My Grandma's Super Easy Recipe For Bierocks image

Bierocks are soft rolls stuffed with ground beef, cabbage and onions. This recipe kicks things up a notch with sauerkraut and gruyère.

Yield 16 Bierocks

Number Of Ingredients 10

1 lb. Ground Beef
1 Yellow Onion, thinly sliced
2 Garlic Cloves, minced
1 tsp. Smoked Paprika
½ tsp. Cayenne Pepper
1 tsp. Cumin
6 oz. Gruyère, shredded
16 oz. Bavarian Sauerkraut
2 cans Grands Southern Homestyle Buttermilk Biscuits
All Purpose Flour, as needed

Steps:

  • Sauté ground beef with sliced onion, minced garlic, smoked paprika, cayenne and cumin until browned and crumbly. About 10 minutes. Drain the excess fat and allow the meat to cool in the strainer for a few minutes. Meanwhile, preheat the oven to 350F, shred the Gruyère and drain the sauerkraut.
  • Gently mix together the ground beef mixture, shredded cheese and sauerkraut in a large bowl.
  • Roll out each biscuit flat on a floured surface. Place 3 - 4 tablespoons of the filling in the center of each biscuit and fold up the sides like a steam bun to seal.
  • Place uncooked bierocks, seam side down, split among two parchment-lined baking sheets. Bake for 17 - 19 minutes, or until golden. Allow the bierocks to cool on a wired baking rack for 2 - 3 minutes before consuming. Enjoy!

43 years ago I got a similar recipe from my then mother in law. This is a German recipe that I have changed and made my own.

2 1/2 c warm water
2 pkg fleischmann's active dry yeast
4 Tbsp sugar
4 tsp salt
4 Tbsp melted crisco shortening or crisco oil
6 c flour
BERROX DOUGH
2 small heads of cabbage
8 lb hamburger
2 clove garlic; large cloves
salt and pepper to taste
3 lg onions

Steps:

  • 1. Put warm water in large bread bowl and add dry yeast. Let set till yeast is dissolved. Add sugar,salt and oil and stir until dissolved. Add 3 to 4 cups of flour and beat until mixed. Add remaining flour and work it in until the dough is nice and easy to work with. Knead dough.Set in bread bowl that has alittle crisco rubbed on it. Rub alittle crisco on top of dough and let rise to double in size. Work down and let rise again. Then use.
  • 2. shred cabbage,onions,garlic and put in pan and cook over low heat. brown hamb and add to cabbage mixture adding salt and pepper to taste while dough is rising.
  • 3. When dough is ready to work and the cabbage and hamburger is ready. Take half the dough and roll thin,cut into squares,put cabbage mixture in the center,bring corners of dough together and pinch up sides.Bake at 350' for 30 minutes or until nice and brown. These can be frozen. You can make them large or small squares.
  • 4. My grandsons don't like the cabbage so my daughter puts hamburger and cheese in the center.

HOMEMADE BIEROCKS RECIPE

Bierocks are a famous German dish consisting of ground hamburger, cabbage, and onion all encased in a sweet bread roll. The combination is amazing!

1 package active dry yeast
2 1/2 cups warm water
1 cup milk
1/2 cup salted butter (melted)
1/2 cup granulated sugar
2 eggs
10 cups all-purpose flour
2 Tbsp butter
1 onion
4 cups shredded cabbage
2 pounds ground beef
2 tsp salt
2 tsp pepper
2 cups shredded cheddar cheese (optional)

Steps:

  • The first thing you will do is add yeast to your large mixing bowl. Then you will add in your warm water. Whisk these together for about 10 seconds and then let it sit for 10 minutes until it looks frothy.
  • Then you will want to microwave the milk for 20-30 seconds or until it feels warm. Also, you will want to melt your butter and then let it set.
  • When the water and yeast are frothy, you will add in the warm milk and melted butter. Mix this for about a minute.
  • Then, add in your sugar and eggs. After this has been mixed well, you will begin adding flour.
  • Start by adding in 1 cup at a time. When the bierock dough starts getting thicker, switch to your dough hook. Keep adding in all the flour until you have used up the 10 cups.
  • Then, you will want to scoop this dough out onto a floured surface and knead for 2 minutes. Form it into a ball and place it in a well-oiled bowl.
  • Cover the dough, and let it rise in a warm location of your house for about 1 hour.You can then work on the bierocks filling.
  • Start by chopping up your onion and cabbage. You will want to place butter into a large frying pan and then add in the shredded onion and cabbage. Let this cook for 6-7 minutes stirring often.
  • Next, you will want to cook your hamburger and then drain the grease.
  • In a large mixing bowl, you will combine the hamburger, cabbage, onion, and salt and pepper. This will make a traditional bierock filling.
  • What I like to do is also add in some shredded cheddar cheese! This step is certainly optional, but if you like cheese, I definitely recommend it. You will mix all of this together.
  • When the dough has risen for the full 1 hour, you will then separate out the dough into 18 balls of dough. Roll them each out on a floured surface.
  • Then, pre-heat your oven to 375 degrees Fahrenheit.Next, scoop approximately 1/2 cup of the bierocks filling into the dough. Then fold the dough around the filling, pinching it closed.
  • Then place it on a cookie sheet with parchment paper, seam side down. You will then bake these bierocks for 30 minutes. Make sure to rotate the pan half-way through cooking time.
  • Another optional, but equally tasty thing you can do is brush the tops with melted butter!

