1 cup mayonnaise
3 tablespoons cider vinegar
3 tablespoons white sugar
2 crowns broccoli, cut into bite-size pieces
1 cup seedless red grapes, halved
¾ cup chopped walnuts
¼ red onion, finely chopped
¼ cup sunflower seed kernels
½ cup sweetened dried cranberries (such as Craisins®)
¼ cup bacon bits

Steps:

  • Whisk mayonnaise, cider vinegar, and sugar together in a small bowl until sugar dissolves and the dressing is smooth.
  • Toss broccoli, grapes, walnuts, red onion, sunflower seeds, cranberries, and bacon bits together in a large bowl. Drizzle dressing over the salad and gently fold so ingredients are evenly coated.
  • Cover bowl with plastic wrap and refrigerate 3 to 4 hours. Stir before serving.

Ok...after searching high and low, I've finally found a recipe that's similar to a casserole dish from one of my fav. eateries in St. Augustine, FL! It's a little diff., but just as tasty. I think their dish had a lot more butter in it. I pass this on with love and the hopes that you will take it to all of your potluck get togethers. I hope you like it, wait...no I hope you LOVE IT!:)

36 ritz whole wheat crackers (1 sleeve, crushed)
16 ounces broccoli (cooked)
1 egg
1 cup shredded cheese (any kind you like, I prefer sharp)
1 cup mayonnaise (hellman's canola is my fav.)
2 tablespoons onions, chopped
2 tablespoons sour cream
salt and pepper (To Taste)
1 tablespoon canola oil or 1 tablespoon olive oil

Steps:

  • Preheat oven to 350.
  • spray a casserole dish with non-stick spray.
  • combine cooked broccoli, egg, onion, cheese, mayo,sour cream, ***and salt and pepper to taste. (I add the egg last so that I can see if it needs seasoning).
  • Make sure the mixture is a little "wet", but not soupy.
  • Pour into casserole dish.
  • Top with ritz and pour a little oil (1 tbs or less) on top of crackers.
  • Bake at 350 for 30 minutes until top is golden brown and mixture is bubbling.

My sister got this recipe from one of her in-laws after falling in love with it a few years ago and it's been our family favorite ever since! It's so good with practically any meal, whether a mundane weeknight dinner or a more elaborate thanksgiving feast. Also, although it truly does taste the best with the cream of mushroom soup it can be made with any cream soup (I usually use broccoli cheese or 1 cream of chicken and 1 cream of celery because of picky hubby!). Oh, and I like to add a sprinkle of onion powder to the mix too! Edited to Add: I've been mixing 1/2 cup breadcrumbs and 1/2 cup parmesan cheese for the topping instead of just breadcrumbs. It's really good that way too!

2 (10 3/4 ounce) cans mushroom soup
1 dash salt and pepper (to taste)
2 cups cheddar cheese, shredded (I prefer aged cheese for the stronger flavor)
1 cup breadcrumbs
1/4 cup margarine (or butter)

Steps:

  • Steam broccoli until tender and place in casserole dish (about 9" x 13").
  • In mixing bowl stir together mushroom soup, salt and pepper and cheese, spread over broccoli.
  • In separate mixing bowl cut margarine into bread crumbs and then sprinkle over the mushroom soup and cheese mixture.

1 can broccoli cheese soup
1 can cream of chicken soup
2 1/2 teaspoons curry powder
1 medium onion, diced
4 cloves garlic, diced
1 cup mayonnaise
1 cup sour cream
2 cups sharp cheddar cheese, shredded
Tabasco sauce
2 lbs boneless skinless chicken, cut into strips
2 lbs frozen broccoli florets, partially thawed
2 boxes flavored salad croutons
2 cups sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 450 degrees F.
  • Mix SAUCE ingredients together in a large bowl.
  • In a lasagna pan, layer ingredients as follows: Chicken and broccoli, Sauce, Cheese and croutons.

However, even though there are several recipes that are similar, this one has not been posted. Every time I take this anywhere I hear, "This is the best Broccoli Salad I have ever tasted", and I get many requests for the recipe, so I figured that posting on RecipeZaar was a good way to share it with all of those people, and introduce them to RecipeZaar at the same time. I had five requests for it just last night. This recipe makes enough for a large group, so if you are fixing it for a small gathering or family dinner, cut it in half.

3 lbs fresh broccoli
1 lb bacon
2 cups sunflower seeds
1 cup raisins
2 cups fresh mushrooms, sliced
2 cups Best Foods Mayonnaise
1/2 cup sugar
4 tablespoons red wine vinegar

Steps:

  • Wash and cut the broccoli into bite sized pieces. Use only the flowerets, discarding the large stem pieces.
  • Cut the whole pound of bacon into small pieces (this is very easy to do if the bacon is frozen) and fry the bacon pieces until crisp. Drain bacon on paper towels.
  • Whisk the mayonnaise and sugar together. After well blended, whisk in vinegar one tablespoon at a time. Refrigerate this dressing until time to serve the salad.
  • When taking this to a pot luck, I put each ingredient into a separate plastic bag and toss everything together in a large salad bowl just before serving.

