BEEF CHOP SUEY
Easy to make, and also very adaptable. Chop suey is the classic Chinese-American dish. This one's mainly a vegetable dish with beef added for extra flavor.

Steps:
- Cut beef into thin slices and marinate in a mixture of the next 6 ingredients for 10-15 minutes.
- Heat a little oil and saute the onions& celery until onion is transparent, and set aside.
- Stir-fry the carrots, mushrooms, sprouts and bamboo individually for 1 minute each (order doesn't matter)& set aside.
- Saute the ginger for 1 minute, add the cabbage and cook for another minute.
- Add the rest of the vegetables, mix well and add a tsp of sugar and 2 tsp salt or salt and sugar to taste.
- Remove vegetables and set aside.
- Heat a little oil and saute the garlic.
- Add the marinated beef and cook for 2 more minutes.
- Mix together the remaining 4 ingredients and stir into the beef.
- Cook until cornstarch is clear and pour beef over the vegetables.
- Serve chop suey over rice.

Steps:
- Heat oil in large pot over high heat.
- Brown beef stew meat mixing in cut up onions and celery.
- Add water, soy sauce and beaded molasses.
- Simmer for 3 hours.
- Add bean sprouts and water chestnuts.
- Mix cornstarch and water and add to chop suey, heat until thickens.
- Serve over rice.

- In a large pot, heat the oils and brown the beef. Push the beef off to one side and add the onions, celery and garlic. Cook until tender, then add the soy sauce, molasses, and beef broth. Bring to a boil, turn down to a simmer, cover and cook for about 1 hour or until beef is tender. Add the chop suey vegetables, bean sprouts and mushrooms. Dissolve the cornstarch in the reserved liquid from the chop suey vegetables and add to the pan. Increase the heat, bring to a boil and cook, uncovered, until thickened. Serve over hot cooked rice and chow mein noodles.

Steps:
- Cook celery, onion and ground beef about 5 minutes until meat begins to brown.
- Blend cornstarch with water and stir into beef mixture.
- Add bouillon cube, soy sauce and salt.
- Cook, stirring constantly, until sauce is thickened and clear.
- Stir in bean sprouts or cabbage.
- Cook covered about 3 minutes until cabbage is tender if cabbage is used.
- If bean sprouts are used, heat thoroughly.

- Heat oil in large nonstick skillet over medium-high heat.
- Add beef; cook until browned.
- Add beef broth, soy sauce, ginger and mustard; mix well.
- Lower heat.
- Add fresh vegetables; cover. Simmer for 1 hour (more or less, depending on the quality of the beef).
- Add canned vegetables; recover. Simmer for a half hour.
- If necessary, use cornstarch to thicken (mix with water in a separate bowl and add to chop suey a little at a time).
- Serve with white rice or chow mein noodles.

- 1. Sprinkle meat with salt and pepper and brown in oil. Add onions, celery, sugar, soy sauce and about 1 inch of water. Cook, covered until meat is tender.
- 2. Add bean sprouts, vegetables and mushrooms. Combine cornstarch and cold water. Add to boiling mixture. Stir until thickened.

- In a large bowl combine soy sauce, corn syrup (or brown sugar) and mix together with the cooked meat; let stand for 30 minutes.
- Mix/whisk the cornstarch with cold water (or COLD chicken broth) and set aside.
- Heat the oil in a wok or large skillet until hot.
- Add in onions slices; stir-fry for 2 minutes.
- Add in garlic and sliced vegetables; stir-fry for 2 minutes.
- Add in the meat mixture; stir-fry for 2 minutes.
- Add in the cornstarch mixture; stir for 2 minutes.
- Add in the bean sprouts and cook, stirring for about 2 minutes.
- Season with salt and pepper, and
- Add in more soy sauce if desired.
- Transfer to a large bowl sprinkle with chopped green onions if desired.
- Serve with rice.

- In pressure cooker, saute beef, pork, onions and celery in butter, salt, pepper and garlic powder til meat is lightly browned on all sides.
- Add 1 can beef broth, A-1, fresh mushrooms and 3 Tbl. soy sauce.
- Cover and pressure cook 8 minutes.
- Cool cooker at once.
- Remove lid and add second can beef broth, dark brown sugar and rest of soy sauce.
- Heat to boiling, stir in cornstarch mixed with the third can of beef broth.
- Stir and boil til thickened.
- Add rest of vegetables and heat through. Serve over rice.
- Top with chow mein noodles.

- Drain off fat.
- Put beef and onion into crock pot.
- Stir in rice mix including dry seasoning packet, water and 4 TBS of soy sauce.

In large dutch oven brown cubed beef in 2-3 tbs cooking oil...add 3 cups water , slow boil 20 minutes ... add dry onion soup mix, celery, onion ... bring to slow boil , cook covered for approx. 20 mintues (stirr in between time) ... add the remaining 2 cups of water with beef bullion cubes... add bean sprouts, mushrooms, bamboo shoots , baby corn , cook 15 minutes (stirr in between time) ... add molasses ... stirr well ... lower heat and slowly add corn starch to desired thickness. Season to taste. Serve over cooked rice with Soy sauce
CLARA'S GROUND BEEF CHOP SUEY
This was my mother's (Clara) recipe. I have no idea where she got it but this was a staple at our house for years. All of us children (5) have tried to make this recipe taste like hers. We can come close but it never tastes as good as when she made it. Maybe it was the love. She died at the age of 86 and I'm posting this recipe in her memory.
