1 pound dried lima beans
1/2 pound bacon strips, cooked and crumbled
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1-1/3 cups water
1 cup packed brown sugar
1 garlic clove, minced
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon ground mustard

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid. In a 3-qt. slow cooker, combine beans and remaining ingredients. Cook, covered, on low until beans are tender, 6-8 hours.

2 bags (16 ounces each) frozen lima beans, thawed and drained
1 medium onion, chopped (1/2 cup)
2/3 cup vegetable broth
1/3 cup maple-flavored syrup
1/3 cup barbecue sauce
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Mix all ingredients in 3 1/2- to 6-quart slow cooker.
  • Cover and cook on low heat setting 7 to 8 hours or until beans are tender.

Try these for a break from your regular baked beans. These beans always go over well at our summer cookouts and bbq's. If they are too sweet for your taste, you could add a teaspoon of dijon mustard. Preparation time includes allowing the beans to stand for an hour.

1 lb dried lima beans
6 cups water
1 1/2 cups onions, chopped
1 teaspoon salt
1 cup ketchup
3/4 cup brown sugar, packed
1/3 cup pancake syrup
1/4 teaspoon hot pepper sauce
4 slices bacon, cooked and crumbled

Steps:

  • Place beans in a large saucepan; add water to cover by 2 inches
  • Bring to a boil; boil for 2 minutes.
  • Remove from the heat; cover and let stand for 1 hour.
  • Drain and rinse beans, discarding water.
  • Return beans to the saucepan.
  • Add 6 cups water, onions and salt; mix well.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 1-1/2 to 1-3/4 hours or until beans are tender.
  • Drain and discard liquid.
  • Stir in the ketchup, brown sugar, syrup, hot pepper sauce and bacon. Transfer to an ungreased 2-qt. baking dish or bean pot.
  • Cover and bake at 350 degrees for 30 minutes.
  • Uncover and bake 30 minutes longer or until bubbly.

2 cups fresh green lima beans
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 teaspoons sugar
1 teaspoon dry mustard
1 tablespoon chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons chopped fresh summer savory
2 teaspoons chopped fresh thyme
2 tablespoons finely chopped onion
2 tablespoons unsalted butter
6 (1-inch thick) pork chops
2 cups fine bread crumbs, toasted
1 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook lima beans in salted water until almost tender, and reserved 1/2 cup of the cooking liquid. Pour the lima beans into a large flat baking dish with the reserved liquid. Stir in the salt, pepper, sugar, mustard, parsley, savory, thyme, and chopped onion. Mix well.
  • Heat the butter in a large skillet over medium-high heat. Add the chops and cook, turning once, until well browned. Place the chops on top of the beans.
  • Mix bread crumbs with sour cream. Spread over chops. Cover dish and bake for 8 minutes. Uncover the chops and continue baking, until lightly browned, about 8 minutes more.
  • Arrange the chops on a bed of the lima beans on a large platter and sprinkle with parsley. Serve.

SKILLET LIMA BEANS

Skillet dishes are the cornerstone of Gullah cooking, and these lima beans are made in my favorite skillet-cast-iron. Instead of simmering the lima beans for hours and hours, I've added a fresh take to the traditional Lowcountry side dish by adding bell peppers and tomatoes.

1/2 pound thick-cut bacon
1 tablespoon unsalted butter, plus more as needed
1 white onion, chopped (about 1 cup)
2 cups fresh or frozen lima beans, thawed if frozen
1 clove garlic, minced
2 cups chicken broth
1/2 red bell pepper, chopped (about 2/3 cup)
1/2 pint cherry tomatoes, halved (about 1 cup)
Juice of 1/2 lemon (1 1/2 tablespoons)
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large skillet over medium heat and add the bacon. Cook until crispy, about 15 minutes. Remove the bacon from the skillet to paper towels, reserving the drippings in the skillet. Crumble the bacon once cooled.
  • Add the butter to the drippings in the skillet and heat until melted. Add the onion and saute until tender, about 5 minutes. Add the lima beans and garlic. Add the chicken broth and bring to a boil. Cook until the lima beans are tender and the broth has evaporated, about 25 minutes.
  • Add the bell pepper, tomatoes and crumbled bacon, adding more butter if needed. Saute until the vegetables are tender, 2 to 3 minutes longer. Remove the skillet from the heat and stir in the lemon juice. Season with salt and pepper.

I have been serving this recipe to my extended family every Christmas, Thanksgiving and Easter for over 20 years. It is always a big hit but I have never told the children that there are lima beans in it! This is especially good with a baked ham or spareribs, and is easily doubled. Enjoy!

1 (15 ounce) can kidney beans, drained
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can lima beans, drained
1 (16 ounce) can great Northern beans, drained
1 (12 ounce) bottle chili sauce
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 tablespoons molasses
3 slices bacon, cut in half

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium baking dish, mix kidney beans, pinto beans, lima beans, great northern beans, chili sauce, brown sugar, Dijon mustard, Worcestershire sauce and molasses. Top with bacon.

2 pounds dried lima beans
1 teaspoon salt
10 ounces ketchup
2 tablespoons brown sugar, or to taste
2 tablespoons dry mustard
1 pound bacon, uncooked

Steps:

  • Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
  • Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
  • Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

1/2 lb bacon or 1/2 lb salt pork, chopped,cooked crisp and drained
1 (14 1/2 ounce) can tomato soup
1 large onion, chopped
1 green bell pepper, chopped
1 cup packed brown sugar
1/4 cup ketchup
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce

Steps:

  • Wash beans; sort.
  • Soak beans in water to cover in a large bowl 8-12 hours.
  • Transfer beans and soaking water to a large saucepan.
  • Heat to boil over medium-high heat.
  • Reduce heat to medium-low; simmer 1 hour.
  • Drain.
  • Heat oven to 350°F.
  • Combine beans, bacon, tomato soup, onion, bell pepper, brown sugar, ketchup, mustard, and Worcestershire saucen a large bowl; mix well.
  • Transfer mixture to a 13" x 9" baking pan.
  • Bake until hot and bubbly, about 1 hour.
