I have not made this yet. Posting here for safekeeping as I lost the recipe once. Servings and times are a "guestimate". The only thing I remember about this recipe is that I gave it to a friend a few years ago who wanted to make an anniversary dinner for herself and her husband and they both raved about it. I'm not sure whether or not it was more from the flavor or the fact that she'd successfully cooked a meal that they both enjoyed. ***insert blowing raspberries smilie here in case she ever sees this***. LOL I don't see it on Zaar so I'm going to go ahead and make it public.

2 -3 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons chili flakes
3 cups beef broth
3/4 cup port wine
1 cup balsamic vinegar
4 1/2 cups blueberries, divided
1 teaspoon brown sugar
1/2 teaspoon cinnamon
1 sprig fresh rosemary

Steps:

  • In a large saucepan over medium heat saute minced garlic and chili flakes lightly in olive oil.
  • Add beef broth, port wine and balsamic vinegar. Turn heat to high and cook until liquid is reduced by about half, stirring ocassionally.
  • Add 3 cups of blueberries, the cinnamon and brown sugar. Cook over medium heat approximately 20 minutes or until the blueberries break apart and the sauce thickens, stirring often.
  • Add the rosemary sprig and let the sauce simmer for another 5 minutes. Remove from heat.
  • Add the other 1 1/2 cups blueberries and stir until berries are warmed throughout. Remove rosemary sprig.
  • Spoon sauce over individual beef filets or slices of beef tenderloin and serve.

1 tablespoon canola oil
1 small red onion, chopped
4 garlic cloves, chopped
1 -2 jalapeno, seeded and chopped
1/2 cup Bourbon
2 cups fresh blueberries (not thawed) or 2 cups frozen blueberries (not thawed)
1/2 cup ketchup
1/3 cup cider vinegar
2 tablespoons brown sugar
1 tablespoon molasses
1/8 teaspoon ground allspice
1 tablespoon chopped fresh thyme
1 tablespoon extra virgin olive oil
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground coarse pepper
4 filet mignon steaks (1.5to2-inch thick)
1/4 cup barbecue sauce, to taste (Blueberry-Bourbon Sauce)

Steps:

  • MAKE BLUEBERRY-BOURBON SAUCE:.
  • Heat oil in a large saucepan over medium heat.
  • Add onion and cook, stirring occasionally, until tender and just starting to brown, 2 to 4 minutes.
  • Add garlic and jalapeno(if using) and cook, stirring until fragrant, about 30 seconds.
  • Add bourbon, increase heat to high, and bring to a boil; cook until most of the liquid has evaporated, about 5 minutes.
  • Stir in blueberries, ketchup, vinegar, brown sugar, molasses and allspice; return to a boil.
  • Reduce the and simmer, stirring occasionally, until thickened, about 20 minutes.
  • FILET MIGNONS:.
  • Preheat grill to high.
  • Combine thyme, oil, salt and pepper in a small bowl.
  • Rub the mixture on all sides of steaks.
  • Grill the steaks 3-5 minutes per side for medium-rare.
  • Let the steaks rest for 5 minutes before serving with Blueberry-Bourbon Sauce.

2 beef tenderloin steaks (4 ounces each)
1-3/4 cups sliced baby portobello mushrooms (about 4 ounces)
1/2 cup dry red wine or reduced-sodium beef broth
1 teaspoon all-purpose flour
1/2 cup reduced-sodium beef broth
1 teaspoon ketchup
1 teaspoon steak sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1/8 teaspoon salt
1 tablespoon minced fresh chives, optional

Steps:

  • Place a large skillet coated with cooking spray over medium-high heat; brown steaks on both sides. Remove from pan., Add mushrooms and wine to pan; bring to a boil over medium heat, stirring to loosen browned bits from pan. Cook until liquid is reduced by half, 2-3 minutes. Mix flour and broth until smooth; stir into pan. Balsamic & Bourbon Filet Mignon image

Oh my, this is the perfect dinner for a special occasion. The steak is tender, buttery, a little tangy, and sweet. But what makes this great is the mushrooms. They are like tiny sponges and soaked up all the flavor of the marinade. This dish is perfection!

1 oz balsamic vinegar
1 oz bourbon (I used Eastside Distilling Burnside bourbon)
1 oz Worcestershire sauce
4 Tbsp butter, divided in half
2 filet mignon
12-15 cremini mushrooms, thinly sliced
1 Tbsp fresh thyme leaves

Steps:

  • 1. Combine balsamic vinegar, bourbon and Worcestershire sauce in a small bowl.
  • 2. Rinse and pat dry filet mignon and place in a shallow dish. Pour half of the marinade over the steaks (you'll use the other half with the mushrooms), turning to coat.
  • 3. Place in the refrigerator for an hour, turning after 30 minutes. (I cut the steaks in half horizontally to reduce cooking time.)
  • 4. Pre-heat oven to 425 degrees.
  • 5. In a cast iron skillet or other oven-proof pan, melt 2 tbsp butter over medium high heat.
  • 6. Place steaks in the skillet and allow to sear, untouched, 3 minutes. Discard the marinade in the dish the steaks were in.
  • 7. Turn steaks and remove from heat.
  • 8. Place the skillet in the oven for 15-20 minutes, depending on the thickness of the steak.
  • 9. While the steaks finish, melt remaining 2 tbs butter in a saute pan over medium heat.
  • 10. Add mushrooms and saute until soft, 5 minutes. Pour half of the remaining marinade over the mushrooms, add thyme, reduce heat and continue to saute 6-8 minutes.
  • 11. Taste at this point and add more marinade to the mushrooms, for a stronger flavor, if desired.
  • 12. Plate steaks when done. Spoon mushrooms over the top.
