1 pound ground beef
1 can (16 ounces) refried beans
1/2 cup finely chopped onion
3 cans (8 ounces each) tomato sauce, divided
2 teaspoons chili powder
1 teaspoon minced garlic
1/2 teaspoon ground cumin
12 flour tortillas (10 inches), warmed
1 can (4 ounces) chopped green chiles
1 can (4 ounces) chopped jalapeno peppers
Oil for deep-fat frying
1-1/2 cups shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the beans, onion, 1/2 cup tomato sauce, chili powder, garlic and cumin. , Spoon about 1/3 cup of beef mixture off-center on each tortilla. Fold edge nearest filling up and over to cover. Fold in both sides and roll up. Fasten with toothpicks. In a large saucepan, combine the chilies, peppers and remaining tomato sauce; heat through., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry the chimichangas for 1-1/2 to 2 minutes on each side or until browned. Drain on paper towels. Sprinkle with cheese. Serve with sauce.

2 pounds boneless beef chuck roast, trimmed of fat
¼ cup water
1 ½ cups beef broth
3 tablespoons red wine vinegar
2 tablespoons chili powder
1 teaspoon ground cumin
4 (8 inch) flour tortilla
3 tablespoons butter, melted
1 cup salsa
½ cup shredded Monterey Jack cheese
½ cup sour cream

Steps:

  • Place beef in a Dutch oven over medium heat. Pour in water. Cover, and cook for 30 minutes. Remove cover, and cook until liquid has evaporated, and beef is well browned, about 10 minutes. In a medium bowl, combine beef broth, red wine vinegar, chili powder and cumin. Pour over beef. Cover, and cook until meat is very tender, and pulls apart easily, about 2 hours. Allow to cool, then shred and mix with pan juices.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Brush both sides of each tortilla with melted butter. Spoon shredded beef filling down center of each tortilla. Fold ends over filling, then fold sides to center to make a packet. Place chimichangas, seam side down, in a 9- by 13-inch baking pan.
  • Bake in preheated oven for 8 to 10 minutes, or until golden brown. Serve with shredded cheese, sour cream and salsa.

3 ripe avocados
1 large red onion, diced
2 serrano chiles, stems and seeds removed and chopped (use gloves to handle these)
1/4 cup freshly chopped cilantro leaves
1/4 cup fresh lime juice (1 or 2 limes depending on size)
3 ripe tomatoes, seeds removed and diced
3 cloves garlic, roughly diced
Salt and freshly ground black pepper
12 large flour tortillas
1 1/2 cups shredded Monterey Jack cheese
1 liter vegetable or canola oil
2 tablespoons olive oil
1 large red onion, sliced
3 pounds ground beef
1 (6-ounce) can tomato paste
4 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons celery salt
Salt and freshly ground black pepper

Steps:

  • Slice each avocado in half lengthwise, pop out seed and slip off the skin. Smash the avocado in a bowl and add onion, chiles, cilantro, lime juice, tomatoes, and garlic and mix well. Season with salt and pepper, cover, and let sit in refrigerator for a couple of hours to allow flavors to combine.
  • Lay out tortillas and sprinkle about 1/8 cup cheese on each. Begin heating vegetable oil to 350 degrees F in deep-fryer.
  • In a large skillet heat olive oil over medium-high heat and saute onion until translucent. To this pan, add ground beef, tomato paste, chili powder, cumin, celery salt, and salt and pepper, and cook until browned. Divide meat mixture into equal amounts in the pan. Then using a slotted spoon to leave excess liquid behind, transfer meat mixture to the center of each tortilla and fold the tortilla into a closed packet and secure using a wooden skewer or round toothpicks. Deep fry chimichangas until golden brown. (Alternatively, you can skip the deep frying step altogether by arranging the chimichanga packets on a baking sheet and bake until cheese melts and tortillas begin to firm up, about 5 to 10 minutes in a preheated 350 degrees F oven.) Remove skewers/toothpicks before serving.

