1 Tbsp each flour and safflower oil
1 c each chopped red onions and celery
1 red bell pepper, seeded and chopped
2 tsp each chopped garlic, thyme
1 tsp creole seasoning blend
2 oz diced turkey kielbasa
1 c low-sodium chicken broth
1 can(s) 14.5 oz peeled tomatoes w/ juice, chopped
1 Tbsp tomato paste
11/2 c chopped leftover roasted chicken
2 c cooked rice
2 Tbsp chopped fresh parsley

Steps:

  • 1. In saucepot over medium heat, cook flour and safflower oil 5 min. or until golden brown, stirring occasionally.
  • 2. Add onions, celery and peppers. Cook 5 min. or until peppers are crisp-tender, stirring frequently. Add garlic, thyme and Creole seasoning blend. Cook 30 sec.
  • 3. Stir in diced kielbasa, chicken broth, tomatoes with juice and tomato paste. Increase heat to high and bring to a boil. Reduce heat to medium. Let simmer 10 min. Stir in chicken, rice and parsley. Cook 2 min. or until heated through.

I wanted to make a Jambalaya but all I had was the 10 minute Boil-in-Bag Success Rice and I was worried about it getting mushy. Low and behold, I found a recipe on their website. Here it is! (This is the healthy version. I used 2 medium chicken breasts in place of the cubed chicken strips, kielbasa instead of smoked turkey sausage, brown rice instead of white rice and we used regular salted tomato products and Creole seasoning and it turned out fine)

1 bag success 10 minute boil-in-the-bag rice
1 teaspoon vegetable oil
1 small onion, chopped
1 green bell pepper, diced
1 stalk celery, finely chopped
1 (6 ounce) package grilled chicken breast strips, cubed
1/2 lb low fat smoked turkey sausage, sliced
1 (8 ounce) can no-salt-added tomato sauce
1 (14 1/2 ounce) can no-salt-added diced tomatoes, drained
1 tablespoon salt-free creole seasoning
1 teaspoon Worcestershire sauce

Steps:

  • Prepare rice according to package directions.
  • Heat oil in a large skillet. Sauté onions, bell pepper and celery for 5 minutes.
  • Add chicken and sausage to skillet and sauté an additional 3 minutes. (If using raw chicken, make sure you cook it in a separate pan BEFORE you add it to the vegetables).
  • Stir in tomato sauce, diced tomatoes, Creole seasoning, and Worcestershire sauce and heat through.
  • Add cooked rice to skillet, stir to mix.

1 medium onion, sliced
1/2 cup green bell pepper, chopped
1 garlic clove, minced
1 cup white rice, uncooked
2 tablespoons vegetable oil
1 cup water
3/4 cup ketchup
1 tablespoon vinegar
1/8 teaspoon black pepper
1/8 teaspoon ground red pepper
1 cup ham, cooked and cubed
1 medium tomatoes, coarselly chopped
1/2 lb medium raw shrimp, shelled and deveined

Steps:

  • In large skillet, cook and stir onion, green pepper, garlic and rice in oil until onion is tneder. Stir in water, ketchup, vinegar, black pepper, red pepper, ham and tomato.
  • Cover; simmer 20 to 25 minutes or until rice is tender. Add shrimp; simmer, uncovered, 3 to 5 minutes or until shrimp turn pink, stirring occasionally.
