When our class visited an apple farm this fall, we realized that we all shared a common love apples dipped in caramel. We created this really easy dessert that the whole family can enjoy.

5 large Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon
1 tablespoon lemon juice
¼ cup water
1 ½ cups all-purpose flour
1 cup brown sugar
1 cup quick cooking oats
1 cup butter, softened
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 F (175 degree C).
  • In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
  • In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
  • Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

4 apples - peeled, cored and sliced
½ cup brown sugar
1 cup all-purpose flour
¾ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
1 egg, beaten
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a 9 inch square baking pan, mix sliced apples with brown sugar. In a large bowl, mix together flour, white sugar, cinnamon and salt. In a small bowl, beat together egg and melted butter. Stir into flour mixture. Spread evenly over apples.
  • Bake in preheated oven for 30 to 40 minutes, or until topping is golden and crisp.

This no oats apple crisp tastes of fall. It's filled with apple flavor. Cinnamon is prevalent throughout the soft, warm apple filling. On top is the perfect sweet and buttery crumble. Quick to prepare, this apple crisp is a heavenly fall dessert.

FILLING:
5 - 6 apples (Pinata if you can find them or one you enjoy) peeled, cored, and sliced into thin slices
1/2 c sugar
1 Tbsp ground cinnamon
1/2 c apple cider or apple juice
1 tsp vanilla extract
TOPPING:
1 c all-purpose flour
1 c sugar
1 stick cold butter (leave in wrapper)

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. FILLING: In a small mixing bowl, mix cinnamon and sugar together. In an 8x8 or 9x9 inch baking pan, add a single layer of the sugar and cinnamon mixture, do not grease the pan.
  • 3. Begin layering sliced apples, sprinkling a cinnamon/sugar layer between each layer of apple slices.
  • 4. Once apple slices are at the top of the pan, cover with a final layer of cinnamon/sugar mixture.
  • 5. Mix vanilla extract and apple cider/juice in a measuring cup. Pour over apple slices.
  • 6. TOPPING: Place flour and sugar into a small mixing bowl, blend well. Grate the cold stick of butter. Start with the wrapper on the bottom portion. Begin grating butter with a flat grater over the bowl. Keep sliding wrapper down to grate the butter into flour/sugar mixture until the grated stick of butter is all in the mixture. Use a pastry cutter and blend ingredients together until crumbly.
  • 7. Cover the apples with the topping, sprinkling all over. Bake in preheated 400 degree F. oven 25 minutes or until golden brown and bubbly. Check and don't burn.
  • 8. Cool and serve. Add a scoop of vanilla ice cream if you wish.

I have a friend who smacks his lips when I serve this and my daughter is notorious for eating this for breakfast!!! I have to hide it if I want any leftovers for supper the next day!!! My crisps are chock full of fruit...I never measure the fruit. I "eye ball" the blueberries...then add enough apple to give colour. I have used this topping for peach/blueberry, raspberry/rhubarb/apple, rhubarb/blueberry or basically use up all the frozen fruit I have in my freezer. I serve this with frozen vanilla ice cream or yogurt. This recipe could be cut in half quite successfully

3 -4 apples, peeled and cut into chunks
4 -6 cups blueberries
1/2 cup sugar (depending on tartness of fruit) (optional)
1 cup flour
3/4 cup brown sugar
1 cup rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter

Steps:

  • Choose baking dish. Add enough blueberries to come 1/3 to 1/2 up the dish, keep in mind that the blueberries will "shrink" when cooked.
  • If frozen, thaw them slightly. Flour could be added to thicken the frozen blueberries if desired. Add sugar if the fruit is tart, but the topping is sweet enough that it is not needed. Cut enough apples (depending on size) into the blueberries to give colour -- making sure that you have enough room for the topping
  • Topping: Combine flour, brown sugar, rolled oats, baking powder, cinnamon and salt. Mix well. Cut butter into flour/oat mixture until coarse crumbs.
  • Spread over apple/blueberry mixture and bake in 350 oven for 30 minutes or until the fruit is cooked.
  • To serve: I usually make the crisp up earlier in the day. Before serving, I put the crisp in the oven at 250 for 15 - 20 minutes or until warmed, then serve it with ice cream.