Delicious recipe that is quite similar to a popular Chi Chi's restaurant dish. Seasoned ground beef and cheese are rolled in a tortilla, smothered in green chile sauce, topped with sour cream and sliced green onions. I adapted this from a posting at recipelink submitted by "Jill". It is important to use Chi Chi's restaurante fiesta seasoning mix. Don't skip the sauce or garnishes. Enjoy!

1 -1 1/2 lb ground beef
1 (7/8 ounce) package Chi Chi's restaurante fiesta seasoning mix
1/2 cup water
3 cups shredded monterey jack cheese
6 -12 inches flour tortillas
vegetable oil
8 ounces green chilies, 2 cans 4 ounce each (do not drain)
1 1/2 teaspoons beef bouillon
3 cups water
3/4 teaspoon onion powder
1 1/2 teaspoons garlic powder
1 tablespoon cornstarch
1/3 cup water
sour cream
1 bunch sliced green onion

Steps:

  • In a saucepan mix the sauce ingredients (excluding the cornstarch and water). Bring to a boil, lower the heat and continue to simmer stirring occasionaly while you complete the recipe. It should end up reduced to about half. Once reduced stir in the cornstarch mixed with the water. Cook until thickened and set aside.
  • Brown the ground beef, drain, and stir in the fiesta restaurante seasoning mix and 1/2 cup water and simmer for 5 minutes.
  • Divide the meat evenly on the tortillas (1/3 of the way down the tortilla) do the same with the cheese.
  • Roll the tortilla (starting at the end with the meat/cheese) after rolling once, fold in the ends and finish rolling. To hold it together you may need to use toothpicks or a flour and water mixture to seal them.
  • Fry until golden brown or bake in the oven.To bake in the oven: brush with vegtable oil or butter and bake on middle shelf at 400 degrees for 25 minutes. Finish under the broiler for approx 2-3 minutes until golden brown. Watch carefully when under the broiler.
  • Serve with sauce over the top, garnish with a dollop of sour cream and sliced green onions. I usually serve this with some shredded lettuce and diced tomatoes or refried beans.

This is the one recipe everybody asks me for. This recipe is an all day project. It is well worth the effort. If you have a large freezer, you'd probably fill it up with these. The kids can eat these when they come home from school, a quick dinner when you don't feel like cooking, etc. When I tripled this recipe I started at 10am and finished around 6pm. I made about 60 of these. I roll up the sleeves and make these about twice a year. There is always a family gathering on the night they come out fresh. Bet you can't eat just one!

3 lbs beef (cheap roast kind, or pork shoulder) or 3 lbs pork (cheap roast kind, or pork shoulder)
2 tablespoons chili powder
1 teaspoon ground cumin
2 teaspoons oregano leaves
2 teaspoons salt
1/2 teaspoon ground red pepper
1/2 teaspoon white pepper
1/2 teaspoon black pepper
6 -8 garlic cloves, pressed
1 medium onion, coarsely chopped
water
20 flour tortillas, 9-inch (dinner plate size)
1 lb monterey jack cheese or 1 lb cheddar cheese
canola oil (for frying)

Steps:

  • Cut meat into large chunks (3-4") and place in cooking pot. cover with water. Add all ingredients except for last three items.
  • Bring to a boil then cover and cook on medium hear for at least two hours.
  • After 2 hours, bring back to full boil with lid removed.
  • While evaporating water, remove several pieces for pot and shred using two forks. When only +/- 1/2" of goop is left in the pot, remove from heat and return shredded meat back to the pot and blend with remaining slurry.
  • Open a package of tortillas and place in microwave with a wet paper towel placed on top. Microwave on high for 1 minute.
  • Place a tortilla on plate and spoon 1-2 Tblspn of meat at bottom of tortilla. Sprinkle with shredded cheese, chopped onion(optional) and roll up burrito style.
  • Repeat with remaining tortillas until all the meat is used up.
  • In large skillet, heat up 1-1/2" depth of oil to approximately 350 degrees. (If you put too much oil in the skillet or if it gets too hot, the chimis will begin to unravel). Cook until browned on each side (about 3 minutes). Drain on paper toweling.
  • Eat'em while they're warm -- freeze the rest.
  • Reheat frozen ones in the microwave on high for three minutes or place on rack in a preheated 450 degree oven for 8-10 minutes.
  • Serve with chopped tomato, lettuce, cheese, sour cream (stuff you'd put on a taco).

