2 cups heavy whipping cream
2 cups 2% milk
3/4 cup sugar
1/8 teaspoon salt
1 vanilla bean
6 large egg yolks

Steps:

  • In a large heavy saucepan, combine cream, milk, sugar and salt. Split vanilla bean in half lengthwise. With a sharp knife, scrape seeds into pan; add bean. Heat cream mixture over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes; discard vanilla bean. Press waxed paper onto surface of mixture. Refrigerate several hours or overnight., Fill cylinder of ice cream maker two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze until firm, 4-6 hours. Repeat with remaining mixture.

1 (14 ounce) can fat-free sweetened condensed milk (No Fat)
1 (12 ounce) can fat-free evaporated milk (No Fat)
6 eggs
1 1/2 cups sugar
4 tablespoons flour
1 tablespoon salt
1 tablespoon vanilla flavoring
2 quarts skim milk

Steps:

  • Put eggs, sugar, flour, and part of milk in blender.
  • Blend well.
  • Add remaining ingredients.
  • Cook on low heat until the mixture thickens slightly.
  • Cool and refrigerate until you are ready to churn.

This is a beautiful recipe for ice cream...taken from The River Cottage Family Cookbook by Hugh Fearnley-Whittingstall. Simple to make & perfect with Recipe#232629, Recipe#232579, apple pie, brownies etc..... NB: "This is a classic method for making ice cream. Avoid serving homemade ice cream to babies, toddlers and pregnant women, as they are at a higher risk for salmonella poisoning from undercooked eggs. " Time to make does not include cooling & freezing time - prep. doesn't inc. time needed to 'fork through' semi frozen ice cream either ;)

284 ml single cream
1 vanilla pod
4 free-range egg yolks
125 g caster sugar
284 ml double cream

Steps:

  • Pour the single cream into a medium saucepan. Slit the vanilla pod lengthways with a sharp knife and place it in the pan. Set the heat to medium and heat the cream until it just starts to steam a little. Switch off the hob and let the saucepan sit there. The heat will draw the vanilla flavour into the cream.
  • Meanwhile, whisk the egg yolks with the sugar for a minute, until they turn thick and a little paler.
  • Pour the saucepan of hot cream into the sugary egg mixture and whisk again until smooth. Pour it all back into the saucepan.
  • With the heat set very low, stir the creamy mixture constantly with a wooden spoon so it doesn't stick to the base of the pan but heats slowly and evenly. To see if the custard has heated enough, check from time to time with this classic test: take the spoon out of the custard and look at the back of it. The film of custard on the spoon should look noticeably creamier. Draw your finger across the back of the spoon and, if the line stays clear and distinct, your custard has thickened enough.
  • Turn off the heat and carry the saucepan over to the work surface. Carry on stirring for a few more seconds so the cooking process is halted and the custard starts to cool down. Strain the custard through a sieve into a jug.
  • As soon as the custard has cooled to room temperature, put the jug in the fridge for half an hour, then stir in the double cream. Either pour the mixture into an ice cream machine and churn it until it freezes or pour it into a plastic food container.
  • Freeze it for about an hour or until the sides start to get solid. When this happens, mash up the mixture with a fork, mixing the frozen sides into the liquid centre. Put it back in the freezer straight away for another hour. Repeat this twice more at hourly intervals and then let the ice cream set.

LEMON CUSTARD ICE CREAM

I heavily adapted this recipe from one I found on Epicurious. It's actally original now, since it no longer bears much resemblance to the original. Prep time does not include pre-chilling or freezing.

2/3 cup fresh lemon juice
1 tablespoon finely minced lemon, zest of
2 1/4 cups sugar
2 teaspoons cornstarch
1 cup milk
2 whole eggs
2 egg yolks
1/2 cup evaporated milk
2 1/2 cups heavy cream

Steps:

  • Mix the zest, juice, cornstarch and sugar in a 4 qt saucepan.
  • Place over medium heat and slowly whisk in the milk.
  • Heat to 175 degrees, or until bubbles form around the edges, stirring quite often.
  • (scalding) Meanwhile beat eggs in a large bowl.
  • Temper the eggs with 1/2 cup of the hot milk and then whisk the eggs into the milk mixture.
  • Heat to 180 degrees, stirring constantly.
  • The custard should coat the back of a spoon.
  • Do NOT allow the mixture to boil.
  • Immediately stir in the cream and evaporated milk.
  • Strain through a siever into a glass or metal bowl and chill in an ice bath or allow to come to room temperature, then chill until cold.
  • Freeze in an ice cream maker.
  • Please note: If you like a lot of zest and are good at custards, it is not necessary to strain the mixture.
  • I would recommend zesting with a microplane grater in that case.
  • Sugar can be reduced for a more tart product, but add about 1TB of vodka at the end to keep it from freezing too hard.

This recipe makes a decadent, low carb, and dairy-free ice cream that is really out of this world! You will love this even if you don't love coconut. My husband (who has no dietary restrictions and is an ice cream addict) told me that this is the best that he's ever had. Each 1/2 cup serving contains 6.4 grams of net carbohydrates, and 24.2 grams of healthy fat from the coconut (gotta love those medium chain triglycerides)!

4 cups of canned regular unsweetened coconut milk (use 2 full cans plus the solid part of the 3rd can of coconut milk)
1/4 cup high quality unrefined, organic coconut oil
1/2 cup Stevia Truvia
1 pinch salt
5 large egg yolks
2 teaspoons good vanilla extract

Steps:

  • In a medium saucepan set over medium-low heat, whisk together the coconut milk, coconut oil, truvia, and salt. Bring the mixture just to a boil.
  • While the coconut mixture is heating, whisk the egg yolks until pale and aerated.
  • Once the coconut mixture has come to a slight boil, whisk about 1/3 of the mixture into the yolks.
  • Add another 1/3 of the mixture to the yolks, whisking quickly, then return the combined mixture to the saucepan.
  • Using a wooden spoon, stir the mixture constantly over low heat until it thickens slightly and coats the back of the spoon, about 2-3 minutes. Do not boil or the eggs can coagulate.
  • Pour the mixture through a fine mesh strainer and bring to room temperature. Stir in the vanilla extract.
  • Cover and refrigerate overnight in the lowest part of your refrigerator.
  • Follow your ice cream makers instructions to freeze your ice cream. With my Cuisinart, I pour the mixture into the frozen freezer bowl and let it mix until thickened, about 20 minutes. This is a good time to serve it. If you have leftovers or will not eat it right after fabricating, transfer the ice cream to an airtight container and place in the freezer. When you do serve it, let it sit out for about 20 minute to soften slightly.