NANA'S BIEROX "GERMAN HAMBURGERS" (BIEROCKS)

My mother made these for us growing up, and now my kids like me to make these easy to eat and handle "hamburgers." These are easy to freeze and reheat. The best dough mix to use is the Pillsbury Hot Roll mix that comes in a blue box.

1 lb ground beef
1/4 teaspoon pepper
1/2 teaspoon salt
3 cups cabbage, shredded
2 cups onions, chopped
16 ounces hot roll mix

Steps:

  • Brown ground beef and onion in skillet.
  • DO NOT DRAIN!
  • Add shredded cabbage, salt and pepper to meat and onions and cover. Stirring occasionally.
  • While cabbage, meat mixture is cooking, follow the recipe steps 1 - 4 on the Hot Roll mix. Don't form into shapes.
  • When dough is ready, pull off small balls of dough and roll out.
  • Place meat mixture into middle of the dough.
  • Fold the dough around the meat mixture.
  • Place on baking sheet and cook at 375 for 15 - 20 minutes, until golden brown.

This recipe comes from a childhood memory. My mom was no Julia Childs, let me tell you, more like Bridget Jones. But when she made bierocks, they were good. I tried a lot of bierock recipes, but most of them called for frozen dough (yuck!). I use a bread machine, but that is not necessary. Mom's were good, mine are great!

1 small onion, chopped
2 ½ pounds ground chuck
2 teaspoons monosodium glutamate (such as Ac'cent®)
2 teaspoons red pepper flakes
salt and ground black pepper to taste
1 head cabbage, shredded
3 ¼ cups bread flour
1 ¼ cups milk, slightly warmed
½ cup all-purpose flour
1 egg, beaten
¼ cup white sugar
2 tablespoons butter, softened
1 ¼ teaspoons bread machine yeast
¾ teaspoon salt

Steps:

  • Cook and stir onion in a nonstick skillet over medium heat until tender, about 5 minutes. Add ground chuck; cook and stir until browned, about 8 minutes. Drain well. Season with monosodium glutamate, red pepper flakes, salt, and pepper. Reduce heat to low; simmer, stirring often, until flavors combine, about 5 minutes.
  • Bring a lightly salted pot of water to a boil. Add cabbage; reduce heat to low. Simmer, covered, until cabbage is just tender, about 15 minutes. Drain well and let cool, 5 to 10 minutes. Fold into the ground chuck mixture.
  • Place bread flour, milk, all-purpose flour, egg, sugar, butter, bread machine yeast, and salt in the bread machine in the order recommended by the manufacturer. Run "Dough" cycle.
  • Turn dough out onto a floured surface. Cut in half; roll each piece of dough to 1/3-inch thickness. Cut each piece into 5 smaller pieces.
  • Place a large spoonful of ground chuck-cabbage mixture in the center of each piece of dough. Fold dough over and seal around filling.
  • Arrange bierocks on greased baking sheets. Cover with a clean dish towel and place in a warm, dry place to rise for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake bierocks in the preheated oven until golden brown, 12 to 15 minutes.

1 medium head cabbage
1/2 c onion chopped
1 pkg 4 ct pkg refrigerator biscuits
1 tsp garlic salt
1/2 tsp onion powder

  • 1. Begin browning hamburger and chopped onion,to that add garlic salt and onion powder.
  • 2. Chop cabbage and rinse,put on towel to drain a little. When hamburger is almost done add cabbage,and cook until cabbage is soft and broke down, stir often.
  • 3. Take a pack of your biscuits and combine 3 or 4 of the biscuits,depending on how big you want you'r beerox. Spray a cookie sheet with cooking spray,take you'r combined biscuits and strech them good sized but not to thin.Place meat and cabbage mixture in middle of biscuit.Pull biscuit up and around mixture and press togeather until all seams are sealed. Place on cookie sheet seam side down.Repeat with biscuits and meat mixture untill mixture is gone.Bake on temp the biscuits say on package untill golden brown.