1 ½ cups whole kernel corn
2 cups taco sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Brown the ground beef in a skillet over medium-high heat. Drain excess grease, and add the onion, bell pepper, and corn. Cook for about 5 more minutes, or until vegetables are tender. Stir in the taco sauce, and season with chili powder, garlic salt and cumin, stirring until blended. Cook until heated through, then remove from heat, and set aside.
  • Open the can of beans, and spread a thin layer of beans onto each of the tortillas. Spoon the beef mixture down the center, and then top with as much shredded cheese as you like. Roll up the tortillas, and place them seam-side down onto a baking sheet. Brush the tortillas with melted butter.
  • Bake for 30 to 35 minutes in the preheated oven, or until golden brown. Serve with lettuce and tomato.

A good, simple alternative to deep-frying. I think I got this from OAM Cookbook years ago. Make sure the tortillas are room temperature or they will crack when you roll them. You can microwave the whole package for about 20 seconds to speed things up.

1/4 cup butter, melted
1 cup tomato sauce
1 cup salsa

Steps:

  • Preheat oven to 350 degrees.
  • Brown beef in large skillet; drain, if necessary.
  • Add onions, garlic and salt, and cook until onions are soft.
  • Stir in refried beans and spices. Remove from heat.
  • Scoop 1/3 cup of meat filling a little off center on the tortilla.
  • Fold up edge closest to you over the filling.
  • Fold in each side and roll all the way.
  • Place on cookie sheet and repeat with all the tortillas.
  • Brush melted butter over the chimichangas making sure to get some on the bottom side as well.
  • Bake at 350 degrees for 25 to 30 minutes until golden brown.
  • While the chimichangas are baking, heat the sauce ingredients in a small sauce pan. Keep warm.
  • Serve the chimichanga with the sauce drizzled over the top and sprinkle with cheese, if desired.
  • These can be frozen before baking and kept in a zip top bag. To reheat, let thaw in refrigerator overnight and bake as usual.

2 lb beef roast
2 pkg fajita seasoning
2 Tbsp garlic, diced
1 large onion
1 can(s) diced green chilis
1/4 c cilantro, fresh
1 can(s) refried beans
1 pkg Colby Jack cheese
2 pkg soft taco shells (10 count)
sour cream, for garnish
vegetable oil or cooking spray

Steps:

  • 1. Heat skillet on stovetop on high heat with a drizzle of olive oil.
  • 2. Place roast in pan.
  • 3. Sear on both sides.
  • 4. Place in slow cooker on high heat.
  • 5. Slice onion and place on top of roast with garlic, the two packets of fajita seasoning and 1/2 cup water. Let cook for 4 hours or until you can shred the beef with a fork.
  • 6. At that point, shred the beef. I find using two forks work the best.
  • 7. Add the green chili and the chopped cilantro to a bowl.
  • 8. Mix together with the beef.
  • 9. Preheat oven to 400. Heat refried beans on the stove until they are heated and creamy and easily spreadable.
  • 10. Warm soft taco shells in the microwave (about 30 sec, just until warm so the can be rolled).
  • 11. Spray baking sheets with cooking spray.
  • 12. Assemble chimis by spreading beans, cheese, beef mixture on tortilla shells then fold.
  • 13. I fold them by folding the shell by a third.
  • 14. Tuck in the sides.
  • 15. Then folding them the rest of the way over. Eyeball how much of each to put on one shell, depending on how big your shells are.
  • 16. Place on baking sheet seam side down. Using a pastry brush, brush the finished chimis with vegetable oil if you are using that or spray them with cooking spray if that is what you are using.
  • 17. Place them in oven for about 15 minutes. Keep an eye on the bottom of the chimis. You don't want them to burn (depends on what kind of baking sheet you are using).
  • 18. Take the chimis out of oven. Turn on the oven broiler. Top chimis with cheese.
  • 19. Place them under the broiler for 2-5 minutes until cheese is bubbly. (Keep a close watch!! You don't want them to burn!)

