a drop of rapeseed oil
2 sweet potatoes
1 large avocado
juice 1 lime, plus 2 wedges
1 red chilli, deseeded and finely chopped
2 tomatoes, finely chopped
⅓ small pack coriander, leaves roughly chopped
1 small red onion, finely chopped
400g can red kidney beans in water, drained

Steps:

  • Heat oven to 220C/200C fan/gas 7, oil the sweet potatoes, then put them straight on the oven shelf and roast for 45 mins or until tender all the way through when pierced with a knife.
  • Meanwhile, mash the avocado with the lime juice in a small bowl, then stir in the chilli, tomatoes, coriander and onion.
  • Cut the potatoes in half and top with the beans and guacamole. Serve with the lime wedges for squeezing over.

2 large sweet potatoes
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup brown sugar (to taste)
1 pinch salt
1/4 cup soymilk
4 tablespoons margarine, melted
2 pie crusts

Steps:

  • Preheat oven to 350 degrees.
  • Cover sweet potatoes with water and boil until tender. They are ready when a fork pierces the potato easily. Should take 20-30 minutes depending on size. Pour off hot water. Rinse with cold water until potatoes cool.
  • Peal off potato skin with a fork. Discard the.
  • Mix cooked sweet potatoes, cinnamon, vanilla, sugar, salt, milk and butter until combined. Taste the mixture and add more of each ingredient until it is to your liking. The mixture should be thick.
  • Unroll pie crust. Add half of the mixture on half of the crust. Leave space on the edges for crimping. Fold the other half of the crust over and crimp the edges. Cut a couple of small slits in the crust. Repeat with the second crust. The final product should look like a calzone.
  • Optional: These jacks can also be shaped into individual pastries. Use a large circular or square cookie cuter to make smaller jacks.
  • Bake the jacks on a cookie sheet for about 30 minutes or until crust is golden brown.
  • Let the jacks cool. Cut each jack into 4-6 slices. Serve alone or with a scoop of ice cream.

A superhealthy supper that's perfect for a busy weeknight, try making double the beans and freezing for next time

4 small sweet potatoes
1 tbsp smoked paprika , plus extra to serve
1 tbsp olive oil
1 large onion , chopped
2 garlic cloves , crushed
1 tbsp brown sugar
1 tbsp red wine vinegar
splash of Worcestershire sauce (Lancashire sauce is a veggie option)
2 x 400g cans mixed beans in water, drained
400g chopped tomatoes
4 tbsp light soured cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pierce the sweet potatoes a few times with a fork, then cook them in the microwave on High for 8 mins or until soft. Rub with 1 tsp of the paprika, 1 tsp of the oil and some seasoning. Transfer to a baking tray, put in the oven and cook for 10-15 mins until crispy.
  • Meanwhile, make the beans. Cook the onion in the remaining oil until soft. Add the garlic, sugar, vinegar, Worcestershire sauce and the remaining paprika, and cook for a further 1-2 mins until sticky. Tip in the beans, tomatoes and a splash of water, and simmer until the sweet potatoes are ready.
  • Serve the sweet potatoes with the beans on top, a dollop of soured cream and a pinch of paprika, if you like.
