3 1/2 cups ketchup
1 cup honey
1 8-ounce can crushed pineapple in juice
2 1/4 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried crushed red pepper
3 racks beef back ribs (about 9 pounds total), each rack cut in half
2 1/2 cups coarsely chopped celery
1 onion, halved lengthwise
1 1/2 cups coarsely chopped carrots
2 whole bay leaves
10 whole black peppercorns
1 tablespoon salt

Steps:

  • Combine first 7 ingredients in large deep saucepan. Bring to boil. Reduce heat to low and simmer until very thick, stirring occasionally, about 1 hour. Cool sauce. (Can be made 1 week ahead. Cover and refrigerate.)
  • Place ribs in heavy large pot. Add celery, onion, carrots, bay leaves, peppercorns and 1 tablespoon salt. Add enough water to cover ribs and bring to boil. Reduce heat to medium and simmer until meat is tender, about 1 hour. Using tongs, remove rib racks from pot. Cool slightly. Cut between bones into individual ribs. (Can be made 1 day ahead. Cover; refrigerate.)
  • Prepare barbecue (medium heat). Brush ribs with some of sauce. Grill ribs until brown and thickly glazed, occasionally turning and basting with more sauce, about 10 minutes.

1 (14 ounce) can low sodium chicken broth
1 cup drained canned diced tomato
1/4 cup fresh lime juice
1 1/2 tablespoons chopped canned chipotle chiles
3 large fresh anaheim chilies, stemmed,seeded,cut into 1/4 inch-thick rings (California)
chopped fresh cilantro
lime wedge

Steps:

  • Mix first 5 ingredients in bowl; sprinkle all over short ribs.

a 4-rib standing rib roast (about 7 1/2 to 8 pounds trimmed)
For crust
2 teaspoons whole allspice berries, crushed
3 tablespoons pink peppercorns*, crushed lightly
3 tablespoons freeze-dried green peppercorns, crushed lightly
3 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
1 tablespoon firmly packed brown sugar
1 tablespoon Dijon mustard
1 1/2 teaspoons salt
*available at specialty foods shops
For sauce
2/3 cup dry red wine
2 cups low-salt beef broth
1 1/2 tablespoons cornstarch
1 tablespoon Worcestershire sauce
1 tablespoon water
Garnish: rosemary sprigs

Steps:

  • Let rib roast stand at room temperature 1 hour.
  • Preheat oven to 500°F.
  • Make crust:
  • In a small bowl combine crust ingredients, stirring to form a paste.
  • Pat beef dry and sprinkle with salt and pepper. In a roasting pan roast beef, ribs side down, 30 minutes. Transfer beef to a platter and discard remaining drippings.
  • Reduce oven temperature to 350°F. Return beef to roasting pan, ribs side down, and spread with peppercorn paste. Roast beef 1 to 1 1/4 hours more, or until a meat thermometer inserted in fleshy section registers 135°F. for medium-rare meat.
  • Transfer beef to a cutting board and discard strings if necessary. Let beef stand, covered loosely, at least 20 minutes and up to 30 minutes before carving.
  • Make sauce:
  • Skim fat from drippings in roasting pan. To pan add wine and deglaze over moderately high heat, scraping up brown bits. Boil mixture until reduced by about half and transfer to a saucepan. Add broth and boil 5 minutes.
  • In a small bowl dissolve cornstarch in Worcestershire sauce and water and add to pan in a stream, whisking. Bring sauce to a boil, whisking, and boil 1 minutes. Season sauce with salt and pepper.
  • Garnish rib roast and serve with sauce.