1 1/2 lbs steak (a lean cut)
2 tablespoons cumin seeds
6 inches cinnamon sticks, broken into thirds
1 knorr beef bouillon cube
1/2 onion, chopped
2 garlic cloves
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cayenne pepper (or more)
1/4 cup salsa
1 (4 ounce) can chopped green chilies
1 cup colby-monterey jack cheese, grated
6 (10 inch) flour tortillas
nonstick cooking spray
shredded lettuce
chopped tomato
sour cream
guacamole
salsa
refried beans

Steps:

  • Put the steak, cumin seeds, cinnamon stick, and bullion in a saucepan and cover with water.
  • Bring to a boil and allow to simmer until the meat shreds easily with a fork.
  • (this takes longer with tough cuts of meat) Remove meat from liquid, shred and put aside.
  • Strain liquid and set aside.
  • Spray a large skillet with non-stick spray and add onions and garlic.
  • Cook until the onions are translucent.
  • Add chili powder, cumin, cinnamon, and cayenne and mix in well.
  • Add salsa, chilies, and shredded meat and combine.
  • Measure 1/2 cup of the meat cooking liquid and add to the mixture-- allow to simmer until the liquid is almost all absorbed.
  • Spray a 13x9-inch glass baking dish with non-stick spray--give it a fairly heavy coating of spray.
  • Preheat oven to 450°F.
  • Warm your tortillas.
  • Lay out one tortilla put 1/6 of the mixture in the center and fold up the bottom end.
  • Top with 1/6 of the shredded cheese.
  • Fold the right side and then the left and roll up the chimichanga.
  • Put seam side down in the glass dish-- fold remaining 5 chimichangas.
  • Coat all the chimichangas with a very liberal coating of spray, and put dish into oven.
  • Bake for 10 minutes and then carefully turn the chimichangas, spray again, and return the dish to the oven.
  • After 5 more minutes turn the chimichangas once more, give them a good spray and return to the oven for 5 more minutes.
  • When the chimichangas are crisp and golden brown they are ready for eating.
  • Put them on plates and top with lettuce, tomato, beans, sour cream, guacamole, or salsa.

1 1/2 tsp chili powder
1/2 tsp ground black pepper
1 tsp garlic salt
1/4 tsp cayenne pepper
1/2 tsp dried oregano ( optional )
8 flour tortillas
2 c vegetable oil

Steps:

  • 1. In a medium frying pan, fry ground beef and onions on medium heat until meat is browned and onions are translucent. Drain off grease.
  • 2. Add tomatoes, jalapenos, chili powder, black pepper, garlic salt, chili powder, cayenne pepper, and oregano-if using. Add a little water if needed. Simmer for 10 minutes.
  • 3. Put 2-3 tablespoons of mixture in the middle of each tortilla. Add 1 tablespoon of cheese on top or amount you prefer. Fold tortillas and secure with toothpicks. (Make sure to take them out before eating)
  • 4. Heat vegetable oil to medium-high in a large skillet. Add 2 or 3 tortillas at a time. Fry quickly until golden brown on each side. Top with sour cream and cheese or whatever toppings you enjoy.

BAKED BAJA BEEF CHIMICHANGAS



Baked Baja Beef Chimichangas image

This is an authentic 40 year-old recipe, and the filling will not taste the same as fast food style chimichangas. The only thing Americanized here is that the chimichangas are baked instead of fried. Caution: If you use leanest ground beef, the filling will seem dry. Serve lots of lettuce, tomatoes and other garnishes listed below with each chimichanga - they are important to this dish's all around flavors and textures.

