The recipe my mom uses and it is the best in my opinion. Adapted from Gooseberry Patch Flavors of Fall. Cook time is an estimate.

Number Of Ingredients 7

1 (10 ounce) package frozen whole kernel corn, thawed (or if possible, an equivalent amount of fresh off the cob corn)
1/2 cup whipping cream
1/2 cup milk
1/2 teaspoon salt (or to taste)
1 tablespoon sugar (optional)
1 tablespoon margarine, melted
1 tablespoon all-purpose flour

Steps:

  • Add the first 5 ingredients to a saucepan; stir to combine.
  • Bring to a boil; stir frequently.
  • Lower heat; stir occasionally.
  • In a small bowl, whisk together the margarine and flour until smooth; add to corn mixture.
  • Continue to cook and stir constantly until thickened.

This is not your Del Monte Creamed Corn out of a can... I found this and made it and then tweeked it to become my own... I have made this for my boyfriend and he levels it. I know I said it serves four but if you're man's like mine, you'll be lucky to get your own helping.

Number Of Ingredients 9

20 ounce(s) white canned corn (not frozen)
1 cup(s) heavy cream
2 tablespoon(s) sugar (i sub 4 packets of splenda)
1 cup(s) milk
2 tablespoon(s) butter
2 tablespoon(s) flour
- nutmeg to taste (optional but really takes it to a new level)
- salt and pepper to taste
1/4 cup(s) shredded parmaesan

Steps:

  • In a skillet over medium heat, combine the corn (drain the corn in a collander to remove the excess juice), cream, salt, sugar, pepper, nutmeg and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot. Great as leftovers but don't recommend freezing it.