1/4 cup Sherry wine vinegar
2 tablespoons frozen orange juice concentrate, thawed
2 tablespoons extra-virgin olive oil

6 meaty beef ribs

Steps:

  • Prepare barbecue (medium-low heat). Blend first 4 ingredients, 1 tablespoon paprika, and 1 1/4 teaspoons cumin in medium bowl. Season sauce with salt and pepper. Transfer half of sauce to small pitcher and reserve.
  • Sprinkle ribs on all sides with paprika, cumin, salt, and pepper. Grill 20 minutes, turning occasionally. Brush ribs with some of sauce from bowl. Grill until slightly charred and cooked to medium-rare, brushing with remaining sauce in bowl, about 15 minutes. Transfer ribs to platter. Drizzle with some of reserved sauce in pitcher and sprinkle with salt and pepper; pass remaining sauce.

I have made this several times in the past, it is a delicious way to make beef ribs...the sauce from this is really good. Instead of broiling the ribs, you can grill then on the BBQ, and then finish baking in the oven with the sauce. If you are making more than 4 pounds of ribs, then double the sauce ingredients. Potato pancakes go wonderful with this, see my recipe#129156. Cooking time does not include broiling or grilling the ribs.

4 lbs meaty beef ribs
1 large onion, chopped
1 (10 3/4 ounce) can tomato soup
1 cup water
1/4 cup vinegar
1/4 cup Worcestershire sauce
1 1/2 cups catsup
1/4 teaspoon cinnamon
2 teaspoons paprika
2 teaspoons chili powder
1/4 teaspoon clove
1/8 teaspoon cayenne pepper
2 teaspoons steak sauce
1/3 cup vegetable oil
3 -4 tablespoons brown sugar
salt

Steps:

  • Brown the ribs under the broiler for about 25-30 minutes (or cook on the grill).
  • While the ribs are browning, combine all sauce ingredients in a saucepan; simmer for 15-20 minutes, or until the flavors are well blended, adjusting all seasonings to suit taste.
  • Place the ribs into a medium size roasting pan, and cover with the sauce.
  • Bake at 325*F. for about 2-1/2 hours, or until the ribs are cooked to desired tenderness.
  • Baste with sauce occasionally.
  • **NOTE** the sauce ingredients may be doubled if desired for 4 pounds of ribs.

a 4-rib standing rib roast (trimmed 10 - 10 1/2 pounds)
1 tablespoon black peppercorns
2 bay leaves, crumbled
1/2 stick unsalted butter,cut into pieces and softened
1/4 cup flour
2 tsps. coarsley ground white pepper.
1 tsp. sea salt
1 pound large shallots peeled leaving the ends intact.
2 heards garlic, separated into cloves but not peeled.
for the sauce
1/2 cup dry red wine
2 cups beef broth
1/3 cup Sercial Madeira
1 Tablespoon cornstach

Steps:

  • Let the rib roast stand at room temperature for 1 hour. In an elecric spice or coffee grinder grind the peppercorns and bay leaves, in a small bowl combine well the butter, flour, white pepper, salt and the bay leaf mixture forming a paste and rub the meat with the paste. In a roasting pay roast the meat rib side down in preheated 500 degree oven for 30 minutes. reduce heat to 350 and roast the meant for 1 1/2 hours or 130 degree for medium rare. Forty minutes before roast is done add the shallots and 30 minutes before roast is done add garlic. Remove roast from pan keep warm. Sauce. Skim the fat from the drippings, reserve for Yorkshire. add red wine and deglaze pan over moderately high heat. boil until liquid reduced by half and transfer to a saucepan. add broth and 1/4 cup Madeira and boil for 5 minutes. Dissolve cornstarch and remaining 4 tsps. Madeira and add mixture to the pan in a stream, whisking. bring sauce to a boil, whisking, and boil for 1 minute. Season with salt and pepper and transfer to a heated sauce boat.

NO-COOK BASTING SAUCE FOR PORK AND BEEF RIBS



No-Cook Basting Sauce for Pork and Beef Ribs image

Baste this sauce on pork or beef ribs while grilling or broiling, it is also good on kebobs!. Plan ahead this sauce must be made 8-24 hours before using. Adjust the garlic amount to taste. The amounts stated will make about 3 cups basting sauce, but you can freeze any remaining sauce to use for another time, it will freeze well, or reduce recipe by half.
