RASPBERRY CHIPOTLE BBQ SAUCE

This is a super sweet and spicy BBQ sauce with fruit that my family and I found in Mexico last Christmas. Try it over grilled tuna like we did, or experiment with chicken or ribs. I have also served this poured over a block of cream cheese to smear over crackers. Nice!

1 tablespoon olive oil
½ cup diced onion
2 tablespoons minced garlic
2 tablespoons chipotle peppers in adobo sauce, chopped, or more to taste
1 pint fresh raspberries
½ cup raspberry vinegar
¾ cup honey
½ teaspoon salt

Steps:

  • Heat oil over in a medium saucepan over medium-high heat. Cook and stir onion in the hot oil until soft and slightly browned, about 4 minutes. Add garlic to the pan and saute for 1 minute. Stir in chipotle peppers and cook, stirring continuously, for 1 minute. Add raspberries and cook until soft, 2 to 3 minutes.
  • Pour vinegar into the pan and stir to deglaze, scraping any browned bits off the bottom of the pan with a wooden spoon. Add honey and salt and bring to a boil. Reduce heat to medium and simmer until thickened and reduced by half, 8 to 10 minutes. Remove from heat and let cool before serving.

1 tablespoon canola oil
2 cups diced yellow onion
7 cloves garlic, minced
1 cup ketchup
1 cup chipotle Red Chile Paste, recipe follows
1/2 cup Worcestershire sauce
1/2 cup strong coffee
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons Dijon mustard
2 teaspoons kosher salt
4 ancho chiles, seeded and stems removed
4 Mexican dried chiles, seeded and stems removed
3 cups chicken stock
1/2 white onion, diced
3 cloves garlic, minced
2 chipotle peppers, seeded and stems removed

Steps:

  • In a large, heavy saucepan heat the oil over medium heat and add the onion and garlic. Saute until they begin to wilt. Add the ketchup and chile paste and saute for 4 minutes. Add all of the remaining ingredients stir and let simmer for 30 to 40 minutes. As the sauce thickens, stir more often so it does not scorch. Remove the sauce from the heat and allow it to cool. Place the sauce in a blender and puree. Store in the refrigerator.
  • Place the ancho and Mexican chiles in a large saucepan and cover them with the chicken stock. Add the onion and garlic. Bring the stock to a boil over high heat, reduce heat and allow to simmer for about 15 minutes or until the peppers have absorbed some liquid and have become soft. Put the pepper mixture, cooking liquid, and chipotle peppers into a blender. Blend on low speed, increasing to high speed as the puree combines.

1 1/2 cups mango, peeled, pitted and roughly chopped
3/4 cup fresh cilantro (loose pack, not chopped, stems andall)
2 tablespoons fresh lemon juice
2 tablespoons unseasoned rice wine vinegar
1 tablespoon canola oil, plus extra for grill
4 cloves garlic, peeled
2 chipotle peppers in adobo, plus 1 tablespoon adobo sauce
2 teaspoons kosher salt
1 teaspoon freshly cracked black pepper
2 pounds chicken thighs and drumsticks, bone in, skin on

Steps:

  • Put the mango, cilantro, lemon juice, vinegar, oil, garlic, chipotle, salt and pepper in a food processor and puree until smooth. Adjust seasonings to taste.
  • Add the chicken with half of the chipotle-mango sauce to a resealable plastic bag, and massage to coat the chicken with the sauce. Refrigerate at least 6 hours to marinate.
  • Put the other half of the chipotle-mango sauce into a small saucepan and simmer over low heat until thick, stirring often, about 15 minutes. Set some of the simmered sauce aside to serve on the side, and baste the chicken every few minutes with the rest of the sauce.
  • Preheat a grill or grill pan to medium-high heat and brush with oil. Remove the chicken from the marinade and put on the grill.
  • Grill the chicken, turning and basting about every 5 minutes, until cooked through, 20 to 25 minutes. Transfer to a serving platter and serve with the reserved chipotle-mango sauce.

1 clove garlic, finely chopped
1 small red onion, finely diced

1/4 cup clover honey
1/4 cup red wine vinegar

Steps:

  • Combine the ancho, paprika, cumin, cinnamon, 2 tablespoons salt and 1 teaspoon pepper in small bowl. Sprinkle both sides of the ribs with salt and pepper, and then rub the spice mix onto the top of the ribs. Put on a baking sheet lined with aluminum or parchment. Let the ribs sit at room temperature for 30 minutes.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the ribs on both sides with oil and grill, spice-side down, until golden brown and slightly charred, about 4 minutes. Flip and grill another 4 minutes. Brush with some of the Orange Honey Chipotle BBQ Sauce during the last minute of grilling. Remove to a platter and brush with more of the sauce.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and onions and cook until soft, about 2 minutes. Add the orange juice and zest and cook until slightly reduced.
  • Add the ketchup, honey, vinegar, chipotle puree, soy sauce, ancho powder and salt, and bring to a simmer, stirring occasionally and simmer until slightly thickened, about 10 minutes. Remove from the heat and let cool to room temperature.

