Beer brings a lightness to these brownies that makes them unlike any others you've had. The deep, rich flavors of stout or porter are perfect with chocolate, but if beer isn't your thing, cold coffee is a delicious substitute.

1 stick (8 tablespoons) unsalted butter, plus more for greasing
1 cup all-purpose flour, plus more for dusting
1/4 cup unsweetened cocoa powder
1/2 teaspoon kosher salt
3 1/2 ounces semisweet chocolate, chopped
1/2 cup stout or other dark beer or cold coffee
4 large eggs, at room temperature
1 cup granulated sugar
1 cup packed light brown sugar
2 teaspoons pure vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 9-by-13-inch baking pan.
  • Sift together the flour and cocoa powder in a medium bowl. Add the salt and stir together.
  • Meanwhile, add 2 inches of water to a medium saucepan and bring to a gentle simmer over medium heat. Place the chopped chocolate in a medium heatproof bowl and set it over the saucepan (do not let the bowl touch the water). Stir occasionally until the chocolate is melted and smooth. Remove the bowl from the saucepan and set aside.
  • Melt the 1 stick butter in a small saucepan or skillet over medium heat and continue to cook until it just turns golden brown, 4 to 5 minutes. Immediately pour the brown butter into the bowl of chocolate, scraping in the brown bits (to avoid overcooking the butter). Add the beer and stir together.
  • Combine the eggs with both sugars in a large bowl. Beat together with an electric mixer on high speed until thick and shiny, about 2 minutes. Continue beating on low speed while adding the flour mixture and wet ingredients in alternating batches. Beat in the vanilla. Do not over mix. Fold in the chocolate chips.
  • Pour the batter into the prepared baking pan. Bake until matte all over and a toothpick inserted in the center looks fudgy, but not wet, 40 to 45 minutes.
  • Let the brownies cool in the pan before cutting and serving.

Beer, Bacon, Espresso Chipotle

I originally found these brownies @thebeerwench some time back and decided to spice them up with a little Tex-Mex flavor and they have quickly become a big hit. I have served hundreds upon hundreds of them at my salsa demos. They are the perfect guy/girl Valentine treat and when you make them with Cherries on top...well...they are "Tops" in my book.

1/3 cup(s) dark stout beer (guinness), let stand 15 minutes
1 box(es) pillsbury mocha fudge brownie mix
10 ounce(s) package of bacon, fried and ground fine
3 package(s) 1.5 oz. reese's peanut butter cups, chilled or frozen
2 teaspoon(s) unsalted butter
1 teaspoon(s) chipotle chili powder (can sub with regular chili powder)
2 teaspoon(s) espresso powder, instant
1/4 cup(s) canola oil
2 - eggs
1/3 cup(s) texas brew honey roasted chipotle salsa, any heat

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 11 baking dish with cooking spray and set aside. Using a 9 x 13 will make for thinner brownies.
  • Pour beer into measuring cup and let stand until ready to add to recipe.
  • Cook the entire package of bacon until crispy. Cool and grind to a very fine chop. Melt the butter and simmer the ground bacon in the butter. Be patient and all the bacon will be absorbed in the butter. Set aside to cool. Fine chop the peanut-butter cups; set aside.
  • In a large bowl, mix brownie mix with chipotle chili powder and espresso. With a spoon hollow out a well in the middle of the brownie mix. Whisk oil,eggs, salsa and beer until well mixed. Pour mixture into the well. Stir liquid mixture with brownie mix until well blended.
  • Fold bacon/butter mixture and chopped peanut-butter cups into the brownie mix and stir until well blended.
  • Pour brownies into baking dish and spread evenly. Bake for 30 to 35 minutes. Be careful to not over bake. These brownies will be rich and very fudge like.
  • Serve warm with ice cream and a chocolate glaze or top with a little cherry pie filling drizzled with a chocolate glaze. Try making these in mini Bunt pans and fill with cherry pie filling or glaze with some Valentine Red colored icing.