10 -12 flour tortillas
6 tablespoons melted butter
2 lbs lean ground beef
1/4 cup distilled white vinegar
1 (4 ounce) can diced green chilies
2 garlic cloves, crushed
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes (more or less to taste)
1/2 teaspoon salt (more or less to taste)
shredded lettuce
chopped tomato
grated cheese
sour cream
salsa

Steps:

  • Wrap tortillas in foil and warm in a 300* oven while making the filling.
  • Brown ground beef and drain.
  • Mix in vinegar and seasonings to the drained meat, but do not cook the mixture further.
  • Remove tortillas from oven and increase oven temperature to 500*.
  • Brush each side of tortilla with melted butter.
  • Spoon about 1/4 cup ground beef filling onto center of each buttered tortilla.
  • Fold in sides, then roll up tortilla from the bottom.
  • Place seam-side down on a foil-lined and rimmed baking sheet.
  • Bake at 500* for 8-10 minutes, until golden brown.
  • Serve on a large bed of shredded lettuce and chopped tomatoes.
  • Top with sour cream, shredded cheese, and salsa.

I cooked Recipe #28148 and loved it. But...I have a father who is allergic to chicken. So I wanted to keep along the same lines of the chicken recipe, but make it beef. So one day I threw this together in a crock pot and it came out great. This meat can be used for tacos, enchiladas, etc as well. If you are wanting great baked beef chimichangas, please take this meat, and then follow Recipe #28148 remaining directions. (Including the other ingredients: oregano, cumin, cheese and green onions) It turns out tasty! Hope you like it as much as my family does.

We loved the filling in this recipe and plan to try it in tacos and on nachos as well! The chimis came out perfectly crisp. And while we had a tough time keeping them closed with toothpicks while frying, a little bit of butcher's twine did the trick just fine. Who's ready for a fiesta?!

6 oz chorizo (mexican sausage, mild or medium)
1 lb ground beef
1/2 c finely chopped white onion
1 clove garlic, minced
1/2 tsp ground cumin
1 can(s) (8-oz.) tomato sauce
1/4 c sliced pitted ripe olives
12 flour tortillas, (8-in diameter)
1 c (4-oz) shredded monterey jack cheese
vegetable oil
sour cream
shredded lettuce
your favorite salsa

Steps:

  • 1. Remove and throw away chorizo casings. Heat large skillet over high heat until hot. Reduce heat to medium and crumble chorizo into skillet. Brown 6 to 8 minutes, stirring to separate meat.
  • 2. Crumble beef into skillet with chorizo. Brown over medium-high heat 6 to 8 minutes, stirring to separate meat. Add onion, garlic and cumin; cook and stir 4 minutes or until onion is softened. Spoon off and discard fat from skillet.
  • 3. Stir in tomato sauce and bring to a boil over high heat. Reduce heat to low and cover; simmer 15 minutes. After 15 minutes, uncover skillet; increase heat to medium. Cook and stir 5 minutes or until most of the liquid has evaporated and meat is moistly coated with sauce. Stir in olives.
  • 4. Open bag of tortillas, but do not take them out or wrap them in plastic wrap. Heat on high in microwave 30 seconds, turn them over and heat 30 seconds more. Place 1/4 cup meat mixture in center of 1 tortilla. Spread to within 1 1/2 inches of bottom and side edges. Sprinkle with slightly rounded tablespoon cheese.
  • 5. To form, fold bottom edge of tortilla up over filling; fold in side edges, then roll up to completely enclose filling. Secure top with wooden toothpicks.
  • 6. Preheat oven to 250 degrees. Preheat deep fryer to 375 degrees or heat 1 inch oil in deep, heavy skillet over medium-high heat to 375 degrees; adjust heat to maintain temperature. Line baking sheet with paper towels.
  • 7. Fry 2 to 3 chimichangas at a time in oil 2 to 3 minutes until golden on all sides, turning occasionally. Remove with tongs; drain on paper towels. Keep warm in oven on prepared baking sheet.
  • 8. Prepare a bed of shredded lettuce on serving plate. Place 2 chimichangas in lettuce. Spoon desired amount of your favorite salsa over top and add a dollop of sour cream. Enjoy!

