1 cup plain fat-free yogurt
1/4 cup fresh parsley, minced
1/2 teaspoon garlic, minced
1/8 teaspoon salt
1 teaspoon dried oregano
1 teaspoon fresh rosemary, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb beef top sirloin steak, cut into thin strips
1 large sweet onion, sliced
4 teaspoons olive oil, divided
4 whole gyro-style pita bread, warmed (6 inches)

Steps:

  • For sauce, in a small bowl, combine the yogurt, parsley, garlic and salt. Cover and refrigerate until serving.
  • In a large resealable plastic bag, combine the oregano, rosemary, salt and pepper; add beef. Seal bag and toss to coat.
  • In a large nonstick skillet, saute onion in 2 tsp oil until golden brown. Remove and keep warm. Saute beef in remaining oil until no longer pink. Serve beef and onion on pitas with yogurt sauce.

1 pound lean ground beef (90% lean)
1 small onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
3/4 teaspoon salt, divided
1 cup reduced-fat plain Greek yogurt
1 medium tomato, chopped
1/2 cup chopped peeled cucumber
1 teaspoon dill weed
4 whole pita breads, warmed
Optional: Additional chopped tomatoes and cucumber

Steps:

  • In a large skillet, cook beef, onion and garlic over medium heat 8-10 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain. Stir in oregano and 1/2 teaspoon salt., In a small bowl, mix yogurt, tomato, cucumber, dill and remaining salt. Spoon 3/4 cup beef mixture over each pita bread; top with 3 tablespoons yogurt sauce. If desired, top with additional tomatoes and cucumbers. Serve with remaining yogurt sauce.

1 teaspoon minced fresh rosemary
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb beef top sirloin steak, cut into thin strips

1/2 English cucumber, peeled
1/4 cup chopped fresh mint
3/4 cup plain nonfat Greek yogurt, such as Fage
1 teaspoon lemon zest, from 1 lemon
1 tablespoon lemon juice, from 1/2 large lemon
1 tablespoon extra-virgin olive oil
3/4 teaspoon kosher salt
1/2 cup nonfat Greek yogurt, such as Fage
1 tablespoon extra-virgin olive oil
1 teaspoon lemon zest, from 1 lemon
1 teaspoon kosher salt, plus more for seasoning
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
1/4 teaspoon cayenne
1 pound beef sirloin, cut into 1-inch cubes
16 grape or cherry tomatoes
1 large red onion, cut into 1-inch cubes
Eight 10-inch bamboo skewers, soaked if using an outdoor grill

Steps:

  • For the sauce: Grate the cucumber over a strainer and squeeze out the water. Transfer the grated cucumber to a medium bowl along with the mint, yogurt, lemon zest, lemon juice, olive oil and salt. Mix to combine, using a rubber spatula. Cover and refrigerate until ready to serve.
  • For the kebobs: In a medium bowl, whisk together the yogurt, olive oil, lemon zest, salt, cumin, garam masala and cayenne. Add the cubed sirloin and mix to coat evenly. Cover with plastic wrap and marinate at room temperature for about 20 minutes.
  • Preheat a grill or grill pan to medium heat.
  • Beginning with the meat, thread one cube of sirloin onto a skewer, followed by a tomato, another piece of meat, a piece of onion, another piece of meat and finishing with a tomato and an onion. Continue like this until all the skewers are assembled. Sprinkle the kebobs on all sides with salt, then place on the preheated grill and cook for three minutes per side for medium doneness. Serve warm with the cucumber-yogurt sauce.

2 tablespoons olive oil
2 pounds lamb stew meat (3/4-inch pieces)
1/2 cup dry red wine
1 large onion, chopped
1 garlic clove, minced
1-1/4 teaspoons salt, divided
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/3 cup tomato paste
1 medium cucumber
1 cup plain yogurt
16 pita pocket halves, warmed
4 plum tomatoes, sliced

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown lamb in batches. Add wine to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel. Add onion, garlic, 1 teaspoon salt, oregano and basil. Return lamb to pressure cooker., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 15 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Press cancel., Select saute setting; adjust for low heat. Add tomato paste; simmer, uncovered, until mixture is slightly thickened, 8-10 minutes, stirring occasionally. Press cancel., To serve, dice enough cucumber to measure 1 cup; thinly slice remaining cucumber. Combine diced cucumber with yogurt and remaining salt. Fill pitas with lamb mixture, tomatoes, sliced cucumbers and yogurt mixture. Freeze option: Freeze cooled lamb mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.
