BEANY BURGERS WITH BASIL TZATZIKI

50g pine nut
425g can borlotti beans , drained and rinsed
1 small red onion , finely chopped
2 tbsp sundried tomato paste
85g fresh breadcrumbs
1 tbsp fresh thyme leaves or 1 tsp dried
1 egg , beaten
sunflower oil , for frying
basil tzatziki (see separate recipe)
flatbreads, tortilla or pitta breads

Steps:

  • Place a frying pan over a medium heat and lightly toast the pine nuts for 2-3 mins or until golden. Remove from pan and set to one side.
  • Put the borlotti beans into a large bowl and mash well with a potato masher or fork. Add the pine nuts, onion, tomato paste, half the breadcrumbs, the thyme and egg. Season to taste, then gently mix together until the ingredients are thoroughly combined.
  • With slightly wet hands, shape the mixture into 4 burgers. Coat the outside of each burger with the remaining breadcrumbs. Cover and chill in the fridge for at least 30 mins.
  • To cook the burgers: heat a thin layer of sunflower oil in a large frying pan and fry for 3-4 mins each side until golden. Drain on kitchen paper, then serve in warmed flatbreads, tortillas or pittas and spoon over the Basil tzatziki.

1 cup canned beans, such as pinto, kidney or black beans, rinsed and drained
1/2 cup walnuts
1/2 cup panko breadcrumbs
1 teaspoon kosher salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
3 tablespoons BBQ sauce
1 tablespoon olive oil
4 slices your favorite cheese, optional
4 burger buns
Desired toppings, for serving

Steps:

  • In a food processor, pulse the beans until coarsely chopped, then transfer to a large mixing bowl. Pulse the walnuts in the food processor until finely chopped, then transfer to the mixing bowl with the beans. Add the breadcrumbs, salt, onion powder, garlic powder, pepper, egg and 2 tablespoons of the BBQ sauce and mix well. Divide the mixture into 4 equal parts. Shape into burger patties and refrigerate for 30 minutes.
  • Heat a nonstick skillet over medium-high heat. Add the olive oil. Brush the top of each burger with the remaining 1 tablespoon BBQ sauce. Cook the burgers BBQ sauce-side down for 3 minutes. Flip and top each with a slice of cheese if using. Cover and cook until the cheese is melted and the burgers are heated through, about 3 minutes. Place the burgers on the buns and top with desired toppings.

GRILLED TURKEY BURGERS WITH TZATZIKI AND FETA

Vegetable oil, for greasing
1 1/2 pounds ground dark meat turkey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup feta cheese, crumbled (preferably goat's milk feta)
2 scallions, minced
1 cup Greek yogurt
1/2 cup grated English cucumber (about 1/4 small peeled cucumber)
1 tablespoon finely minced dill
1 clove garlic, minced or finely grated
1/2 lime, juiced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
5 pita pockets or flatbreads
1 to 2 small avocados, thinly sliced
1 head butter lettuce, leaves separated

Steps:

  • For the turkey burgers: Preheat a grill or grill pan over medium-high heat until hot. Clean and oil the grates.
  • Place the turkey, salt, pepper, feta and scallions in a medium bowl. Mix with your hands until combined. Form into 5 football-shaped patties.
  • Grill the patties until the internal temperature reaches 165 degrees F, 5 to 6 minutes per side. Remove the patties to a plate.
  • While the turkey patties cook, make the tzatziki sauce: Stir together all of the ingredients in a small bowl. Taste and adjust for seasoning, if necessary. Refrigerate until ready to serve, up to 3 days.
  • Lightly grill the pitas, 1 to 2 minutes per side.
  • To assemble: Cut the grilled pita pockets in half. On each of the bottom halves, place 4 to 5 avocado slices, then a turkey patty. Dollop with a generous amount of the tzatziki. Top with a couple of the lettuce leaves. Close the burgers and serve warm.

LAMB BURGERS WITH TZATZIKI

Homemade burgers are always a winner - try this low-calorie, Greek spin with cucumber and mint yogurt and spicy patties

25g bulghar wheat
500g extra-lean lamb mince
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1 garlic clove , very finely crushed (optional)
oil , for brushing
large burger buns , sliced tomato and red onion, to serve
5cm piece cucumber , deseeded and coarsely grated
200g pot thick Greek yogurt
2 tbsp chopped mint , plus a handful of leaves to serve

Steps:

  • Tip the bulghar into a pan, cover with water and boil for 10 mins. Drain really well in a sieve, pressing out any excess water.
  • To make the tzatziki, squeeze and discard the juice from the cucumber, then mix into the yogurt with the chopped mint and a little salt.
  • Work the bulghar into the lamb with the spices, garlic (if using) and seasoning, then shape into 4 burgers. Brush with a little oil and fry or barbecue for about 5 mins each side until cooked all the way through. Serve in the buns (toasted if you like) with the tzatziki, tomatoes, onion and a few mint leaves.
