Steps:
- Bring water to a boil in a saucepan. Add mung beans; cook until tender, about 5 minutes. Drain. Rinse under cool running water to stop the cooking process. Drain well; transfer to a bowl.
- Combine baby carrot and green onion in a small microwave-safe bowl. Cover with water and place in the microwave for 30 seconds. Drain.
- Stir baby carrot and green onion into the bean sprouts in the bowl. Add sesame oil, garlic, salt, pepper, and sesame seeds; mix by hand until combined.

- Rinse bean sprouts in cold water and discard any bad sprouts.
- Bring a pot of lightly salted water to a boil over high heat. Plunge bean sprouts and cabbage into the pot and let boil for 3 to 4 minutes.
- Meanwhile, whisk rice vinegar, sesame oil, sugar, sesame seeds, fish sauce, and garlic together in a bowl for dressing.
- Drain water from the pot and run cold water on the sprouts for 1 to 2 minutes. Squeeze bean sprouts with your hands to remove excess water. Place sprouts and cabbage into a mixing bowl and add carrot, green onion, and dressing; mix well.

DUA GIA (PICKLED BEAN SPROUT SALAD)
Delicately crunchy and bright tasting, this easy southern Vietnamese favorite is technically a pickle because the vegetables steep in brine. But it is eaten in large amounts like a salad, usually with intensely flavored fish or pork kho (dishes simmered in savory caramel sauce). The vegetables provide a refreshing contrast to the inky, deep flavors of kho but they're also terrific paired with dumplings or sandwiches. The bean sprouts and carrot are typically combined with flat Chinese chives. Since those kinds of chives can be hard to find, you can also use thin green scallion tops.

- To make the brine, combine the sugar, salt, vinegar and 1 cup water in a large saucepan and warm over medium heat, stirring occasionally, until the sugar and salt dissolve. Remove from the heat and completely cool.
- At least 40 minutes and up to 2 hours before serving, add the bean sprouts, carrot and scallions to the brine. Use your fingers to toss the vegetables. Set aside at room temperature for 30 minutes, turning the vegetables 2 or 3 times to expose them evenly to the brine. At first, the vegetables won't be covered by the brine, but then they will shrink. They're ready when they're almost covered with brine and taste pleasantly tangy and are a mix of crunchy and soft. If needed, let them sit for 10 minutes longer.
- Drain the vegetables and pile them high on a plate. Serve at room temperature within 2 hours to enjoy them at their peak.
ORIENTAL SALAD (BEAN SPROUT AND SNOW PEA SALAD)

- If you desire, pick over the bean sprouts to remove and discard the tiny curlicues at the top and/or bottom. Put the bean sprouts in a salad bowl.
- Drop the snow peas into a basin of boiling water lightly seasoned with salt. Bring to the boil and drain. Chill under cold running water. Drain. Add to the bean sprouts.
- Cut the ham and turkey breast into very fine shreds. There should be about two cups of each. Add this to the bowl.
- Add the celery, scallions and water chestnuts. Sprinkle with the coriander.
- To make the salad dressing, blend the mustard, egg, ginger and vinegar in a mixing bowl. Start beating with a wire whisk while gradually adding the oil. Add salt and pepper.
- Serve the salad and salad dressing separately if desired. Or toss the salad with the dressing.

I've always loved that little side dish of pickled cucumber and or bean sprouts you get at many of the Japanese restaurants. I make a salad that uses both.

- Place the cucumbers and sprouts in a glass bowl and sprinkle with salt. Toss well and chill for 1 hour. Rinse and drain well.
- Put all the dressing ingredients in a jar and shake well to combine. Pour over the cucumber/sprouts, and mix well. Top with sesame seeds.
- NOTE: I find that letting the salad sit a few ours in the fridge helps the texture and flavors mix. In fact, I prefer this salad the next day.

- Add 1 pound rinsed mung bean sprouts and 1/2 teaspoon salt.

CRISPY SHRIMP WITH NOODLE AND BEAN SPROUT SALAD
Steps:
- 1. In a medium saucepan, warm the peanuts over moderate heat, about 1 minute. Add the sake, soy sauce and mirin and cook over low heat, stirring, until the liquid is reduced and coats the peanuts, about 5 minutes. Spread the peanuts on a parchment paper-lined plate and let cool. 2. In a blender, add the lime juice, fish sauce, chile sauce, water, garlic and Thai chile and puree the dressing until smooth. 3. Bring a large pot of water to a boil and fill a bowl with ice water. Add the bean sprouts to the boiling water and blanch for 10 seconds. Using a slotted spoon, transfer the bean sprouts to the ice water to cool, then drain and pat dry. Fill the bowl with more ice water. Add the rice vermicelli to the pot and cook until tender, about 5 minutes. Drain the noodles and transfer them to the ice water to cool. Drain again, shaking off the excess water; pat dry with paper towels. Wipe out the bowl. Cut the noodles into 4-inch lengths and return them to the bowl. Add the bean sprouts, cucumber, mint and scallions. 4. Put the shrimp in a large, resealable plastic bag. Add the flour, seal and shake to coat. Tap the excess flour off the shrimp. Put the eggs and panko in 2 separate bowls and line a baking sheet with wax paper. Working in batches, dip the shrimp in the egg and then in the panko, pressing the crumbs to help them adhere. Transfer the shrimp to the baking sheet. 5. In a large, deep skillet, heat the oil to 340°. Add half of the shrimp and fry over high heat, turning once, until they are golden, about 2 minutes. Drain on paper towels and sprinkle the shrimp with salt. Repeat with the remaining shrimp. 6. Coarsely chop the peanuts. Add the dressing to the rice noodles and toss to coat. Transfer the noodle salad to a platter and top with the shrimp and chopped peanuts. Serve right away. * The peanuts can be stored in an airtight container for 2 days. The dressing can be refrigerated for 2 days.
CRUNCHY PICKLED BEAN SPROUT SALAD
Steps:
- To make the brine, in a small saucepan, combine the sugar, salt, vinegar, and water and heat over medium heat, stirring occasionally until the sugar and salt have dissolved. Remove from the heat and set aside to cool completely.
- Up to 2 hours in advance of serving, combine the bean sprouts, carrot, and scallions in a bowl. Pour the cooled brine over the vegetables and then use your fingers to toss the vegetables in the brine. Set aside to marinate for 30 minutes, turning the vegetables 2 or 3 times to expose them evenly to the brine. At first, there won't be enough brine to cover the vegetables, but they will eventually shrink in volume. When the vegetables are ready for eating, the brine will almost cover them and they will have a pleasantly tangy flavor and lots of crunch. Taste to make sure they have sat long enough.
- Once you are satisfied with the flavor, drain the vegetables and pile them high on a plate. Serve them within 2 hours to enjoy them at their peak.

SPICY BEAN SPROUT SALAD

- 1. Mash the garlic with 1 teaspoon salt in a small bowl. 2. Add 1 tablespoon sugar and 1 tsp salt to 3 tablespoons vinegar and whisk until the sugar and salt are dissolved. 3. Put the mashed garlic, pepper flakes, and sesame oil into a wok or frying pan and heat. 4. Once it begins to sizzle, stir in the bean sprouts. 5. Saute for roughly 10 minutes or until the bean sprouts turn slightly translucent and limp. 6. Take the bean sprouts off the heat and pour the rice wine vinegar and sugar mixture into the pan. 7. Stir thoroughly and let cook. 8. Just before serving, taste for seasoning. Adding salt, sugar, or vinegar as necessary.