Steps:

  • Heat grill pan over medium-high heat.
  • Mix spices and sugar in a large plastic food storage bag. Coat chicken with 1 tablespoon extra-virgin olive oil and add to bag. Coat the chicken evenly in the spices and sugar. Let the chicken hang out a few minutes.
  • Chop and combine the tomatoes, bell pepper, onions and grilled pineapple spears.
  • Place chicken on grill and cook 6 to 7 minutes on each side.
  • Dress the salad with lime and a couple tablespoons extra-virgin olive oil. Season the salad with cilantro, salt and pepper.
  • Heat the stock and milk or half-and-half in a sauce pot with chipotle and adobo sauce. Whisk in the polenta and thicken 2-3 minutes, stir in pumpkin to warm through. Stir in butter and honey and season with salt and pepper.
  • Serve polenta with chicken and salsa salad.

1 tablespoon kosher salt plus more to taste
3 tablespoons pure maple syrup
Small bunch fresh thyme
4 cloves garlic
2 pounds bone-in skinless chicken pieces, such as legs, thighs and breasts, halved
1 (15-ounce) can tomato sauce
1/2 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
1 tablespoon finely chopped chipotles in adobo sauce
1 teaspoon chili powder

Steps:

  • In a large bowl stir the water, 1 tablespoon salt and 1 tablespoon syrup until dissolved. Stir in the thyme. Smash 3 cloves of garlic and add to the brine with the chicken. Cover and refrigerate, 2 to 3 hours.
  • Mince the remaining clove of garlic and add to a medium pot with the tomato sauce, broth, vinegar, remaining 2 tablespoons syrup, chipotles, chili powder and salt, to taste. Bring to a simmer over medium heat. Reduce heat to medium-low and gently simmer until thick, stirring occasionally, 25 to 30 minutes. Reserve 1/2 cup of the sauce for serving.
  • Prepare the grill or grill pan for direct/high heat. Oil the grill grates. Drain the chicken and very pat dry. Grill, turning, until no longer pink near the bone, 15 to 20 minutes (depending on the size of the chicken pieces). Brush with sauce generously as it cooks during the second half of the cooking time. Serve the chicken with the extra sauce on the side.

2 tablespoons dark amber maple syrup

Coarse black pepper
1 1/2 cups seasoned stuffing cubes
3/4 cup chicken stock
2 pounds ground turkey (use a mix of light and dark meat)
1 round tablespoon poultry seasoning
2 teaspoons cumin
Kosher salt and freshly ground pepper
1/2 small red bell pepper, finely chopped
1/4 cup finely chopped fresh cilantro or parsley
6 thin scallions, finely chopped
2 eggs
One 8-ounce brick extra-sharp yellow Cheddar, cut into small dice
4 medium sweet potatoes

Steps:

  • Preheat the oven to 375 degrees F. Brush a muffin pan (with 6 jumbo or 12 medium cups) with EVOO.
  • For the BBQ sauce: Combine the ketchup, chipotle puree, maple syrup, brown sugar, vinegar, Worcestershire sauce, garlic and pepper to taste in a small pot. Heat until the mixture starts to bubble, then reduce the heat to low and simmer until thickened, about 20 minutes, stirring occasionally.
  • For the meatloaves: Pulse the stuffing cubes in a food processor until crumbs form. Transfer to a bowl and moisten with chicken stock.
  • Combine the turkey, poultry seasoning, cumin and some salt and pepper in a large bowl. Add the moistened breadcrumbs, bell pepper, cilantro, scallions, eggs and cheese and mix gently to combine. Fill the muffin cups with the meatloaf mixture, mounding it a bit in the centers. Top with BBQ sauce. Place the pan on a baking sheet and bake for 40 minutes.
  • For the mashed sweet potatoes: While the meatloaves are cooking, peel and cube the sweet potatoes. Place in a pot and cover with water. Bring to a boil and cook until tender, then drain. Mash with the chicken stock, thyme, orange juice and salt and pepper to taste.
  • Serve the meatloaves with the mashed sweet potatoes.

