MERRY BERRY COOKIES

This recipe is from the story Candy for Christmas by Joanne Fluke. I haven't made them yet but am posting the recipe here for safekeeping. Time doesn't include chilling.

Number Of Ingredients 9

1 1/2 cups melted butter (3 sticks, 3/4 lb)
2 cups granulated sugar
1/2 cup strawberry jam (any jam) or 1/2 cup blackberry jam (any jam)
2 beaten eggs
1/2 teaspoon baking soda
1 teaspoon salt
4 cups flour (pack it down in the cup don't sift it)
1/3 cup granulated sugar, for later
1/3 cup jam, for later

Steps:

  • Melt the butter in a large microwave safe bowl.
  • Add the sugar and mix thoroughly. Let the bowl sit on the counter while you do the next step.
  • Melt the jam in the microwave or in a saucepan over low heat. Once it's the consistency of syrup, mix it in with the butter and sugar.
  • Add the eggs, baking soda, and salt, stirring after each addition.
  • Add the flour and mix thoroughly. Cover the bowl and refrigerate for at least 2 hours. (Overnight is even better.).
  • When your ready to bake, preheat the oven to 350 degrees, rack in the middle position.
  • Roll the chilled dough into small walnut-sized balls with your hands.
  • Put 1/3 cup sugar in a small bowl and roll the balls in it.
  • Place them on a greased standard-sized cookie sheet, 12 cookies per sheet.
  • Flatten the dough balls with a greased spatula.
  • Make a small indentation with your thumb or index finger in the center of each cookie. Fill the indentation with about 1/8 teaspoon of jam.
  • Bake the cookies for 10 to 12 minutes at 350 degrees.
  • Let them cool for minutes on the cookie sheet, and then transfer them to a wire rack to finish cooling.

Try these deliciously refreshing cookies with fresh berries stirred into Betty Crocker® cookie mix!

1 pouch Betty Crocker™ sugar cookie mix
1/3 cup butter, softened
1 egg
3 tablespoons Gold Medal™ all-purpose flour
3/4 cup sliced fresh strawberries and blackberries
1 container Betty Crocker™ Rich & Creamy cream cheese frosting
Powdered sugar, as desired

Steps:

  • Heat oven to 375°F. In large bowl, stir cookie mix, softened butter, egg and flour until soft dough forms.
  • Gently fold in strawberries and blackberries. Drop by about 40 two-level-teaspoonful portions 2 inches apart on ungreased cookie sheet.
  • Bake 8 to 10 minutes or until cookies are set. Cool 1 to 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • Spread bottom of 1 cookie with frosting. Top with another cookie, bottom side down. Do not press together. Sprinkle with powdered sugar. Repeat to use up cookies.

I added strawberry jam to these little chocolate chip cookies and they turned out yummy!

1 stick(s) butter, softened
1 cup(s) white sugar
2 - eggs
1/2 cup(s) strawberry jam (i used welch's)
2 1/2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1/2 cup(s) mini chocolate chips

Steps:

  • Preheat oven to 350. In a mixer bowl, blend softened butter and sugar until fluffy. Add beaten eggs and jam until mix is creamy.
  • In a separate bowl, mix flour and baking soda. Add dry ingredients to creamed mixture slowly. Fold in the mini chips.
  • Drop dough on parchment lined cookie sheet about 1 inch apart. Bake at 350 for 10 minutes or until they are lightly golden. Let set 1 to 2 minutes before removing from sheet. Makes 3 to 4 dozen, depending on amount of dough used for each cookie.
