Since trying these, I have gone completely potato crazy with mad potato disease!!! Yum -- do it, mate! (Note: Only use real egg mayo - not the other kind.)

3 tablespoons mayonnaise
2 cloves garlic, crushed
1 teaspoon dried oregano
salt and pepper to taste
5 potatoes, quartered

Steps:

  • In a small bowl, mix mayonnaise, garlic, oregano, salt , and pepper. Set aside.
  • Bring a large pot of salted water to a boil. Add potatoes, and cook until almost done, about 10 minutes. Don't overcook otherwise the potatoes will break apart. Drain, and cool.
  • Preheat oven broiler. Line a baking tray with aluminum foil, and lightly grease the aluminum foil.
  • Arrange potatoes in the prepared baking tray. Spoon the mayonnaise mixture over the potatoes. Broil in the preheated oven until potatoes are tender and mayonnaise mixture is lightly browned, about 10 minutes.

5 pounds red potatoes, roughly chopped/diced
4 cloves garlic, minced
1 onion, chopped
1 green bell pepper, seeded and roughly chopped
1 red bell pepper, seeded and roughly chopped
1/4 cup olive oil
1/2 stick butter, melted
1 teaspoon seasoned salt
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, toss together the potatoes, garlic, onion, green bell pepper, red bell pepper, olive oil, butter, seasoned salt, cayenne pepper and some kosher salt and pepper.
  • Bake for 20 to 25 minutes, shaking the pan twice.
  • Raise the heat to 500 degrees and bake until crisp and brown, 10 to 15 minutes.
  • Sprinkle with a little more salt and pepper before serving.

1 kg floury potatoes (like Maris Piper), cut into chunks
50g Yeo Valley Organic salted butter, plus 1 tbsp
50g whole milk

Steps:

  • Tip the potatoes into a large pan, cover with cold water and sprinkle with a generous pinch of salt. Set the pan over a high heat and bring to the boil. Once boiling, reduce the heat to a simmer and cook for 15-20 mins until the potatoes are very tender - they should be able to be easily pierced with the tip of a knife. Drain well, then return to the pan and leave to steam-dry for 5 mins.
  • Pass the potatoes through a ricer into a large bowl for a lump-free mash (you may need to do this in batches). Alternatively, mash with a potato masher until smooth, then press through a sieve using the back of a spoon to get rid of any remaining lumps.
  • Tip the 50g Yeo Valley Organic salted butter, the milk and some seasoning into the bowl with the hot mash. Beat everything together with a wooden spoon or spatula until the butter has melted and the mixture is smooth and creamy. Add a splash more milk to loosen, if needed. Top with the remaining 1 tbsp butter and leave it to melt for a few seconds before serving.

1 head garlic
1 tablespoon olive oil
1/4 cup sour cream
4 tablespoons butter

Steps:

  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork, or force through a fine strainer.
  • If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
  • Peel and boil potatoes in salted water until tender.
  • Force the cooked potatoes through a ricer (recommended) or mash by your usual method.

6 large potatoes, peeled
1 cup vegetable oil for frying
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, minced

1 cup panko bread crumbs

  • Preheat the oven to 350 degrees F (175 degrees C). Slice potatoes into medium rounds.

6 -8 large potatoes (peeled and cubed, about 1-inch cubes)

2 tablespoons bacon grease (i save my bacon grease, but if you need to cook 3 pieces)
1 pinch onion powder

6 baking potatoes, peeled & sliced thin
2 (10 1/2 ounce) cans cream of mushroom soup (or cream of celery)
1/2 cup sour cream
1 1/2 cups of grated medium cheddar
6 ounces Velveeta cheese, cut into thin squares (approx 1 1/2 Inch Piece off a Large Block)
1 small yellow onion
1/4 cup chives (Freshly Chopped)
1 teaspoon Lipton Onion Soup Mix (Dry)

Steps:

  • In a large covered casserole dish spray entire dish with a cooking spray and then spread 1 entire can of Cream of Mushroom soup evenly on the bottom (best way I've found to prevent the potatoes from sticking & adds flavor).
  • Chop the onion into very small pieces & set aside.
  • In a separate bowl mix 1 can of Cream of Mushroom soup, the Sour Cream and 1 TSP of Dry Lipton Onion Soup Mix (added for the flavor of the seasonings which makes it extra tasty).
  • Peel & Slice the Potatoes Thin.
  • LAYER #1: Start layering in the casserole dish with the Cream of Mushroom soup on the bottom: Layer of POTATOES then spread approx 6 spoonfulls of the SOUP & SOUR CREAM mixture on top, then ONIONS then ½ cup of CHEDDAR CHEESE.
  • LAYER #2: POTATOES then approx 6 spoonfulls of the SOUP & SOUR CREAM mixture, then VELVETA CHEESE squares distributed evenly across.
  • LAYER #3: POTATOES then all the remaining SOUP & SOUR CREAM mixture then the remaining 1 cup of CHEDDAR CHEESE.
  • Sprinkle the chives evenly across the top.
  • BAKE COVERED in the oven at 300 degrees for about 1½ hour.

This pot roast lives up to its name - it is the best ever! There are a few steps to this recipe, but every step enhances the wonderful flavors. The roast and gravy are bursting with flavor from all the fresh veggies and herbs. The wine reduction adds something a little extra making it a bit different than your average pot roast....

2 c baby carrots
2 large onions, vidalia, peeled and quartered
5 lb chuck roast with good marbling ( fat= flavor)
3 Tbsp fresh thyme
3-4 sprigs fresh rosemary
3 bay leaves, dried
1/2 c olive oil
2-3 c beef stock/broth
1 c red wine (I used cab)
1 pkg pot roast Crock Pot packet - whatever brand
course grained sea salt
fresh crushed black pepper
1 c all-purpose flour
BOURSIN MASHED POTATOES~~~
1 pkg Boursin cheese, 8 oz
1 c milk
1/2 stick butter, salted
3 lb red bliss potatoes
green onion

Steps:

  • 1. Take out your meat; let your meat come up to room temp. LIBERALLY season with sea salt and fresh black pepper.
  • 2. Pour some olive oil into a pan. Heat on med-high until almost smoking. Put your onion quarters in and brown on all sides (you want a nice deep golden color). When browned, remove and put in bottom of Crock Pot.
  • 3. Next add a little more oil if needed and put your carrots into the pan making sure everything gets a nice color as well. Remove when evenly browned and add to Crock Pot.
  • 4. Add the last of your oil and let it heat up. While your oil heats, dredge your beef through your flour making sure it's evenly coated.
  • 5. Sear the meat on all sides, about a minute or two, getting a GBD (Golden Brown and Delicious) color.
  • 6. Pull out your meat and lay it on top of your onions and carrots.
  • 7. Add your rosemary, thyme, and bay leaves to the Crock Pot.
  • 8. Mix your pot roast packet into your 2 cups of stock and stir until well combined then add to your Crock Pot. (The liquid should come up about halfway on the meat.)
  • 9. If there is a lot of oil left in your pan, dump some of it out. Add your red wine to deglaze the pan, scraping the bottom of the pan with a wisk for all those little cooked on yummy bits (that's where a lot of your flavor will come from). Reduce it by about half, then add it to you Crock Pot.
  • 10. Set your Crock Pot on high and cook for 4 hours or on low for 8 hours. You can leave it on low and it will keep going or, after 4 hours on high I usually turn it down and let it go another hour.
  • 11. Boursin Mashed Potatoes! In the last 45 min of cooking get a big pot of SALTY water boiling. Wash all of your potatoes well. Stab all over with a fork. DO NOT PEEL.
  • 12. Add potatoes to boiling water and cook until tender (falling off the fork when stabbed).
  • 13. Strain the potatoes really well.
  • 14. Put the milk and butter in the microwave and heat until milk is hot and butter is melted.
  • 15. Add the potatoes back to the pot and get out your electric mixer. Mix until most of the really big pieces are broken down.
  • 16. Add the milk/butter mixture a little bit at a time until you reach your desired consistency.
  • 17. I like these specific potatoes a little lump because they really stand up to the pot roast.
  • 18. Add 4 OZ of Boursin at the last minute and stir in while potatoes are hot. Season to taste.
  • 19. Try to separate the pot roast into manage pieces, either take it out and cut it or just separate it in the Crock Pot.
  • 20. It should be tender enough that it just falls apart to the touch.
  • 21. I serve it up with a big scoop of potaotes in the center of the plates and put pot roast and veggies and gravy right on top. Garnish with some chopped green onion if you so desire. DEEEEEEEEEEELICIOUS =)

