Steps:
- Preheat oven to 400°. Brush crust with egg white. Bake 6-8 minutes. Cool on a wire rack. Reduce heat to 350°., In a large bowl, beat the remaining ingredients until blended. Pour into crust. Bake until a knife inserted in the center comes out clean, 70-80 minutes. Cool on a wire rack. Refrigerate leftovers.

A combo of another custard "crack" pie recipe and a sweet potato classic. I almost don't want to put it up because the calories must be stupendous. lol

Steps:
- Preheat oven to 375 degrees.
- Drain and mash sweet potato.
- Mix all ingredients in a bowl.
- Divide mixture into 3 pie shells. Careful not to over fill.
- Bake at 375 degrees for approximately 60 minutes or until it no longer jiggles in the center.