BIEROCKS (GERMAN HAMBURGER- AND CABBAGE-FILLED ROLLS)



Bierocks (German Hamburger- and Cabbage-filled rolls) image

This is a staple food in the small Kansas (primarily German-American) town where I was born, and is now a favorite at my house here in Belgium. The recipe comes from my Grandma Rosie. My mother uses a BOX OF HOT ROLL MIX for the roll portion, but as that is not available to me, I have included the hot roll recipe from the Better Homes and Gardens New Cook book. Your yield will depend on the size of rolls you make, but I would estimate about 15 to 20. Preparation time includes time for allowing dough to rise (estimated). Don't let the length of the recipe (or my assembly instructions) spook you, it is really very easy and the assembly is fun for kids, too ! In my opinion they are just as tasty cold as warm from the oven.

4 cups cabbage, cut fine
1/2 cup onion, cut fine
2 tablespoons olive oil
1 lb hamburger
salt and pepper

4 1/3 cups all-purpose flour
1 package active dry yeast
1 cup milk
1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs

Steps:

  • FILLING: In a large frying pan, cook the cabbage and onion together until the cabbage is completely softened and golden.
  • This process can be hastened by adding a half-cup of water (or so) and covering the pan, but eventually cook all the liquid off before proceeding.
  • Season with salt, pepper, and cayenne, if desired.
  • In a separate pan, brown the hamburger.
  • Season with salt, pepper, and cayenne, if desired.
  • Mix the cabbage/onion with the hamburger thoroughly.
  • You may complete this part of the recipe in advance,refrigerating until needed, or just before you are ready to assemble the rolls.
  • DOUGH: In a large mixing bowl combine 2 cups of the flour and the yeast.
  • In a saucepan heat milk, sugar, butter and salt just till warm (115-120 degrees F) and butter is almost melted; stir constantly.
  • Ad to flour mixture; add eggs.
  • Beat at low speed for 1/2 minute, then three minutes at high speed.
  • Stir in as much remaining flour as you can mix in with a spoon.
  • Turn out onto a floured surface.
  • Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
  • Shape into a ball, and place in a greased bowl; turn once.
  • Cover and let rise in a warm place till double (about 1 hour).
  • Punch down and cover; let rest 10 minutes.
  • ASSEMBLY: Roll out the dough into a large rectangle, and a thickness of about 1/4 inch.
  • Cut into squares of 3 inches by 3 or 4 inches by 4.
  • By the spoonful, place some filling mixture into the center of each square, apportioning all of the mixture among the squares.
  • For each, bring the two opposite corner ends of the dough square up to meet one another, then do the same with remaining ends and pinch them (all 4) together with your fingers.
  • You will see that you now have open slits along the diagnals; pinch these together as well, making a seam of each.
  • Water on your fingertips will facilitate them staying"glued" together.
  • The end product should be a square with a seam running from each corner to the center where all four are joined.
  • Set the squares on a baking sheet (if you had trouble keeping the seams closed, you can flip them over so that the seams are against the baking sheet, thereby keeping all the filling in place and making a nicer presentation).
  • Let raise 30 minutes.
  • Bake in a pre-heated oven at 375 °F for 30 minutes or until golden brown.

2 loaves rhodes bake-n-serve frozen white bread (Dough)
1 lb lean ground beef
12 ounces pork sausage
1/2 head cabbage, shredded
1/2 onion, chopped
1 (14 ounce) can tomato sauce
1 tablespoon tomato paste
1 tablespoon italian seasoning
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • For dough: Remove dough from package. Place in greased bowl or container about 6 hours prior to prep time to thaw.
  • For filling:.
  • Brown beef and onions. Drain.
  • Add cabbage and seasonings to beef and saute until tender.
  • Add tomato sauce and tomato paste and simmer 10 minutes.
  • Divide dough into 8 small dough balls.
  • Take one dough ball and roll out onto a lightly floured surface.
  • Place a generous 1/2 cup of mixture down the center of the rolled out dough.
  • Fold over and pinch edges to seal, use fork to press around sealed edges.
  • Place each pasty onto a nonstick cookie sheet and bake at 375F for 25-30 minutes or until golden brown.
