BEST EVER CHUNKY GUACAMOLE
This is the best version of this classic guacamole dip. The ingredients are kept to a minimum, so it's as fresh-tasting as possible.

Steps:
- Use a large knife to pulverise 1 large ripe tomato to a pulp on a board, then tip into a bowl.
- Halve and stone the 3 avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato.
- Tip the juice of 1 large lime, a handful of roughly chopped coriander, 1 finely chopped small red onion and 1 deseeded and finely chopped red or green chilli into the bowl, then season with salt and pepper.
- Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed.

THE BEST EVER GUACAMOLE
This is the tastiest Guacamole. Simple, yet delicious. I was told that this recipe lets the avacado taste shine, some recipes add several spices....cumin, chili powder, etc. I was hesitant, (to make such a bland sounding recipe) but gave it a try. It really is delicious. Use avacados that yield to gentle pressure....not too soft.

Steps:
- Mince garlic, dice onions (use more if necessary). Cut avacados and scoop out contents into glass bowl. Add onion and garlic. Using 2 knives cross-cut mixture until you have small chunks, then mash with a fork. Squeese in 1/2 the lime, white pepper and salt. Taste, and use remaining lime juice if needed. Chill covered.
- Garnish for serving with a few pieces of cilantro and small dices of tomato.
- Serve with tortilla chips or as a side with Mexican dishes.

The recipe is from The New Best Recipe cookbook. If you make guacomole ahead of time...*Guacamole can be covered with plastic wrap, pressed directly onto the surface of the mixture, and refrigerated up to 1 day. Remove the guacamole to room temperature, removing the plasctic wrap at the last moment, before serving.

- Fry bacon on stovetop until crisp.
- Drain bacon and reserve at least 1 teaspoon of rendered bacon fat.
- When bacon is cool to touch, crumble it.
- Halve one of the avacados, remove the pit, and scoop the flesh into a medium bowl.
- Mash the flesh lightly with the scallions, garlic, chile, cilantro, 1/4 teaspoon salt, and cumin with the tines of a fork until just combined.
- Add the bacon crumbles and bacon fat and combine with avacado mixture.
- Halve, pit, and CUBE the remaining 2 avocados. Add the cubes to the bowl with the mashed avocado mixture.
- Sprinkle the lime juice over the diced avocado and mix the entire contents of the bowl lightly with a fork until combined but still chunky. Adjust the seasongs with salt if necessary,(you can add a bit more bacon fat if you like), and serve.

- Turn your radio to a spanish station.
- Cut open the 4 avocado's around the equator. Scoop out the avocado insides(disregarding the pits) and place into medium-sized bowl. Now, mash up the avocados in the bowl with a potato masher.
- Next, cut up the bell pepper, onion. tomatoes, jalapenos, apple and cilantro. Place all of this into the bowl with the mashed avocados.
- Next, measure out the sour cream, garlic powder, lime juice, and celery seed. Add to the avocado bowl and mix thoroughly with a spoon.
- Salt/Pepper to taste.

THE BEST EVER GUACAMOLE
I found this recipe in an old James Beard cookbook over 25 years ago. People beg me to make it. It's simple and easy and...addictive! Make this appetizer right before serving. To preserve any leftover guac, store it in a container with a minimum of surface area exposed. Smooth out the top of the guac and put plastic wrap directly onto it to minimize oxidation (the browning of the guac). Seal the container tightly.

- Mince the garlic (add more or less to taste).
- Dice the onion (ditto).
- Cut avocado in half and twist to separate. Stab the pit with the long sharp edge of your knife: twist it, and the pit will come right out attached to the knife.
- With a spoon, scoop out contents into a glass bowl.
- Add the garlic and onion.
- Using two knives cross-cut the mixture until it is in smaller chunks, then mash with a fork.
- Squeeze in 1/2 the lime, white pepper and salt. Taste. Add more salt and/or lime as needed.
- I don't care for a lot of additions, but cilantro is one I like. Avocados are too subtle, so adding too many other ingredients obscures its wonderful, nutty flavor.
- Also consider black olives, tomatoes (de-seeded and diced) or jalapenos.
- Serve with chips and home-made salsa, or add to any sw or Mexican dish.
