I had to get this recipe from my mother in law as it was the only way my husband would eat carrots. It was then that I discovered why and now it's the only way either of us will eat them!

1/2 lb carrot (baby carrots are the best!)
2 tablespoons butter
3 tablespoons brown sugar

Steps:

  • Place carrots in a saucepan and pour in just enough water to cover.
  • Bring to a boil and simmer until carrots are tender (about 10 minutes).
  • Drain water from pan.
  • Add butter and brown sugar to the carrots and stir to dissolve.
  • Simmer for approximately another ten minutes over medium-high heat until the carrots look glazed (keep up the occasional stirring).
  • I like to sprinkle with a little salt when serving.

2 pounds carrots, peeled and cut into sticks
¼ cup butter
¼ cup packed brown sugar
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
  • Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

CROCK POT GLAZED CARROTS



Crock Pot Glazed Carrots image

This recipe is posted as part of a challenge during ZWT8 for France Region. I used Bayhill's recipe (Recipe #232735) as the base for changing her dish to a crockpot dish. I did tweak a few ingredients while making this in the crockpot as I felt the brown sugar would work better than granulated and added cinnamon as it reminds me of another recipe I have posted on Zaar.

1 lb carrot, cut on angle into 1-2-inch pieces
1/4 cup brown sugar
2 tablespoons butter (do not use margarine it will be too watery)
1/4 cup water
1 teaspoon ground cinnamon

Steps:

  • Place all ingredients into a lightly sprayed 2 quart slow cooker; stir together.
  • Place lid on slow cooker and cook on HIGH for 1 hour.
  • Stir together one more time and then turn heat down to low and cook for an additional 2 1/2 - 3 hours (till done to the crispness you prefer is reached).

Steps:

  • In 2-quart saucepan, place carrots in 1 inch of water. Heat to boiling; reduce heat to low. Cover; simmer 10 to 15 minutes or until tender. Drain well.
  • Add honey and butter to carrots in saucepan. Cook, stirring frequently, until butter is melted and carrots are glazed. Sprinkle with nutmeg.
