Juicy, incredibly flavorful grilled chicken is easier than you might think; especially when it starts with a marinade loaded with flavor from beer, garlic, and a sprinkling of herbs.

11 ounces dark Mexican beer
3 tablespoons sesame seed oil
5 large cloves of garlic (minced, approximately 1 1/2 tablespoons)
1 1/2 teaspoons dried oregano
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
3-4 pounds chicken (I typically use 9-10 boneless skinless chicken thighs)

Steps:

  • Place the chicken in a gallon size zip-close bag or an airtight container. Stir together the marinade ingredients and pour over the chicken.
  • Seal and turn the bag or container to coat the pieces evenly. Let rest in the refrigerator for 12-36 hours. I try to marinate chicken for a minimum of 24 hours most of the time, because the longer time makes a huge different in the flavor.
  • When ready to cook the meat, let the chicken rest on the counter for 30 minutes to an hour prior to cooking.
  • Preheat the grill to medium heat. For boneless skinless chicken thighs, cook the meat 6 minutes on each side. Then increase the heat closer to medium-high and cook an additional 4 minutes, as needed. Enjoy!

2 chicken fillets (300g)
200 ml beer
2 tablespoons sweet chili sauce
2 teaspoons hot chili sauce
1 tablespoon plum sauce
1 teaspoon crushed black pepper
salt
1 stalk spring onion, chopped
4 cloves garlic, sliced
1 tablespoon chopped coriander
2 tablespoons oil
250 g new potatoes, boiled and halved
150 g spinach, blanched
pepper

Steps:

  • Marinate chicken in beer, chilli and plum sauces, pepper, salt, spring onion, garlic and corriander for at least 30 min.
  • (Not more than 4 hours or else it will turn sour) Remove chicken from marinade and barbecue over a hot grill, basting with remaining marinade once in a while.
  • Remove and set aside when chicken is cooked.
  • Season potato and spinach with salt and pepper to taste and set aside.
  • In a heated saucepan, reduce the remaining marinade until desired sauce consistency.
  • To serve, top spinach with chicken and potatoes on the side and drizzle the sauce around and over.

This chicken is fantastic! I have an indoor grill that I use in the winter season, and I make this chicken quite often....don't forget to marinade the chicken before grilling, as it won't have the same flavour. Note: prep time, does not include marinating the chicken.

8 chicken breasts or 8 cut up chicken parts
1/3 cup butter, melted
1 1/2 cups lemon juice
1 can beer
1 teaspoon garlic salt or 2 -3 cloves minced fresh garlic
1 teaspoon lemon pepper

Steps:

  • Combine butter, beer, lemon juice, garlic and lemon pepper.
  • Pour over chicken pieces, and cover; store in refrigerater 4-6 hours to marinate.
  • On a grill, barbecue pieces, brushing sauce over chicken as you turn them.
  • Grill about 15-20 mins per side.

⅓ cup brown sugar
2 tablespoons chili powder
2 tablespoons paprika
2 teaspoons dry mustard
½ teaspoon salt
¼ teaspoon ground black pepper
½ (12 fluid ounce) can beer
1 (3 pound) whole chicken

Steps:

  • Preheat an outdoor grill for medium-high heat, about 375 degrees F (190 degrees C). Mix the brown sugar, chili powder, paprika, dry mustard, salt, and ground black pepper in a small bowl. Place the half-full can of beer in the center of a plate.
  • Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Fit whole chicken over the can of beer with the legs on the bottom; keep upright. Sprinkle 1 teaspoon of the seasoning mix into the top cavity of the chicken. The beer may foam up when the seasonings fall inside the can. Rub the remaining seasoning mix over the entire surface of the chicken.
  • Place the chicken, standing on the can, directly on the preheated grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 15 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the grill and discard the beer can. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

1 cup butter or 1 cup margarine
3 lbs chicken, cut up
1 (14 ounce) bottle barbecue sauce (we use KP Masterpiece)
1 cup beer

Steps:

  • Preheat oven to 350°F.
  • Melt 1 stick butter or margarine in baking pan (9x13-inches).
  • Add chicken to pan, turning to coat.
  • Bake 30 minutes.
  • While chicken is cooking, melt remaining butter with barbecue sauce and beer in saucepan over med-high heat.
  • Bring sauce to a boil, stirring constantly.
  • Remove from heat.
  • Preheat broiler or prepare barbecue.
  • Coat chicken with sauce.
  • Arrange chicken skin-side down on broiler pan rack or on grill.
  • Cook, turning and basting frequently until chicken is cooked (about 20 minutes in broiler and 30 minutes on grill).

1 (12 fluid ounce) can light colored beer
1 teaspoon honey
2 cloves garlic, minced
2 tablespoons chopped fresh cilantro
