3 lb. Corned Beef Brisket, flat cut
1 head of cabbage
Pizza dough (we used 3 Trader Joe's pizza dough balls, in traditional white)
4 tablespoons butter
1 egg white
1 teaspoon poppy seeds
1 teaspoon roasted garlic
½ teaspoon sea salt

Steps:

  • Boil the brisket in a large pot of water, making sure to keep the pot full (this helps rid the brisket of unnecessary salt content). For a tender brisket, boil around 3 hours. (It is normal for the brisket to reduce in size over this time period). Thinly shred 1 head of cabbage. A mandolin is preferable, but you can also use a chopping knife. You'll find that one head yields a whole lotta cabbage-we needed two pans to cook it all. Here's a picture of one of the pans, after the cabbage has been simmering for about 30 minutes. Take care to use low, low heat, so that the cabbage doesn't brown, it just glistens and softens (we used about 2 tablespoons of butter for each pan, and a little salt and pepper to taste).When your brisket is tender, slice it thinly (removing any of the gristle), cutting against the grain. Place it on a rolled out Trader Joe's pizza dough. Put about 1 cup of cooked cabbage over the brisket.(Alt, we added sliced swiss cheese). Roll the dough into a stromboli. Place the stromboli on a baking sheet (we lined ours with cornmeal-flour works well, too) so that the folds are on the bottom of the sheet (this prevents the dough from opening in the oven). Cut a few openings up top too, so your stromboli doesn't explode while it is baking. Preheat oven to 400 degrees Fahrenheit, and repeat the steps above to make two more loaves. Next, whisk an egg white in a small bowl. In a separate bowl, combine the poppy seeds, garlic and sea salt. Place the loaves in oven for roughly 30 minutes.

2 loaves (1 pound each) frozen bread dough
1 pound lean ground beef (90% lean)
1/2 cup chopped onion
3 cups shredded cabbage
2 tablespoons Worcestershire sauce
2 tablespoons reduced-sodium soy sauce
2 teaspoons dried thyme
1-1/2 cups shredded reduced-fat cheddar cheese
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Place each frozen loaf in a 9x5-in. loaf pan coated with cooking spray. Let rise until dough is 1 in. above top of pan. In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add cabbage, Worcestershire sauce, soy sauce and thyme. Cover and cook for 15 minutes or until cabbage is tender; drain., Punch dough down. Place each loaf on an ungreased baking sheet; pat into a 16x10-in. rectangle. Spoon meat mixture lengthwise down one side of each rectangle to within 1 in. of edges. Sprinkle with cheeses. , Fold dough over filling; turn edges under to seal. With a sharp knife, make four diagonal slashes on top of loaves. Bake at 375° for 20-22 minutes or until golden brown. Serve warm.

The gooey cheese inside gives it a kicked up flavor! My husband gives this recipe a TEN! Try to not eat the filling up before you finish the stromboli. Yes, it's that irresistible!

1 lb. ground beef
1/2 head small cabbage, chopped
1/2 onion, chopped
2 tsp. chopped garlic
salt and pepper
1 bunch chopped fresh parsley
2 Tbs. butter, plus more if needed
1 prepared pizza dough (from refrigerated section of grocery store)
1 egg white mixed with sm. amount of water
garlic salt (optional)
Parmesan cheese (optional)
12 slices deli-style American cheese

Steps:

  • Preheat oven to 375 degrees.Saute ground beef, with onion, garlic, salt, pepper, and parsley in skillet until done. In another skillet, saute cabbage in butter with salt and pepper until semi soft. When all is done, combine the two.Roll out pizza dough on floured surface, into rectangle, layer with cheese slices - avoiding the edges. Top evenly with beef and cabbage mixture, roll up jelly roll style, lengthwise, starting from a long side. Carefully transfer to greased cookie sheet. Cut slits in dough every 3 inches across, Brush with egg wash, sprinkle with garlic salt, if desired. Bake for 25 minutes. Sprinkle with Parmesan cheese, if desired.
