TRIPLE-BERRY SUNDAES

6 cups fresh strawberries, hulled
1 1/2 cups fresh raspberries or frozen, thawed, drained
3/4 cup powdered sugar
6 tablespoons Grand Marnier or other orange liqueur
2 quarts vanilla ice cream
2 1-pint baskets fresh blueberries
Fresh mint sprigs (optional)

Steps:

  • Combine 3 cups strawberries and raspberries in processor. Purée until smooth. Add powdered sugar and liqueur; blend well. Quarter remaining strawberries. (Sauce and strawberries can be prepared 1 day ahead. Cover separately and chill.)
  • Scoop ice cream into 12 bowls, dividing equally. Spoon sauce over. Garnish with blueberries, remaining strawberries and mint, it desired.

1/2 cup crème de cassis (black-currant liqueur)
1/4 cup plus 1 tablespoon sugar, divided
2 teaspoon fresh lemon juice, or to taste
4 cups mixed berries (1 1/4 pounds), halved or quartered if large
3/4 cup chilled heavy cream
1 pint vanilla ice cream
1 pint raspberry sorbet

Steps:

  • Bring crème de cassis and 1/4 cup sugar to a simmer, stirring until sugar has dissolved (if alcohol flames, momentarily cover with lid to extinguish). Stir in lemon juice.
  • Pour syrup over berries, stirring gently to coat. Let stand 10 minutes.
  • Beat cream with remaining tablespoon sugar using an electric mixer until it just holds stiff peaks.
  • Divide ice cream and sorbet among glasses. Top with berries and syrup, then with whipped cream.

1 CUP FRESH BLUEBERRIES

1 TABLESPOON BALSAMIC VINEGAR
3 TABLESPOONS SUGAR
3 6 OZ. CONTAINERS OF VANILLA
YOGURT, LOW FAT
2 1 OZ. SQUARES OF SEMI-SWEET
CHOCOLATE, MELTED

Steps:

  • TOAST WAFFLES AS DIRECTED ON PACKAGE AND SET ASIDE. COMBINE THE BERRIES IN A LARGE BOWL. SPRINKLE WITH THE VINEGAR AND SUGAR AND LET STAND ABOUT 20 MINUTES. STIR TO COAT. TO SERVE, PLACE A WAFFLE ON A DESSERT PLATE AND TOP WITH GENEROUS AMOUNT OF BERRIES. DOLLOP WITH THE YOGURT AND DRIZZLE A SMALL AMOUNT OF THE CHOCOLATE. SERVES 8

1/4 cup agave
1 tablespoon lemon juice
1/2 teaspoon grated lemon peel
2 cups raspberries, blackberries or strawberries
4 chocolate brownies or prepared fudge brownie mix
1 pint low-fat vanilla yogurt

Steps:

  • In small bowl combine agave, lemon juice and peel mix well. Gently mix in berries. To assemble, place brownies on serving plates. Top each with 1/2 cup frozen yogurt and drizzle with 1/2 cup sauce.