8 large Maris Piper potatoes , peeled and cut into chunks
vegetable oil , for the roasting tin

Steps:

  • The day before, tip the potatoes into a large pan of salted water and simmer for 10 mins or until just tender, saving a little of the cooking water. Drain the potatoes in a colander and leave to cool. Now here's the trick; choose the two chunks that are most cooked and ready for mashing and push these through a potato ricer, then add a little of the cooking water to make a thick potato batter. Roll the cooled potatoes through the batter then put in the fridge on a tray lined with non-stick paper and chill overnight.
  • The next day, heat the oven to 200C/180C fan/gas 6. Take a large roasting tin and add a good splash of vegetable oil. Place in the oven and heat for a few minutes, then carefully add the potatoes to the hot fat and turn to coat. Lightly season with salt and roast for 40 mins without disturbing, then turn the potatoes and turn the oven up to 220C/200C fan/gas 8 and continue to roast the potatoes for another 20-30 mins, turning again once, until beautifully crisp and golden all over.

I can hear you thinking "everyone knows how to do roast potatoes", but bear with me; following this recipe has given me the best never-fail perfect roast potatoes ever! Golden and crisp on the outside, soft and fluffy inside. There are other recipes posted on Recipezaar, but I've checked them and these directions are different! Obviously it helps if you use a variety of potato that is especially suitable for roasting (such as Maris Piper, King Edward or Desiree), but this recipe really will give you beautifully roasted potatoes that don't stick to the pan - the secret to success is in step 2.

4 lbs potatoes (chose the best variety you can get for roasting)
4 ounces vegetable shortening (such as Trex or Crisco vegetable shortening)
3 -4 bay leaves (optional)
sea salt (optional)

Steps:

  • Preheat the oven to 400 F, 200 C, gas mark 6; peel the potatoes and cut them into evenly sized halves or chunks.
  • Put the potatoes into a large saucepan, cover with cold salted water and bring to the boil; drain the water off as soon as it comes to the boil - this step isn't to cook the potatoes: it heats them through so they start roasting more quickly - return the potatoes to the hot pan and dry them over the heat (it is important that the potatoes are dry for roasting, otherwise they are likely to stick to the baking tray).
  • Slide a large baking tray into the oven to heat up for a few minutes, add the vegetable fat to the potatoes in the hot pan and let it melt; turn the potatoes in the melted fat until they are shiny and well coated, then tip them onto the hot baking tray.
  • Place the tray in the oven for about 45 minutes; add the bay leaves, if using, 15 minutes into the cooking time; turn and baste the potatoes a few times during cooking.

3-4 lb fresh half runner beans (ends snapped off, strings removed, broken in half or thirds)
1-2 lb jowl bacon (skin removed and sliced)
1 large yellow onion diced
1/4-1/2 c bacon grease or if you don't have any saved bacon grease you can use lard but bacon fat is most flavorful
salt and pepper to taste
1-2 lb red new potatoes
1 stick butter

Steps:

  • 1. Half runners have the very distinct feature of a string that runs down both sides of the bean...i find it easiest to snap off one end of the bean and pull the string down then snap the other end and remove the string on the other side....This will help you remove most of the strings but you will never get them all so don't get frustrated...small price to pay for the end result! So, step one is to snap off the ends and remove the string and break the beans into halves, or thirds...then put them in your kitchen sink and run water over them to wash them off
  • 2. Dice up your onion and remove the skin off of a 1-2 lb chunk of jowl bacon...salt pork can also be used but I prefer the jowl bacon...slice the jowl in about 1/4 in. slices...put your bacon grease or lard in a large stock pot on med. hi heat, add your jowl bacon and let it get kinda brown on the edges and fry up a little bit...add diced onion at this point as well...Saute onion for about 5 min.
  • 3. Put all of your beans into the stock pot, add water just up to the top of the beans (do not cover completely), add salt & pepper (I use about an 1/8 of a cup each of the salt and pepper for optimum flavor but you can adjust according to your dietary allowances and taste. Cover and bring to a hard boil then turn heat down and just cook with a steady light boil on about medium for approximately an hour.
  • 4. While the beans are cooking boil your potatoes. Tiny potatoes are rare at the grocery store though the earliest new potatoes at the farmers market can be just this small. I would pick out the smallest red-skinned potatoes available, of similar size so they cook evenly. Cook them whole,(you can peel them if you want, but it can be tedious with potatoes of a very small size) then cut into halves or quarters when tossing with the butter. In a large sauce pan boil till fork tender....drain and add the stick of butter to the potatoes...when melted and your beans are done dump the potatoes (with butter) over into the bean pot and stir...Adjust seasonings and Enjoy!!

