I got this recipe from a friend who can't remember where she got it. It's different than the usual creamy spreads and is versatile and delicious.

1 (10 ounce) can black olives
3 tablespoons freshly grated Parmesan cheese
1 clove garlic, chopped
1 tablespoon extra virgin olive oil

Steps:

  • Place olives, Parmesan cheese, and garlic (if using) in a food processor. Add olive oil slowly while running. Process until smooth.

DRIED BEEF AND OLIVE DIP

I love dried beef dip, and came up with this one after trying several different ones. I think I have come up with a list of ingredients that compliment each other, and don't overpower. I hope you enjoy.

Number Of Ingredients 6

8 ounces cream cheese
3 ounces dried beef
1 ounce black olives
2 ounces red onions
1 teaspoon soy sauce
1 teaspoon lemon juice

Steps:

  • Soften the cream cheese in the microwave 1 minute at a time on low setting, until it can be stirred.
  • Finely chop the beef.
  • Finely chop the olives and onion. (I use a hand chopper).
  • Mix all ingredients in a medium bowl.
  • Cover and let stand a few hours or overnight.
  • Serve chilled, or at room temperature, with your favorite dip crackers.

1 cup sweet pickle relish
1 small onion, quartered
1/2 cup ketchup
1/4 cup mayonnaise
1 tablespoon sweet pickle juice
1 teaspoon seasoned salt
1/8 teaspoon pepper
18 slices bread

Steps:

  • In a food processor, combine the beef, pickle relish and onion; cover and process until coarsely chopped., In a large bowl, combine the ketchup, mayonnaise, pickle juice, seasoned salt and pepper. Stir in the beef mixture. Cover and refrigerate for at least 1 hour. Spread on nine slices of bread; top with remaining bread.

1 pound ground beef
1/2 large onion, finely chopped
3 hard-boiled large eggs, chopped
1/3 cup chopped pitted green olives
1 tablespoon ground cumin
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon pepper
2 packages (14 ounces each) frozen empanada dough discs, thawed
1 large egg, beaten
Salsa Verde, optional

Steps:

  • Preheat oven to 400°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef other into crumbles; do not drain. Stir in hard-boiled eggs, olives and spices; heat through. Remove from the heat., Brush beaten egg over edges of dough circles. Place 3 tablespoons filling on 1 side. Fold dough over filling. Crimp edges and press to seal. Place on parchment-lined baking sheets. Brush tops with remaining beaten egg. Refrigerate for 15 minutes., Bake until golden brown, 20-25 minutes; serve warm with salsa, if desired.
