bottle robust red wine
Yorkshire pudding, recipe follows
1/2 pint (285 milliliters) milk
4 ounces (115 grams) all-purpose flour
Pinch salt
3 eggs
Vegetable oil

Steps:

  • Preheat oven to 450 degrees F (230 degrees C), and heat a large thick-bottomed roasting tray on the stovetop.
  • Rub the beef generously with salt, then add a little olive oil to the tray and lightly color the meat for a couple of minutes on all sides.
  • Lay the onions and bulbs of garlic in the tray with the beef on top of them, then cook in the pre-heated oven for a total of 1 1/2 hours.
  • While the beef is roasting, parboil your potatoes in salted boiling water for around 10 minutes and drain in a colander. Toss about to chuff them up, this will make them really crispy.
  • After 30 minutes, take the tray out and toss in your potatoes and rosemary. With a garlic press or grater, squeeze or grate the cloves of garlic and ginger over everything in the tray.
  • Shake the tray and whack it back in the oven for the final hour. Remove the potatoes to a dish to keep warm, place the beef on a plate, covered with foil, to rest, and get your greens and Yorkshire puddings on.
  • Remove most of the fat from your roasting tray and you should be left with caramelized onions and sticky beef goodness.
  • Add 1 teaspoon of flour to the tray and mash everything together. Heat the tray on the stovetop and when hot, add the red wine. Simmer for 5 to 10 minutes, stirring every couple of minutes, until your gravy is really tasty and coats back of a spoon. Add any juice from the beef and feel free to add some water or stock to thin the gravy if you like.
  • Pour through a coarse sieve and push it through with a spoon, pushing it through with a spoon, and serve in a warmed gravy jug. Serve with Yorkshire puddings.
  • Preheat oven to 450 degrees F.
  • Mix the batter ingredients together. Let rest for 10 minutes
  • Preheat a Yorkshire pudding tray or muffin tin with 1/2-inch (1 centimeter) of oil in each section. After the 10 minutes divide the batter into the tray. Cook for around 15 to 20 minutes until crisp and puffy, don't open the oven door before then or they won't rise.

  • 1. Preheat oven to 500 degrees F
  • 2. Start with roast at room temp.

6 tablespoons chopped garlic

900 g rump steak (whole beef joint - 2lbs)
2 tablespoons Dijon mustard
2 tablespoons black pepper
400 g potatoes (new scrubbed - 14 ounces)
400 g butternut pumpkin (14 ounces, peeled, deseeded and cut into 2.5cm/1in cubes I personally prefer Queensland Blue, a firm)
3 tablespoons sunflower oil (or your choice oil)
1 tablespoon cornflour (cornstarch)
600 ml beef stock (1 pint)
4 parsley sprigs (to garnish)

Steps:

  • Preheat oven to 190°C.
  • Mix together the mustard and black pepper in a small bowl and then spread it over the beef joint.
  • Place the joint in a roasting pan/tin (my preference would be on a rack). cover with foil or a lid if your pan has one and bake for 45 minutes.
  • During this 45 minutes cook the potatoes and pumpkin in a pan of boiling water for 5 minutes and then drain (could be done in the microwave).
  • Put oil in a shallow sided baking tray and either heat up on the stove top or in the oven.
  • Once thoroughly heated (this gives you the least amount of fat in the vegetables), add the vegetables and turn/toss them in the oil until coated.
  • Place in the oven and roast for 15 minutes.
  • Uncover the beef and roast with the vegetables for a further 15 minutes.
  • Lift out the beef and vegetables and put the tin/pan on the stove top and stir the cornflour into the pan juices, then blend in the stock.
  • Bring to the boil, stirring until smooth.
  • Carve the beef into slices and serve with the vegetables and gravy and garnish with parsley sprigs.

The secret to a tender roast is to cook it at a low temperature for a longer period of time.
Marinading the meat for several hours before cooking will also help to break down the tough meat fibers, leaving your roast more tender. However, this step is completely optional and can be skipped if you're short on time.
• A marinade typically contains a fat, such as olive oil, an acidic substance, such as balsamic vinegar or lemon juice and a blend of herbs and spices. You can make your own marinade or buy one at the supermarket.
• The roast should be placed in a plastic freezer bag and the marinade poured over, before the bag is sealed and left to sit in the fridge overnight, or for several hours before cooking.

Steps:

  • Season the meat well with salt and pepper, then heat some oil in a Dutch oven or large pan and brown the bottom round roast on all sides. (Before searing, you can also rub the meat with things like crushed garlic, fresh, chopped herbs and ground spices to add flavor - whatever you prefer.) Simply the best. We used to have to check other recipes for duplicates, but it seems we can't do that anymore, unless I missed something. If this is the same as someone else's, sorry. I can't take sole claim to this one, it was in a magazine. Though I did add the Kitchen Bouquet and red onion. I toast the rolls under the broiler with a little olive oil before topping with the beef mixture, it keeps them from getting super soggy, though my daughters like them untoasted, so personal preference prevails.

water, 3/4 soup can
1 tablespoon Worcestershire sauce

1/4 cup mount olive mild banana pepper ring
1/4 cup thinly sliced red onion
4 slices provolone cheese, cut in half

2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 tablespoon fresh coarse ground black pepper, plus
1/4 teaspoon fresh coarse ground black pepper (I only had fine pepper and used 3/4 tablespoon)
2 1/2 teaspoons coarse salt (I used 2 teaspoons Kosher salt)