Steps:

  • Heat the oil over medium heat in a heavy-bottomed medium saucepan. Add the onion and garlic and cook until translucent, 3 to 4 minutes. Add the chili powders and cook for 1 minute. Add the tomatoes and water, bring to a boil, and simmer for 10 minutes. Add the remaining ingredients, except the peanut butter, and simmer for an additional 20 to 30 minutes or until thickened slightly, stirring occasionally. Transfer the mixture to a food processor with the peanut butter and puree until smooth. Season with salt and pepper, to taste. Pour into a bowl and allow to cool at room temperature.

BACON-WRAPPED PRAWNS WITH CHIPOTLE BBQ SAUCE



Bacon-Wrapped Prawns with Chipotle BBQ Sauce image

8 ounces bacon
20 shrimp (21/25 count), shelled, deveined
1/2 cup BBQ sauce
1/4 cup canola oil
3 tablespoons chipotle pepper in adobo
3 tablespoons lemon juice
1 tablespoon Dijon mustard
1/2 teaspoon red chile flakes
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Soak the bamboo skewers in water, to keep from burning during grilling.
  • Partially cook the bacon; cut in half, and let cool on paper towels. Wrap the bacon around the shrimp, and skewer with bamboo through the point where the bacon ends meet (to keep from unraveling). Skewer 3 to 5 shrimp per bamboo.
  • Combine the BBQ sauce, oil, chipotle, lemon juice, mustard, chile flakes, black pepper and cayenne in a blender and puree. Separate the sauce in half, one for basting and one for dipping.
  • Cook the bacon-wrapped shrimp on a grill over medium heat. When the shrimp begin to turn pink, begin basting with the chipotle sauce.
  • Serve with the remaining sauce on the side for dipping.

ADOBO SHRIMP TACOS WITH SMOKED BBQ CHIPOTLE COLESLAW

1/2 cup sour cream
2 tablespoons mayonnaise
2 limes, juiced
1 (16-ounce) package coleslaw mix
1/4 cup chopped fresh cilantro leaves, chopped
1 small bunch green onions, green tops only, thinly sliced (about 3 tablespoons)
1 tablespoon barbeque seasoning (recommended: Bruno's Smoked BBQ Chipotle Seasoning)
Canola oil, for frying
2 cups all-purpose flour
1 cup cornmeal
1 pound medium shrimp (26/30 count), peeled and deveined
2 tablespoons adobo seasoning (recommended: Bruno's Dry Adobe Seasoning)
6 (8-inch) flour tortillas

Steps:

  • In a medium bowl, combine all of the ingredients. Mix well, then taste and adjust the seasoning, as needed. Refrigerate for about 1 hour.
  • In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
  • In a medium bowl, combine the flour and cornmeal; set aside. Season the shrimp with the adobo. Dredge the seasoned shrimp in the cornmeal mixture, and then add them to the hot oil 1 at a time. Fry until golden brown, about 3 minutes. Remove the shrimp from the oil and drain on paper towels.
  • Heat a medium saute pan over medium-high heat. Add a tortilla, and heat for about 30 seconds on each side. Spoon about 2 tablespoons of slaw in the center of the tortilla, then put 4 or 5 fried shrimp on top and fold like a taco. Repeat with the remaining ingredients. Serve hot or at room temperature.

HONEY CHIPOTLE BBQ SAUCE

My family wanted grilled chicken wings a few weeks ago but I didn't have any sauces I really wanted to use. After an afternoon of playing around this is what I came up with, and it worked very nicely. *Just as a note, I've never been one to measure precisely so some minor adjustments to the seasoning may be required.

15 ounces tomato sauce
1 small red onion, minced
2 tablespoons garlic, minced
2 tablespoons lemon juice
1/4 cup red wine vinegar
3 tablespoons Worcestershire sauce
1 tablespoon black pepper
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon cumin
7 ounces honey
7 ounces chipotle chiles in adobo
vegetable oil
salt
1 tablespoon liquid smoke (optional)

Steps:

