BEEF & RONI
Another quick, inexpensive dinner made mostly with what you have on hand. I usually always have these ingredients in my freezer or in my pantry. I love this because it doesn't keep me in the kitchen all night during the week.

Steps:
- Sauté onion & garlic on medium heat for 5 minutes. Turn heat up to medium high & add beef. Cook until no pink remains.
- Add tomatoes, tomato sauce, & parmesan cheese and lower heat and simmer for 20 minutes.
- Cook macaroni while beef mixture is simmering. Drain and combine macaroni & beef mixture together. Let sit for a few minutes.
- Pairs well with bread & a salad. Enjoy!

Steps:
- 1. Brown ground beef in large skillet. Drain off any fat.
- 2. While beef is cooking, cook macaroni in boiling salted water until al dente - almost soft (about 12 minutes). Drain.
- 3. Add spaghetti sauce and cooked macaroni to beef in skillet. Stir well, cover, and simmer 10 minutes, stirring often to prevent sticking.
- 4. Top with Parmesan cheese or stir the cheese into the sauce.
MAMA'S BEEF-A-RONI
When my kids were little that's what they called this. When the week was long and the money short, this made a little meat go a long way. I served this with garlic bread. This looks like it takes a long time to make, but it's really easy. I had to guess on the times, so if you try this please let me know how long it takes and i'll adjust it.

Steps:
- Cook pasta according to package directions; drain.
- While pasta is cooking, on medium heat brown ground beef in large skillet.
- Add onions, peppers, celery, Italian seasoning and garlic powder, stirring until vegetables are tender.
- Drain and return to skillet.
- Stir in pasta sauce; add pasta and mix thoroughly.
- Sprinkle cheese over top; cover with lid and let cheese melt.
- Let sit for about 5 minutes then serve and enjoy.

HOMEMADE BEEF-A-RONI
Grandma first introduced this to me, as with everything else I improvised on it. Feel free to substitute beef with half beef/half Italian sausage. In addition, you may substitute the Velveeta with mozzarella if desired.

Steps:
- In medium to large skillet, combine beef, onions and steak seasoning. Cook until brown over medium heat.
- Concurrently, cook noodles according to the box directions in large pot with butter or olive oil to help prevent sticking and to add taste; Drain and return to pot.
- Place cooked beef mix in large pot with noodles. Add remaining ingredients except for cheese slices to the same pot. Mix well and heat on low to medium-low until sauce is hot.
- Pour mixture into a 9x13 baking dish and level.
- Lay cheese slices over top of mixture so that entire dish is covered with a slice of cheese. Cut cheese slices in half to fill in the end and center portions of the baking dish.
- Bake in oven for 15 to 20 minutes, ensuring cheese is melted.
- Serve as square portions with salad and/or garlic bread if desired.

This is something I just threw together one night and everyone loved it.. It's very easy to make also very tweekable :) .. Add more onion or cheese whatever your taste is... Enjoy

- Preheat oven to 400.
- In a skillet, lightly brown the Rice A Roni in the butter (keep flavor pack aside).
- Add and brown the ground beef, crumble finely.
- Stir in hot water.
- Add contents of the beef flavored packet that came with Rice A Roni.
- Add salt & pepper and mix.
- Cover and simmer for 15min on low.
- Cool slightly.
- Stir in 2 well beaten eggs.
- Fill pie shell with mixture.
- Top with bacon slices.
- Bake for 20 minutes.
- note: the bacon cooking on top of the pie is used to add flavor, but does not get crisp. You can brown the bacon slightly before adding it if you like.

- Combine rice-vermicelli mix, ground beef and egg. Shape into twenty 1-1/4-inch meatballs.
- In large skillet, over medium-high heat, brown meatballs in oil; drain.
- Slowly stir in water and Special Seasonings. Bring to a boil. Cover; reduce heat to low. Simmer 30 minutes or until meatballs are cooked.

- 2. Add spaghetti sauce, tomato sauce, corn, sliced mushrooms and chopped onion.
- 3. Simmer until the mushrooms are cooked.
- 4. Add seasonings and continue to simmer.
- 5. In a large pot cook the shells and drain.
- 6. Mix sauce with shells and serve.

- Fry hamburger meat in skillet. Drain grease from meat.
- Mix hamburger meat in mac and cheese. Add can of tomato sauce. Mix well...eat and enjoy.