  • Prepare the Roast: Adjust the rack to the bottom of the oven and heat to 425 degrees F. Blot any excess moisture from the roast, rub the Worcestershire sauce over the entire roast, and allow to marinate for 30 minutes, turning it twice.
  • Combine the powdered garlic, onion powder, paprika, and 1 tablespoon coarse-ground pepper in a small bowl; sprinkle the seasoning mixture evenly over the roast, pressing it, and let the roast stand for 20 to 30 minutes. Rub the meat with 2 teaspoons salt, place fat side up in a shallow roasting pan, and roast for 15 minutes.
  • Reduce oven temperature to 325 degrees F and continue to roast until the meat's internal temperature reaches 130 degrees F -- about 2 hours. Let the roast stand for 20 minutes before slicing.
  • Prepare the Gravy: Skim any fat from the liquid that remains in the roasting pan. Whisk the flour and 1/2 cup water together to a paste; set aside.
  • Scrape the drippings from the bottom of the roasting pan, add the beef broth, and stir over medium heat until the mixture begins to simmer. While continuously whisking, add the flour paste and bring to a boil.
  • Reduce heat to medium-low and let simmer for 4 to 5 minutes. If needed, add a little water to thin the gravy. Add remaining salt and pepper; serve warm. (I thought the gravy was a little to thin and I didn't add the extra salt or pepper.).

  • 2. Heat a heavy Dutch oven on top of the stove on medium high heat. Add oil,and sear meat in the center of the pan for 4 minutes. The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller. 2 small garlic cloves, grated
2 1/2 teaspoons kosher salt
2 teaspoons black pepper
2 teaspoons rosemary leaves
2 1/2 pounds boneless beef top loin roast (leave the fat on top)
Extra-virgin olive oil, as needed

Steps:

  • In a small bowl, stir together the garlic, salt, pepper and rosemary. Spread the paste all over the meat. Cover loosely with plastic wrap and refrigerate at least 3 hours or overnight.
  • When you are ready to prepare the meat, remove it from the fridge and let stand at room temperature for 30 to 60 minutes.
  • Heat oven to 325 degrees. Place a wire rack in a rimmed baking sheet.
  • Coat the roast lightly with olive oil. Transfer to the wire rack and roast for 75 to 95 minutes, until an instant thermometer inserted into the center of the roast registers 125 to 130 degrees for medium-rare.
  • Transfer the meat to a cutting board and let cool completely before carving (trim off the fat cap if you plan to serve it cold). The meat can be roasted three days ahead; cool completely before refrigerating.

My mom would make this recipe on special occasions, and believe me, after eating this, EVERY occasion was special!! Absolutely heavenly!!

3 -4 lbs rump roast
2 (1 1/4 ounce) packets onion soup mix
2 (10 1/2 ounce) cans cream of mushroom soup

Steps:

  • Preheat oven to 325 degrees.
  • In a mixing bowl, combine all soups together, until smooth.
  • Place a large sheet of aluminum foil on a cooking sheet, large enough to cover entire roast, and then some.
  • Place roast on foil lined cooking sheet.
  • Pour soup mixture over roast, completely covering all areas of the meat.
  • Fold foil over the top of the roast, making sure not to touch the meat.
  • Pinch the ends of the foil together at the top, and along the sides, making sure the roast is completely sealed.
  • Puncture foil a few times with a fork, allowing steam to escape.
  • Place roast in oven.
  • Bake for 1 hour per pound at 325 degrees (approximately 3 to 4 hours).
  • After cooking time, open foil carefully.
  • Remove roast from baking sheet and place on a plate.
  • Pour gravy from foil into a serving bowl.
  • Slice roast as desired, and serve with gravy.
  • Enjoy!

1 large beef roast; i used a good lean chuck roast with a little marbeling
2 Tbsp salt
2 Tbsp black pepper
garlic powder to taste
1 qt water

  • 1. Rub meat with seasonings. Place in heavy covered pot and cook on 325 degrees for about 2 1/2 to 3 hours. If water gets too low, add a lttle more. Will be moist and tender.

Garlic-Salt Rub

1 teaspoon dried thyme

Garlic Paste
12 large cloves garlic , peeled, cloves cut in half lengthwise
2 sprigs fresh thyme
2 bay leaves
1/2 teaspoon table salt
1/2 cup olive oil
Ground black pepper
Jus
1 1/2 cups low-sodium beef broth
1 1/2 cups low-sodium chicken broth

Steps:

  • 1.Toast unpeeled garlic cloves in small skillet over medium-high heat, tossing frequently, until spotty brown, about 8 minutes. Set garlic aside. When cool enough to handle, peel cloves and cut into 1/4-inch slivers. 2. Using paring knife, make 1-inch-deep slits all over roast. Insert toasted garlic into slits. 3. For the garlic-salt rub: Mix minced garlic, thyme, and salt together in small bowl. Rub all over roast. Place roast on large plate and refrigerate, uncovered, at least 4 hours or preferably overnight. 4. For the garlic paste: Heat halved garlic cloves, thyme, bay leaves, salt, and oil in small saucepan over medium-high heat until bubbles start to rise to surface. Reduce heat to low and cook until garlic is soft, about 30 minutes. Cool completely. Strain, reserving oil. Discard herbs and transfer garlic to small bowl. 2 tablespoons chili powder
3 -4 lbs boneless bottom round roast

1 (14 1/2 ounce) can beef broth
1/2 cup red wine
1/2-3/4 cup water
2 tablespoons cornstarch, mixed with 1/2 cup water

Steps:

  • Mix salt, pepper, garlic powder, and chili powder together.
  • Rub seasoning mixture on all sides of roast.
  • Heat an iron skillet and add olive oil.
  • Sear roast on all sides; remove from heat.
  • Add beef broth, red wine and water.
  • Cover with tight fitting lid or foil.
  • Bake in 300 degree Fahrenheit oven for 3 to 4 hours or until meat is easily shredded.
  • Add cornstarch/water mixture to make gravy.