So I had to try them right away and try as I might to follow the recipe exactly I just couldn't bring myself to do it, I never can. I'm posting the recipe with my tweeks and it turned out to be the most...

1/3 c flour
1/4 c butter, melted
1 tsp dry mustard
1/2 tsp white pepper
2 c half and half
6 c yukon gold potatoes, thinly sliced
2 onions, either sliced, diced or julienne...your prefrence
2 c sharp white shredded cheddar cheese
2 c sharp yellow cheddar cheese

Steps:

  • 1. WHITE SAUCE: Melt butter in saucepan and add flour and brown lighly. Add dry mustard, pepper and cream and heat just until it starts to thicken.
  • 2. Layer potatoes, onions and shredded cheese in a 13"x9" pan and pour white sauce over...I layered the sauce and cheese in 3 layers.
  • 3. Bake at 350 degrees until bubbley and poatoes are thoroughly cooked- usually about an hour or so. I cooked them covered for 45 minutes and then uncovered to make them brown and a little "Crusty" on top.

4 large potatoes, peeled and cubed
1 ½ tablespoons ghee (clarified butter)
1 teaspoon cumin seeds
2 green chile peppers, chopped
1 (1 inch) piece fresh ginger root, finely chopped
1 teaspoon chili powder
1 teaspoon coriander, ground
1 teaspoon amchoor (dried mango powder)
½ teaspoon salt
1 bunch fresh cilantro, chopped

Steps:

  • Place the potatoes in a saucepan with enough water to cover. Bring to a boil, and cook 10 minutes, until tender. Drain and allow to cool slightly.
  • Heat the ghee in a large skillet over medium heat. Lightly toast the cumin seeds in the ghee. Mix in the green chile peppers and ginger. Season with chili powder and coriander. Stir in the potatoes, and cook about 5 minutes. Season with amchoor and salt, and continue cooking about 15 minutes. Garnish with cilantro to serve.

Our very favorite mashed potato recipe. A special ingredient, cream cheese, makes them extra creamy and oh-so delicious.

3 1/2 pounds russet potatoes (peeled (about 10 medium))
8 ounces cream cheese (room temperature is best)
1/2 cup 1 stick unsalted butter (room temperature is best)
3/4 cup whole milk
Coarse salt and freshly ground pepper

Steps:

  • Fill a large pot halfway with water. Bring to a boil over high heat.
  • Carefully add peeled potatoes.
  • Boil over high heat until the potatoes are fork-tender, about 25 minutes.
  • Remove from heat and drain potatoes in a colander. Put drained potatoes back in the pot and put back on the stove over low heat.
  • Add the cream cheese, butter, 1/2 cup of the milk, and a hefty pinch salt and pepper.
  • Mash the potatoes with a potato masher until they reach desired consistency. Taste and add additional salt and pepper to taste.
  • Spoon into a large bowl and top with a generous pat of butter. Serve.

750 g medium floury potatoes (1 2/3 lb, or 6 oz/175 g each, using Maris Piper or King Edward or Yukon Gold or red-skinned potatoes)
1/4 cup extra virgin avocado oil
1 teaspoon fresh rosemary leaves or 1/2 teaspoon dried rosemary leaves
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 190C/375F/Gas mark 5, or for convection cooking: 170C/350F.
  • Peel potatoes and cut in half. Put in a pan of salted cold water. Bring to the boil and simmer for 7-8 minutes until almost cooked (they will still feel firm when pierced with a knife). Drain thoroughly using a colander, then shake the potatoes around a little in the colander until the outsides are roughened.
  • Place in roasting pan, sprinkle with avocado oil, rosemary. Season with salt and pepper. Cook in oven at 190C/375F until golden crisp, about 45-60 minutes.