2/3 cup chicken broth
1/2 cup heavy cream or 1/2 cup evaporated milk
1/2 teaspoon salt
1/4 teaspoon Tabasco sauce

1 cup swiss cheese, grated
1/4 cup scallion
9 inches unbaked pie shells

Steps:

  • In a bowl, beat eggs with broth, cream, salt, and Tabasco. Set aside.
  • Pinch bottom and sides of pastry shell and bake at 450 degrees for 5 minutes.
  • Remove from oven.
  • Sprinkle pastry shell with 1/2 of Parmesan cheese.

2 medium carrots, peeled, chopped
1 medium onion, chopped
2 celery ribs, chopped
3 tablespoons oil
2 (14 1/2 ounce) cans chicken broth
1 cup water
1 bunch fresh broccoli, trimmed and chopped into florets
1/2 cup Minute Rice
2 cups milk
5 slices kraft cheese
pepper

Steps:

  • Cook and stir carrots, onions and celery in hot oil in a large saucepot on medium-high heat for 3 minutes. Add chicken broth and water, stir. Bring to a boil. Stir in broccoli and rice. Reduce heat to medium low and simmer 10 to 15 minutes stirring frequently. Use a hand-blender or pour batches into a blender to puree. (Be careful - it's hot!) Add the milk and cheese and stir until melted/combined.
  • Please use fresh vegetables -- makes it a much tastier soup. Also keep in mind - the more broccoli you use - the greener your soup will look. I tend to use 2 cups broccoli to keep the color less green -- The original recipe added 2 cups water and used 1/2 cup parmesan cheese instead of processed cheese slices - but I like the taste of my recipe better. Serve in a breadbowl if you have it.

2 10 oz. packages frozen broccoli
1 (15.25 ounce) can whole kernel corn, drained
1 small onion diced
1 16 oz. container sour cream
1 (10.75 ounce) can condensed cream of broccoli soup undiluted
2 c shredded cheddar cheese
1 (6 ounce) package herb-seasoned dry bread stuffing mix
1/4 c butter, melted

Steps:

  • 1. Preheat oven to 350 degrees F. Pre-cook the broccoli about half way through. DO NOT over cook the broccoli because it will be mushy later.
  • 2. In a large bowl, mix together broccoli, corn, and onions. Stir in sour cream, soup, and shredded cheese. In a separate bowl, toss together stuffing mix and melted butter. Spread broccoli mixture into a 2-3 quart casserole dish and cover with stuffing mix.
  • 3. Bake in preheated oven for 30 minutes, or until heated through and browned on top. Sprinkle remaining 1 3/4 cups cheese on top and bake an additional 5 minutes, until cheese is melted and bubbly.

1 onion
1 carrot
Olive oil
2 cups chopped potatoes
Lots of broccoli florets
Cauliflower florets (optional)
Vegetable stock
Salt, pepper, cumin
Grated parmesan or cheddar (optional)

Steps:

  • Sauté 1 chopped onion and 1 large carrot in butter and a bit of olive oil. Add peeled potatoes that are quartered or eighthed depending on size of potato, resulting in 2 cups of chopped potatoes. Add broccoli florets and cauliflower if you like, loads of them. Add good quality vegetable stock (I like the Knorr pots). Top up with water so all ingredients are submerged. Add salt, pepper and a touch of cumin. Simmer for 20 minutes. Puree in food processor. Serve with grated parmesan or cheddar on top.

Put the broccoli on a cookie sheet. Toss with:
Take 4 to 5 pounds of broccoli (I just got two large bunches),
cut into florets (but relatively big ones.)
dry them THOROUGHLY. That is, if you wash them.
5 T olive oil,
salt and pepper
1 1/2 tsps kosher salt,
1/2 tsp fresh ground pepper
add 4 garlic cloves that are peeled and sliced and toss them in too.

Steps:

  • Preheat oven to 425* Roast in the oven 20 to 25 minutes, until "crisp-tender and the tips of some of the florets are browned." When it's done, take it out of the oven-and here's where it gets really good-zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (I left those out 1/3 cup of freshly grated Parmesan cheese.

1 head broccoli
1/4 cup of thinly sliced garlic (or to taste)
1 teaspoon of calabrian chile (or to taste)
the zest of a lemon (some finely zested and some thinly sliced for garnish)
1 tablespoon olive oil
1/8 teaspoon salt (or to taste)

Steps:

  • Break down broccoli into florets sauté in a splash of olive oil preferably in a cast iron skillet. When broccoli just begins to brown add garlic and more oil if needed. Sauté a minute or so then add the Calabrian chilies. You can use other spicy peppers but the ones from Calabria have a nice nuanced spiciness. Hit it all with somew salt. Let the flavors meld and add the lemon zest. Top with julienne lemon peel if desired. Enjoy.
  • Note. I use the crushed Calabrian chilies It comes ina jar with oil.
