BERRY CREAM DESSERT

Steps:
- In a large bowl, dissolve strawberry and raspberry gelatin in boiling water. Stir in cold water and strawberry and raspberry yogurt until blended. Chill until syrupy, about 1 hour., Fold in strawberries and whipped topping. Spoon into individual dishes. Chill until firm, about 4 hours. Serve with fresh berries if desired.

RODGROD MED FLODE (RED BERRY DESSERT WITH CREAM)
This recipe came from my Grandmother Johansen, she was a wonderful old-school cook. I learned basically to cook from her on my summer vacations there as a little girl. I still remember how she prepared this summer dish with such care and pride. 'Velbekomme' as we say in Denmark.

Steps:
- Rinse berries.
- Place them in a saucepan with the water and simmer for five minutes.
- Pour berries into a sieve to drip into a bowl, pressing for juice.
- Measure juice and pour back into saucepan, add vanilla and sugar to taste.
- Bring juice to a slow boil.
- Let boil one minute.
- Pour into a serving dish, sprinkle with a bit of sugar and let cool.
- Serve with chopped almonds, whipping cream and whole berries as decoration.

I came across this recipe recently in an old magazine. It's perfect for summer! Low fat and sugar free products can be used if desired. Chill times are not included in prep or cook times.

- In a blender, combine 1st 6 ingredients and blend until berries are fully pureed and mixture is creamy.
- Gently fold in 2 tbsp of chopped pecans and divide mixture among 8 small serving glasses approximately 4 ounces in size.
- Top each serving with a few pieces of the remaining 1 tbsp of chopped pecans and chill for at least 1 hour or until ready to serve.
- NOTES: The yield is 8 3-oz servings as a palate cleanser after a savory course of an elegant meal. As a light dessert, I suggest 6 4-0z servings w/a sml berry, scattered choc shavings, a mint or a cookie to dress it up.

BERRY BURST ICE CREAM OREO COOKIE DESSERT
These is a very yummy dessert. I think it would be great with any flavor of Oreo cookies.

- Crumble up about 3/4 of the cookies. Save the rest to crumble on the top. ( If you want to make a bigger dessert, you may want 2 pkgs. of Oreos. The Berry Burst is a smaller pkg.)
- Melt the butter & mix with the cookie crumbles. (I melt the butter in the dish that I am going to make the dessert in.)( For a single recipe I use a oblong glass dish. For a bigger one I use a 9 X 13 pan or dish. ( I do not double the butter for the bigger one).
- Press the cookie crumbles into bottom of dish, to make the crust.
- Mix softened cream cheese, powdered sugar, & 1/3 of the cool whip. Spread over the cookie crust. If you are making a larger dessert, you will need a 24 oz. cool whip).
- Mix pudding mix with 1 & 3/4 cup milk, till thickened. Spread this over the cream cheese layer. ( If you want to make a bigger dessert then use 2 pkgs. of the Jello), with 2 1/2 cups of milk.
- Spread the rest of the cool whip on top of the pudding . Then crumble the rest of the cookies over the top. Refrigerate to set up good before serving. Enjoy!!!!!
- TIP::: For a single recipe I use a oblong glass dish. If I make a bigger dessert I use a 9 X 13 pan or dish.If I make the bigger one, I double the cookies & the pudding mix & cool whip. In our stores they don't carry the large pkg. of Jello instant strawberry pudding. I use 2 of the 3.4 ounce size.

Steps:
- Bring the water to a boil in a large saucepan. Add the sugar and stir to dissolve. Add the berries and simmer, stirring occasionally, for 5-10 minutes, or until they begin to break down. Add extra sugar to taste as needed.
- Stir the cornstarch into the 3 tablespoons of cold water, and then whisk the cornstarch slurry into the simmering berries to thicken it into a loose, pudding-like consistency. (Keep in mind, the berries will thicken even more as they cool. You might not need all of the slurry. Then again you might need more. It depends on the berries.).
- Remove from heat and pour the berries into a large bowl or individual serving dishes. Cover with plastic wrap and chill well.
- Serve topped with a little cream or with a dollop of whipped cream.
