2 Tbsp Water warm
0.25 cup(s) Barbecue sauce
2 tsp Canned chipotle peppers in adobo sauce
0.5 tsp Chili powder
1 tsp Regular butter melted
4 spray(s) Cooking spray
1 pound(s) Uncooked boneless skinless chicken breast(s) cut into 8 tenders
2 Tbsp Uncooked scallion(s) chopped

Steps:

  • Stir together peanut butter powder and water.
  • Stir in BBQ sauce, chili in adobo, chili powder and butter.
  • Coat a grill or grill pan with cooking spray and preheat over medium-high heat.
  • Cook chicken until just cooked through, flipping once, about 2-3 minutes per side . Brush tops with some sauce and cook for an additional minute.

1 cup creamy peanut butter
1/4 cup low sodium soy sauce
1/4 cup lemon juice
2 tablespoons white wine vinegar
2 tablespoons brown sugar
1/4 teaspoon garlic powder
1/2-1 teaspoon red pepper flakes
2 teaspoons fresh grated gingerroot
1/4 cup sliced green onion, optional for garnish (optional)

Steps:

  • Place chicken in a plastic Ziplock bag or a glass pan.
  • In a bowl, whisk together the peanut butter, soy sauce, lemon juice, vinegar, brown sugar, garlic powder, red pepper flakes and ginger. Pour this marinade over chicken.
  • Chill and allow the chicken to marinate for 6 - 8 hours, or up to 24 hours.
  • Lightly oil grill.

10 boneless, skinless chicken tenders
1/2 cup low-sugar BBQ sauce (I used Stubb's)
2 tsp chili powder
1/2 tsp cumin
1/3 cup unsalted peanuts, coarsely ground in food processor (or chopped)
non-stick aluminum foil
1 gallon heavy-duty food storage bag that locks

Steps:

  • 1. Preheat oven to 350 degrees. Cover baking sheet with non-stick foil and set aside. 2. Place chicken tenders in a 1 gallon large food-safe plastic bag. Using a meat mallet, the back of a small iron skillet or rolling pin, pound chicken slightly. 3. In a shallow bowl, combine barbecue sauce, chili powder and cumin. Mix well. 4. Now you can do the next step two ways. One way is to start dipping both sides of the chicken in the sauce, then dip one side into the peanuts and place on baking sheet. Or you can pour the sauce in the bag with the chicken and let the chicken marinate in the refrigerator for 1 hour. In that case, preheat your oven a few minutes before you decide to dip the chicken in the peanuts. 5. Bake for 25-30 minutes or until chicken is cooked through and the nuts are browned.
