CORNED BEEF BAGEL DIP

3/4 cup mayonnaise
3/4 cup sour cream
2 packages (2 ounces each) thinly sliced deli corned beef, chopped
1/4 cup chopped onion
1 tablespoon minced fresh parsley
1/2 teaspoon seasoned salt
1 to 2 teaspoons prepared horseradish, optional
3 to 4 bagels, cut into bite-size pieces

Steps:

  • In a bowl, combine mayonnaise and sour cream. Stir in the corned beef, onion, parsley, seasoned salt and horseradish if desired. Serve with bagel pieces.

⅔ cup sour cream
4 ounces cream cheese, softened
⅓ cup mayonnaise
1 ½ tablespoons everything bagel seasoning, or to taste

Steps:

  • Combine sour cream, cream cheese, and mayonnaise in the bowl of a mini food processor. Blend for 15 to 20 seconds; scrape down the sides of the bowl and add in bagel seasoning. Blend another 10 seconds and taste, adding more seasoning if desired. The flavor will develop the longer it sits.

I got this recipe from a family friend, we call it "Bonnie's Bagel Dip". It's easy to make and very flavorful. I've made it before with light sour cream and light mayo, but of course the real stuff is creamiest. If time allows, refrigerate over night, this allows the flavor of soup mix to really come out. We serve it with mini bagels.

1 (5 ounce) jar dried beef
1 (2 ounce) packet Knorr vegetable soup mix
1/2 cup mayonnaise

  • Cut dried beef into small pieces.

  • Refrigerate (over night is recommended).

1/2 white onion, chopped fine
2 tablespoons dried dill
2 tablespoons dried parsley flakes

3 (2 ounce) packages carl budding beef, chopped into 1 inch squares
10 plain bagels, chopped into quarters
