And we surely agree with the fictional Forrest Gump character - shrimp are a Southern favorite. Although, like most food, folks below the Mason-Dixon prefer the deep-fried variety. Boom boom Shrimp is a classic recipe with a spicy twist. It serves 8 people and only takes 15 minutes to whip up. What is boom boom shrimp, you may ask? It's simply a two-dredge fried shrimp recipe with a tasty Boom Boom Shrimp Sauce. Made with mayonnaise, sweet chili sauce, and toasted sesame oil, the flavorful condiment takes this shrimp recipe to the next level. Fry the shrimp on wooden skewers for an easy and fun method of cooking and serving the food. For an outdoor party, place the end of the skewers in floral foam and into a large bucket. 1 1/2 cups all-purpose flour
3/4 cup cornstarch
1 1/2 tablespoons baking powder
1/2 teaspoon kosher salt
1 pound shrimp, peeled and deveined
1 1/2 cups cold club soda
Canola oil, for frying
Boom Boom Sauce

Steps:

  • Pour canola oil in a large heavy bottomed skillet or saucepan to a depth of 3 inches. Heat over medium high to 375°F.
  • Whisk together flour, cornstarch, baking powder, and salt in a medium bowl. Skewer 3 shrimp on each 6-inch skewer; then dredge shrimp in flour mixture. Set skewers aside. Whisk club soda into flour mixture, then dip skewers into wet batter. Working in batches, fry battered skewers 2-3 minutes or until golden. Serve with boom boom sauce.

½ cup mayonnaise
¼ cup Thai-style sweet chili sauce
3 dashes Sriracha hot chile sauce, or to taste
½ cup cornstarch, or as needed
1 pound medium shrimp, peeled and deveined
oil for frying
8 lettuce leaves
1 bunch green onion, chopped, or to taste

Steps:

  • Whisk mayonnaise, sweet chile sauce, and Sriracha hot sauce together in a bowl.
  • Place cornstarch in a shallow bowl. Gently press shrimps into cornstarch to coat; shake off any excess.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Working in batches, cook the shrimp until they are lightly browned on the outside and the meat is no longer transparent in the center, about 3 to 5 minutes. Transfer to paper towels to drain. Put cooked shrimp in a bowl and pour chile sauce mixture over the shrimp. Toss gently to coat.
  • Line a serving bowl with lettuce leaves. Pour shrimp into bowl and top with green onion.

Chile Garlic Mayonnaise:
1 cup small shrimp (41/50)
1 cup cornstarch
1 cup bread crumbs
1/2 cup mayo
1/4 cup chile garlic sauce (look in Asian aisle of grocer)
4 tablespoons soy sauce
1 teaspoon cayenne pepper
1 teaspoon grated fresh ginger
Chopped fresh cilantro

Steps:

  • Mix cornstarch and bread crumbs. Dredge shrimp in mixture. Fry for 45-60 seconds in 350 degree fryer. Toss in chili garlic mayonnaise. Garnish with cilantro.