2 cups shredded pepper jack cheese
1 can (15 ounces) black beans, rinsed and drained
1 cup sour cream
1 cup shredded Colby-Monterey Jack cheese

2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
2 cups shredded cooked roast beef
1 package (16 ounces) egg roll wrappers
Oil for deep-fat frying
Guacamole, optional

Steps:

  • In a large bowl, combine first 9 ingredients. Stir in cooked beef. , Place 1/4 cup filling in center of 1 egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal. Repeat with remaining wrappers and filling., In an electric skillet or deep fryer, heat oil to 375°. Fry chimichangas in batches until golden brown, 1-2 minutes on each side. Drain on paper towels. Serve warm with guacamole if desired.

The filling for these chimichangas is delicious! Adjust all seasonings to suit taste, I add in 2-3 jalapeno peppers, seeded and finely chopped in with the ground beef mixture for extra flavor and heat but that is only optional. The amounts listed are enough for 6 chimichangas you can double the complete recipe, but keep the garlic amount no more than 2 tablespoons. These are really good!

2 tablespoons fresh minced garlic
1 bell pepper (seeded and chopped, use red or green)

1 1/2 cups refried beans

Steps:

  • In a skillet cook the ground beef with onion, garlic and bell pepper until no longer pink; drain fat.
  • Add in 1-2 tablespoons oil, chili powder, cumin, thyme and cayenne; cook stirring until well browned (about 10-12 minutes) season with seasoned salt (or white salt) and black pepper.
  • Add in chopped tomatoes and salsa; cook stirring for about 15-20 minutes.
  • Add in corn, refried beans and black beans; stir with wooden spoon until heated through (about 5-6 minutes) season with more salt and pepper if desired; remove from heat.
  • Place about 1/2 cup ground beef filling down the middle of each tortilla; fold opposite sides of the tortilla to center over the beef mixture, then fold ends toward center; secure with a toothpick; place on a plate and refrigerate for about 20 minutes.
  • Heat about 2-inches oil in a heavy skillet until 375°F.
  • Fry 1-2 chimichangas at a time in hot oil about 1-2 minutes or until golden brown.
  • Place a bed of shredded lettuce onto a large serving plate or dish (this is only optional) then top with chimichangas.
  • Sprinkle each hot chimichanga with cheddar cheese then dollop with sour cream.
  • Serve with salsa and/or guacamole if desired.

6 ounces chorizo sausage
1 lb ground beef
1/2 cup finely chopped white onion
1 garlic clove, minced
1/2 teaspoon ground cumin
1 (8 ounce) can tomato sauce
12 flour tortillas (8 in.)
1 cup monterey jack cheese
vegetable oil

Steps:

  • Remove casing from chorizo. Heat large skillet over high heat until hot. Reduce heat to medium. Brown chorizo 6 to 8 minute.
  • Add beef. brown 6 to 8 minute
  • Add onion, garlic, and cumin. Cook 4 minute or until onion is soft. Discard fat.
  • Stir in tomato sauce. Reduce heat to low, cover and simmer 15 minute.
  • Uncover, increase heat to med. Cook until liquid has evaporated.
  • Warm tortillas.
  • Place 1/4 cup meat mixture on bottom half of 1 tortilla. Sprinkle with 1 tbs. cheese. Roll up folding the sides inches Repeat with remaining tortillas.
  • Heat 1 inches oil in skillet over medium high heat.
  • Fry 2 or 3 chimichangas at a time for 2 or 3 minute until golden brown on all sides.