  • Lightly coat the bottom of a large sauce pan with vegetable oil and bring to medium-high heat. Meanwhile sprinkle 1-2 teaspoons of salt onto a small area of a cutting boards. Place your minced garlic on top of this. Take a chef's knife and turn the blade paralell to the board, then place the fingers of your free hand against the side of the knife blade (this should be facing up now) away from the sharpened edge. Press the blade down against the garlic and pull the knife along the board towards you in very short strokes. Be careful to keep the sharp side of the blade against the board and away from you at all times. Be sure to pull the garlic back into a pile and toss it with the salt on occasion. Add salt if there isn't enough friction to crush the garlic. Continue this until you have achieved a paste like consistency. (If this process as described is unclear or undesirable then 1-2 tablespoons of garlic paste can be substituted. There are also numerous demonstrational videos online if I simply wasn't clear enough. Try a search for "how to make garlic paste".).
  • Once the pan has come to temperature add the onion along with a healthy pinch of salt and saute for several minutes, stirring occasionally, until it has become transparent.
  • While the onion is cooking open the can of chipotle peppers. If you desire a sauce with a smokey medium heat split the peppers open and scrape down the insides to remove the membranes and seeds. If this is your first use of chipotles this is highly recommended. If, however, you desire a sauce with a more intense heat feel free to use some or all of the seeds/membranes. In either case roughly chop the peppers and reserve the adobo sauce (this is the packing liquid from the peppers). As with all hot peppers you should be careful not to touch your eyes or any other sensitive areas until you have washed your hands thoroughly.
  • Once the onion has become transparent add the garlic paste. Continue cooking for a few minutes, usually about 2 should do.
  • Stir the lemon juice, black pepper, paprika, dry mustard, and cumin into the onion and garlic mixture. Cook this mixture for only another minute or two.
  • Carefully place the onion and garlic mixture into a blender. Add the red wine vinegar, adobo sauce, chipotles, and worcestershire sauce. Puree all ingredients until they reach a smooth consistency. This can be done with a food processor or immersion blender if your prefer, however I would highly recommend a good quality blender be used instead.
  • Return the contents of the blender to your large saucepan and add the tomato sauce. Stirs these together thoroughly while bringing the sauce to a simmer. Continue cooking covered for 10-15 minutes.
  • Check the sauce and adjust the seasoning as needed. Add the liquid smoke here if desired. Stir the honey into the sauce slowly. For best results I would suggest adding the honey in a slow stream in two or three separate installments; stir thoroughly while pouring and cook the sauce for a few minutes between additions while stirring constantly.
  • Return the sauce to a simmer and cook covered for an an additional 15-20 minutes. Check the sauce and adjust seasoning as needed. If a thicker consistency is desired continue cooking to reduce the sauce (also bear in mind the sauce will thicken as it cools).
  • Allow the sauce to cool completely then refrigerate.

1 ½ pounds skinless, boneless chicken breast halves
1 large yellow onion, chopped, divided
6 garlic clove (blank)s whole garlic cloves
½ cup ketchup
½ cup beer
⅓ cup distilled white vinegar
1 medium jalapeno pepper, seeded and minced
2 tablespoons brown sugar
2 teaspoons ground dried chipotle chili pepper
1 teaspoon dry mustard
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon salt
1 tablespoon salted butter, or more to taste
3 cloves garlic, minced
6 (6 inch) corn tortillas, or as needed

Steps:

  • Put chicken, 1/2 of the onion, and 6 garlic cloves in a pot. Add water to cover and bring to a boil. Lower heat and simmer until chicken is no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken from the pot. Discard garlic and cooking water. Shred chicken when cool enough to handle.
  • Combine ketchup, beer, vinegar, jalapeno pepper, brown sugar, ground chili pepper, mustard, cumin, paprika, and salt in a bowl for sauce.
  • Melt butter in a large saucepan over medium heat. Add remaining onion and minced garlic; cook until onion has softened and turned translucent, about 5 minutes. Pour sauce over the chicken and stir until well mixed and heated through, 2 to 3 minutes.
  • Serve chicken mixture in tortillas.

2 tablespoons chili powder

1½ pounds skirt steak, cut into pieces that will fit on your grill**

1 medium onion, chopped
½ cup canned beef broth
1 (15-ounce) can pitted cherries, drained and coarsely chopped**

1 teaspoon instant coffee
3/4 cup plum sauce
1/2 cup freshly squeezed orange juice
2 tablespoons minced chipotle in adobo with sauce
2 tablespoons brown sugar
Salt and freshly ground black pepper
2 1/2 pounds pork back ribs

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix 1/4 cup hot water with the instant coffee and stir to dissolve. Once, dissolved, combine with the plum sauce, orange juice, chipotle sauce and brown sugar in a small saucepan over medium heat. Bring the sauce to a boil and reduce the heat. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
  • Coat both sides of the ribs with the sauce, saving 2/3 cup for basting. Arrange the ribs, meaty-side up, in 1 layer in a foil-lined baking sheet. Cover the pan tightly with foil and bake the ribs 1 hour. Remove the foil (from the top), baste with the remaining BBQ sauce and bake the ribs 1 hour more.
  • Allow the cooked ribs to rest for 10 to 15 minutes before slicing and serving.
